      Well truffle oil doesn't have truffle in it - just chemical substitutes so the only half pricey ingredient is the beef

    I've been trying to improve my burger game lately. Im a keep it simple burger type enjoyer, double burger with American cheese and maybe onions and pickles. I've been grinding my own beef but its still not quite getting me the deep beefy flavor I've been looking for. Definitely happy to see this video!

      Jimmy Swenson try adding some feather blade, and if you’ve got the patience to cut it off the bone, some oxtail to your mix. Bother deliver a serious beef hit.

      @@grahamshellswell4513 yeh, I'm thinking add some oxtail into the onions. Along with the marrow & veal, should produce a veritable beefgasm. I'm also of the less-is-more school of burgers, and think height should never exceed diameter.. Unless customers are part-python and can articulate their jaws wide enough to eat the burger without wearing it. Stacking burgers too high just leads to food waste, which should be a sin for a burger that looks that good :)

    I'm never going to find bone marrow easily available here in france, and I am not making veal jus from scratch just for burger night, but i am going to caramelize my onions in beef fat from now on.

    I SO WHAT ONE. "NOW".
    I love making my onion brown I use a little bit of salt and sugar. I but then in a pan a little oil then a small amount of water yes water but lid on and steam them first then you hear the sizzle of them frying then turn down heat. Perfect all the time. Next time I use mayo I must try it with truffle oil. THANKS BIG TIME. I am not a chef I Just like Cooking and Eating Proper Meals. And I am now thinner then my picture. Proper contol on how much I put on my plate now. From 48 inch to 46 inch going down a bit more

      Finish it with truffle oil. Don't just use the truffle oil. I made the mistake of even going 50/50 around 17 years ago at one of my first jobs. It was embarrassing and also such a huge lesson in control and refinement in a professional kitchen. Also, the chef literally wanted to kick my ass for it. Turned out it wasn't no commercial product. It was his own truffle oil that his wife infused herself with $3k worth of black truffles a year ealier. They yielded 10 litres and I used a whole half a liter to make my 1.25 liters of garlic and truffle aioli. LOL! The amount of their truffle oil I used that day could normally be used to make 5-6 gallons of truffle mayo. LOL!

    Finally a euro who gets that burgers do not need all the fillers like bread crumbs or eggs. It is just meat and fat, pressed into a patty and cooked. Any additional ingredients are the toppings.

    When this guy said. "listen to Gordon Ramsay about everything except what he puts in his burgers", I gained 100% more respect for him. I've never understood how an absolute culinary titan like him could put fucking eggs and breadcrumbs in his burgers. I mean, I love Gordon Ramsay, but come on.

      I think they justify it in that the burger is made from ground up steak cuts and ak can be " medium or rare. Not sure I agree with it , I like a good charring on a burger.
