Ingredients (Serves 4)
✅ FOR THE TIKKA
600g Mini Chicken Fillets
3 Tbsp Al’s Tikka Marinade mix ( or make your usual way)
150ml Natural yogurt
Milk to thin marinade
1 Tsp Sugar
Orange Food Colouring (Optional)
Or Make the Tikka Blend Yourself • Restaurant Flavour CHI...
✅ Pre Cook The Rice
2 Mugs Rice (540g Dry Weight)
2 Tsp Turmeric (to make rice yellow)
6 Cloves
2 Black Cardamom
8 Green Cardamom
2 Bay leaves
Small Piece Cinnamon
1 Tsp Cumin seeds
1/2 Tsp Black peppercorns
Salt
Red Food Colouring
✅ For The Biryani
70ml Veg oil
2 Tbsp Butter Ghee
3 Onions Sliced
1 red chilli ( If you choose not to use food colouring.)
Whole bulb of garlic sliced
15 Curry leaves
✅ Spices
3 Tbsp Mix Powder
1 Tbsp Cumin Powder
1/2 Tbsp Coriander powder
Pinch of Garam Masala
A generous amount of fresh coriander chopped

Looks great the only thing i found sometimes the chicken breast has bits of bone underneath so maybe checking would be a good idea .

Anyone use a rice cooker when doing rice this way? Same it is?
Done this a big old portion for just 2 of us but done a take out for my daughter. It’s superb Al my daughter didn’t believe I made it loved it. Ps did johns arsehole recover from Gandhis revenge ok bet it went down the pan for a drink next day
I have not said or even implied as you whether Al gets any commission from them, as I have no idea. Unless you have access to Als financial data, not sure how you would know either.
I also did not say a single thing about spicy Joe's customer suicide, I only commented on why Al probably isn't doing it himself.

This looks great. The best chicken tikka I've ever had from a British Indian restaurant was green. I thought maybe I was given the wrong dish because it's usually red as f*ck. It was absolutely marvellous.
Al i don't care what the origins are for the meaning of vindaloo are i still think your version is the best and funniest as your dry sense of humour just nails it😆 Just like your moms unavailable debenhams past down cooking pan is a classic and cracked me up 🤣🤣 p.s looks a spot on Biryani👍

Tamilnadu VEG Briyani
Ingredients
For Rice
1 cup (250 ml) Seeraga Samba
1 1/2 cups (375 ml) water
For Biryani Masala Paste
1 medium sized onion
6 cloves garlic
1 inch ginger
3 green chillies (Add more if you want it really spicy)
2” piece cinnamon
2 cloves
1 cardamom
1/3 cup water to grind
Other Ingredients
1 tablespoon Ghee
1 tablespoon Vegetable oil
3 cloves
1 medium sized onion, sliced
1 tomato, chopped
1/2 teaspoon turmeric
1 teaspoon salt
15 mint leaves
3-4 stalks coriander leaves
Vegetables for the biryani
2 Carrots
1 potato
1/2 cup peas
7-8 Beans
Soak the Seeraga samba / Basmati rice in water and set aside.
Heat oil and ghee in a pan and add in 2-3 cloves. Add in the sliced onions and fry till the onions are soft. No need to brown the onions. When the onions are soft, add in the chopped tomatoes.
Fry till the tomatoes are cooked and oil floats on top. Make a paste out of the ingredients listed under biryani masala. Add it to the pan and cook for a minute. Add in the turmeric powder and salt and saute for a minute more.
Add in the chopped veggies. For every cup of rice, use two cup of vegetables ( I used carrots, beans, potatoes and peas) and fry for 2-3 minutes. . Add in the chopped coriander leaves and mint leaves. Fry for a minute more. Now we need to add water. Add 1.5 cups of water for one cup of rice. Add in the water and let it come to a rolling boil.
Once the water is boiling, add in the rice and let the mixture come to a boil again. Once the mixture boils, cover the pressure pan with a lid and leave it exactly for 2 whistles on medium flame. Switch off the flame and let the pressure from the cooker release naturally.
Vegetable Biryani is ready. Serve hot with kurma or raita.
You can use the same receipe for Mutton- GOAT meat with bones or Maryland Skinless CHICKEN- I prefer Halal cuts taste better...

Key word is "BIR" Biryani..... but not a Biryani for me. More like a fried rice which is more what a BIR one is.

The thick tendons in mini fillets put me off, yes you can trim them but they are hanging, prefer thigh meat myself.

I would usually add it. It's the most simple recipe in the video because it's added to the rice

Just ordered some tikka blends from spicey Joe's. The weather in Scotland isn't suitable for tikka on the grill unfortunately, gotta admit I hate air fryers but here goes. I trust in Al as every recipe I've followed has been better than the local takeaways, including a Scottish finalist in curry awards.

Have you tried making Biryani with jeerakasala rice? Probably edging a little bit out of BIR territory, but an absolute game changer if you can get some!!

Is it ok to remove the woody spices from the rice? My family don’t relish biting into a big bit of cinnamon, black or green cardamom.
Biriyani looks really nice, I've got some pre-cooked chicken thighs that need using up, so I'll be making an approximation of this one tomorrow. Can't wait to see you eat half a phal dish, get the milk ready or just get really drunk first like a real man, lol.
This tasted very nice but the quantity of rice is far too much, I have a very large pan and it was a struggle to heat the rice through without it getting stodgy.........this must feed about 8 people I have mountains of it left over. I would usually use 2 cups, around 300g for four people.

Best biryani has one egg 'omelette, thinly sliced tomatoes and cucumber on top. With a sprinkling of desiccated coconut and coriander.

Having owned that very Air Fryer for just one week (my first AF), I was stoked to see you bringing it onto the channel. Defo trying that tikka method, and the food looks lush. Definitely giving that a go! I can't believe people didn't get the vindaloo thing was a joke!

I don't mess with rice, cook it and eat it. Maybe refrigerate for one day adter cooking and thats it

Finally an answer to why my tikka has been turning out crap. Keep the marinade thin. And the air fryer has been a game changer. It gives the meat nice charring. You’re the man Al. 👏
