    Ingredient List
    Seafood of choice (lobster, fish, shrimp, conch)
    3-4 cups Seafood stock (lobster, crab, fish)
    4 pieces thick cut bacon
    1/2 cup diced celery
    1 carrot minced
    1 small onion minced
    1 red bell pepper minced
    1 green bell pepper minced
    1 jalapeño or red Chile (if you like heat)
    2 large red potatoes
    1/4 cup flour
    white wine (to deglaze)
    1 box/can of diced/chopped tomatoes (20-30 oz)
    1 Tbsp tomato paste
    4 bay leaves
    1 lime juiced
    red pepper flakes if you like more spice

    My favorite channel. I grew up on Narragansett Bay, moved to Austin TX 92, eventually settling in Carbondale, Colorado. I snowboarded for 15 years but miss the oceans and bays particularly shellfish, scallops, fresh fish. KWWM is my go-to for homesickness and anything aquatic on the Ocean or bays et cetera. My dream is to live on a boat somewhere in the Keys. Thanks for the cooking section of your show, my stomach starts grumbling. Ciao belle-

I watch your channel cause I am a Idaho resident and don't have the ability to get on or in the ocean and, I love the content. Your videos are amazing! Do what is best for you and your wife.     My wife and I went to the Keys for the first time during New Years, beautiful place, water was nice and the fishing on the bridges were amazing!
    Seems like an awesome place to live in, but definitely understand its extremely pricey.

    a trait I got from being raised by my gramma who lived through the depression is to never throw away parts of anything that can be made into a stock. even most veg you throw away like the broccoli stalks goes into a stock.

    I have watched your channel almost from the beginning. I really admire you and your wife. You show how you can harvest sea food the right way (even putting lobster and crabs back in their homes if they have eggs or are too small). I have lived here in the keys since 1980. Actually 1978 was the first time I tried to move here, but only lasted about 9 months. I had to regroup and came back determined to never leave again, I haven't. I have learned more about spearfishing and fishing from you than I picked up from 40 + years of experience . You taught me the right way to euthanize fish and lobster. Thank you for the lessons.

    Did you know that the manhattan clam chowder ( the red one) is actually a Portuguese version,which reminds me of what you just put together. My mother was Portuguese and my father loved to fish so,you can guess how we grew up. And we have a place on the east and west coast of Florida.

    Something you could do would just be meet and greets at local bait shop. Great way to meet fans but also get your name out to some new viewers. I’m really happy for you. Being a charter captain is probably really fun when you’re 25 but probably not so fun when you get a little older. People don’t realize how much it a grind it is. Early mornings and really hard work. Tough conditions and sometimes outright dangerous situations. I’m happy to you and also happy you’ll have more time for content I know we are going to see some awesome stuff in the future.

    This is the time of year for soups for sure. Have you tried White Chilie? Very simple: white chicken, white cannelloni beans, onions and garlic and McCormicks White chili mix. I have the entire reciepe, but gave you the short version. Quite good !

    Btw, have you ever tried to fry the tomato paste in a dry pan or a dry part of the pan for a minute or two before adding it to the wet deglased pan or adding the wets into the pan. It really brings out a more sweet flavor from the tomato.

    Justin Wilson- never use “cooking wine”, use a nice “drinking wine “ and finish the bottle while you cook. Nice looking chowder!

    I believe the laws on the east coast are different from the west coast because there is no coral on the west coast. The use of tools helps people not mess up corals and things like sea fans which are probably the most important resource in your area.

    For people that don’t live in the keys and gives their thoughts, you have a right to your own opinion. For you kind sir, everything that you’ve done has always been legal and I love it! I have family in Big Pine and I truly see why you guys follow the laws. I always purchase a fishing license every year that come. Please keep up the great work!

    Just made the chowder.. used shrimp, clams, mussels, and some spare salmon. Great recipe.. though I will not use mussels next time.

    Paprika...always paprika. I are a good cook. I get it in small bags- bulk-organic.. I grow peppers from all over the world,too. I have freezer bags full of them. In my freezers. But it looks good. Consider a little hominy in there.

    i have been diving for 15 plus years and live on the west coast and cant tell you how many antennas i have broken. i 100% agree with you! regardless on how skilled you are. it happens when they are in a cave and all you can grab is the antennas to even have a shot on a keeper lobster. The law/rule was not made from a diver but someone that sits behind a desk i can tell you that much.

    I lived in southern California for years and did tons of lobster dives. Now I am in FL. The main difference between CA and FL in lobster diving is the time of day. Because tools are not allowed in CA, most dive for lobster at night, when they are out of their holes and walking on the bottom. It makes it much easier to catch them without the tools. You can use something call a hoop net, but I always found it much easier to catch them by hand. And by walking on the bottom, you just grab them on the carapace, and no damage done.

    I used to use cooking wine in my dishes, but switched to regular wine, usually a Pinot Grigio for the taste, and because the amount of salt in cooking wines is ridiculously high.

    We use the same tools in the Caribbean except the water doesn't really get cold... Well to us it does. 70-75 is freezing.

    Do you drop anchor at each spots or one of you stay on the boat? Or just let it drift away? I know on your gheenoe you have the parachute system. I was wondering what you do for your larger boat
