North Indian garam masala
Coriander seeds 4 tbsp
Jeera 2 tbsp
Bayleaf 4-5 pcs
Cinnamon 4 inch pc
Dry red chilli 5 pcs
Nutmeg ½ pc
Green cardamom 1 tbsp
Mace 1 tbsp
Dry rose petals 2 tbsp
Black cardamom ½ tbsp
Black pepper ½ tbsp
Cloves ½ tbsp
Heat a pan, add coriander seeds, jeera, bayleaf, cinnamon, dry red chilli, nutmeg and roast them on low flame. Roast them for 3-4 mins and keep aside.
Heat another pan, add green cardamom, mace, dry rose petals, black cardamom and lightly toast it on low flame. Stop roasting them once it releases aroma.
Roast black pepper and clove separately.
Spread all the roasted masala on a plate and cool them down.
Add these roasted spices to a mixer grinder.
Grind them by pulse mode, make sure the mixer won't get too hot.
Once grinder to a fine powder, store it in an airtight container.

Excellent presentation.
Just a quick clarification- Kalpasi is not thippili, but stone flower. It is used in chettinad masala and typically not in other regions of the south. Chettinad masala also has a higher black pepper content than other masalas.
Kalpasi or Dagad phool is used a lot in Maharashtrian recipes.
South ke garam masale mein fennel (saunf) ka use hota hain. Bina iske masale bante hi nahi
