  • Full Written Recipe for Kolhapuri Kanda Lehsun Masala
    Prep time: 10-15 minutes
    Cooking time: 20-25 minutes
    Serves: 600 gm
    Ingredients:
    Whole kashmiri red chilli 75 grams
    Whole byadgi red chilli 60 grams
    Lavangi mirchi 120 grams
    Coriander seeds 60 grams
    Cumin seeds 25 grams
    Caraway seeds 3 grams
    Fennel seeds 12 grams
    Mustard 12 grams
    Sesame seeds 12 grams
    Poppy seeds 12 grams
    Bay leaf 5 grams
    Cinnamon 5 grams
    Star anise 5 grams
    Clove 5 grams
    Black peppercorn 12 grams
    Black cardamom 3 grams
    Green cardamom 3 grams
    Mace 3 grams
    Triphal 3 grams
    Mesua ferrea 3 grams
    Oil 3-4 tbsp
    Turmeric 12 grams
    Asafoetida 3 grams a piece
    Fenugreek seeds 3 grams
    Stone flower 3 grams
    Onions 75 grams (sliced)
    Garlic cloves 60 grams
    Ginger 25 grams
    Fresh coriander a small handful
    Fresh coconut 60 grams
    Salt 40 grams
    Ginger powder 12 grams
    Nutmeg powder 1 gram
    Method:
    I'm using three 3 different types of whole red chillies, kashmiri & byadgi used for giving colour to the masala, whereas the lavangi chillies used for giving the spice element to the masala. You need to sun dry them for atleast 2 days or you can also bake them in oven at 100℃ for 20-25 minutes, or you could also toast them in the pan in batches and roast until they become crispy, the main idea is to expel the moisture present in the chillies & make them super crispy & dry, oven & sun dry works the best, after drying, remove the stem & transfer in the grinding jar, grind to make fine powder. Empty it in a big size thal
    Further, set a pan on medium heat until its moderately hot, add coriander seeds, dry roast on low flame until it’s aromatic, remove it a plate and allow to cool down.
    Further add cumin seeds, caraway seeds & fennel seeds, stir & dry roast them on low flame until its aromatic, once roasted nicely, transfer in the same bowl the coriander is in.
    Further, add mustard seeds, sesame seeds & poppy seeds, dry roast them as well until they are aromatic, and transfer them as well in the same bowl.
    Ive toasted the spices as per their sizes.

    This is exactly how my mom makes our masala for entire year long. It stays fresh and aromatic for the entire year. And we have a tradition of my dad eating the freshly made masala with bhakri as soon as we get it from the grinding shop. Can't imagine food without this masala. We use it in everything from veg to non-veg. Thank you so much Sanjyot Keer for respecting and making the masala the traditional way. More respect and love for your skills.

    Northern Karnataka and Maharashtra have so many similarities.
    Language influence , cultural influence and culinary influence too on each other 😬
    I am from Hubballi ( 200 kms away from Kolhapur) and in this region too we make this masala, with some minor changes maybe.
    And make it once a year and use it for all different cooking.

    As time goes the taste will get improve. And if you dont have any main course you can mix chutney along with ghee/oil and eat. But being kolhapurkar this is perfect recipe without this kolhapuri recipes are incomplete 😋

    I am from kolhapur and we were helping mom lots of time while making .Now we also make individual masala with little variations. For large quantities we use dry coconut.
    Here is my request to you,please give measurements for 1kg masala means 1 kg मिर्ची and ingredients accordingly.

    It's not just limited to Kolhapur only. It's call Kaali ( Black) Chutney/Ghati Masala as well. And it's a specialty of entire West Maharashtra (Sangli & Satara included).

      @@prasad325 I add this masala in every veggies, dal, nonveg recipes, egg curries as chilly powder etc..and as well as kolhapuri dishes like misal, tambada pandhara rassa etc ..just that it has already many garam masalas in it ....so avoid putting separate garam masala powder in regular food.

    OMG almost all खडे मसाला needed. Good recipe. Thanks a lot for this simplest recipe. Others have shown too complicated methods. Readymade masala is available but not at all good. This looks amazing

    Its nice to see someone remembered to put Nagkesar. You can roast the cloves instead of frying. Bake all the dry spices lightly or they loose smell. Dry coconut can be used. Garlic does not need to be roasted or fried. Dont use ginger much because if used a little more, it can overpower the fragrance. Fried coriander turns black in later stages and can grow fungus in long term use hence reduces shelf life.

    I am from kolhapur..In kolhapur we use dry coconut...Not fresh coconut

    I am maharashtrain right now residing in States. Usually my mother or mother in law makes this for me and send it over. Since Covid they were not able to send it. I am out of masala .     I just had sprouted mot so I thought of making misal...at this point I had no idea the amount of hard work that goes into it...plus I was missing couple of items like triphala n nagkesar n i forgot to put nutmeg which I had...also I did not have the exact same chillies u used I used guntur mathaniya n some store bought teekha chilli powder. N I ignored the measurements....I did almost gave up n went to the store to see if they have a readymade masala @9:30 pm...but it's Bangalore not Maharashtra...so came back n made it all by myself with wat ever I had....n the result was fantastic....man thankyou so much 👍 for the recipe next time I'll have all the ingredients...n will use them according to the measurements u mentioned... thanks again.
