Excellent presentation. Just a quick clarification- Kalpasi is not thippili, but stone flower. It is used in chettinad masala and typically not in other regions of the south. Chettinad masala also has a higher black pepper content than other masalas.

Kalpasi or Dagad phool is used a lot in Maharashtrian recipes.

Chef. Roast as much as u want. Grind on the Grinder(sil batta). Cook immediately. Goes a long way. Why store?
