Ingredients List
Garlic Tikka Madras
Ingredients:
4 Tbsp Veg Oil
1 Heaped Tbsp minced Garlic
1/4 Tsp Chilli Flakes
1 Tbsp Mix Powder or Mild Curry Powder
1/4 Tsp Tandoori Masala
1/4 Tsp Salt
1/2 Tsp Garam Masala
1 Tsp Kashmiri Chilli Powder
2 Tbsp Tomato puree watered down
Dash of Worcester Sauce
1 Tsp Mr Vikki's King/Queen Naga Pickle (or what you have)
300ml Base gravy
8 Pieces Chicken Tikka or Chicken
1/4 Sugar Optional
Fresh Coriander
Dash lemon juice (only use if you want the curry more tart)
Red Masala Sauce
2 Tbsp Tomato Puree
2 Tbsp Pataks Tandoori Paste
2 Tbsp Pataks Tikka Paste
500ml Yogurt
1 Tsp Mix Powder
1 Tsp Mint sauce
Red food colouring optional

Would love to see a vindaloo with cassia bark flavour that comes through in the background. Had that from many takeaways near me and personally I feel it's what a companion should be along with furry spices and acidic overtone. Keep up the good work.
I buy the peeled garlic Al. 👍 puree it all, put it in a freezer bag n then into the freezer. Then I just cut what I need off it. 👍 Other than that, put it in ice cube trays. 👍

can you do a vid on making your own mr naga paste?
mr naga isnt a 'paste' its an additive or a condiment. i'd imagine its quite hard seeing as you'd need quite a lot of actual naga morich chillis. the actual spice blend would be the hardest thing to replicate, that stuff is the secrret ingredient in so many curry places i've been to. if its in a dish, you know it is haha

I am old school to curry and used to do maintenance for my old Indian restaurant and believe me there was pataks curry paste, I was told it was for the tandoori and tikka for flavour..

If Glebe Kitchen uses Pataks Tandoori paste albeit a small amount, it's good enough for me .
His Chicken Tikka is my go to recipe , no offence Al lol and i'm sure none will be taken , yer curry recipes are excellent and i'll be trying this one too.
Al, all those beers sadly are brewed under license in the UK where the water is usually hard and none of them taste like the authentic ones!
You should try Lidls as they do try to import the real stuff!

Doesn't need seasoning mate, just a good wash with hot soapy water to get any manufacturing residue off

Hi Al, looks great. I know this is a bit off topic but I was buying 'Geeta's Lime & Chilli Chutney' until the shop recently stopped stocking it. I've searched for a replica recipe but can't find one. Could you possibly do some nice chutneys to have with your curries, please?

So your ladle measures 150ml?
I think it does. My normal sized ladle is 200ml and i've used way too much base before following the recipes. Please say milliletres Al, saying 'a ladle' is like saying 'a cup'. its way too vague. they're isn't any set size for a ladle. I have 4 of all different sizes

I made the worst and most awful mistake when shopping, I got flat leaf parsley and not corriander! What am I going to do now? My disappointment is immeasurable and my day is ruined.

Oh you didn’t make your own Worcestershire sauce, what is wrong with these people. Pataks is used in a lot of Indian restaurants, who incidentally don’t make their own yoghurt tomato ketchup etc. give the man a break if it bothers you, maybe this isn’t the channel for you.
It's a great pity Pataks cans seem to have disappeared they madras and vindaloo were great. The stuff in glass jars just isn't the same.
