  • Hello all you lovely people, I've got a beautiful recipe for you. It's a Rhubarb and Custard tart, with a gooey filling and and a crunchy homemade pastry, it's an amazing thing that you can make for your friends and family. First step is to make a delicious rhubarb and apple compote. Then it's the custard and I'm going old school with a great little hack. Once you've got your filling into the pie case I'm going to show you how to make your pie look even more beautiful with some decorations using left over pastry.     Like all your recipes I am sure this will be wonderful. I never used powder custard till I meet my husband he was Manchester man. And he made it so good. No lumps. That was 1973

    I can recomment to also add some strawberries to this. Rhubarb & Strawberry cake is a very common thing in Germany.

      RHUBARB DOESNT ALWAYS HAVE TO HAVE STRAWBERRY WITH IT. RHUBARB IS AN INDEPENDENT WOMAN

    In my family we have a similar recipe, it is a kind of pie, of Swiss origin that my great-grandmother used to make, she called "Gateau". A simple dough of flour and butter or lard as a pastry only on the base with a filling of diced (uncooked) rhubarb, with a mixture made of flour, milk and eggs called "Papeta" (similar to crepes mixture) all that with sugar and butter on top, then baked until cooked. It can also be made with green apples or plums or berries such as Calafate, raspberries or currants or gooseberry. Greetings from Punta Arenas, Chilean Patagonia.

      Gosh, really. In Australia it’s a soft yellow’ish colour and makes a delicious custard. I always buy the best brand that we have here - Fosters Clark Custard Powder - in a box.

      @@goldilox369 no, it is a powdered substance, normally a yellowy colour, silky n soft. Makes yummy custard. Simple and delicious as you only need milk and sugar and optional for vanilla essence/paste. Fosters Clark is the best brand in Australia. It comes in a box

    Stunning looking dessert! I would love to have seen how you removed it from the pie plate. Didn't know rhubarb grew in the UK. It truly is magnificent!

      I think it's one of those pieforms with a loose bottom. When you want to take the pie out you gently push it in the middle of the bottom and it with will be pushed up from the edges that are in the shape of a ring with a little lip which the bottom piece rests on. I don't thinh they have a special name, I have just seen they been called "Tarte/Pie Pan with a removable bottom".

    My mum used to make a rhubarb custard pie, simpler and not as decorative as this, but oh the flavor! Probably the best I've eaten. Next to my cherry mincemeat that is. This recipe is on my list for sure. Question though: What the deuce is custard powder? Me being from "merica.

      It’s basically just cornflour and flavourings + colourings. You can make it by adding 3 tablespoons of cornflour (corn starch) to 2 cups of cold milk. Whisk to make sure there are no lumps. Add vanilla paste/flavouring and sugar to taste (around 2 tablespoons), pinch of salt. Heat up until thick. Add yellow food colouring for aesthetic purposes if wanted.

    I'm a big fan of your work since many years ago, I love youe passion for the food, and now that I'm living in England I'm always super excited when I see something yours, I even have rhubarb in the garden so I'm definitely trying this one.
    I'm vegetarian and always cook vegan, this recipe is easily veganisable? Haha.

    Like that recipe Jamie How about this one /// 4 cups of rhubarb 4 eggs 1 cups of Pamela's baking gluten free flour 1 t nutmeg 1 t cinnamon 3/4 cup sugar also mix on up good put into a Longerbergar pie dish 400 F for 1 hour it will make its own top and bottom crust for you IT IS TO DIE FOR !!!

    I put more sugar in the compote and add a squeeze of lemon. I also reduce and thicken the reduction with corn flour and add it back into the pie before topping with crust. Let it sit for as long as you bake it before cutting.

      Oh wow - you'll have to show us all where he said "thoust shalt not ever eat a fruit pie". Please link us to the article or quote because we've all been getting the wrong end of the stick.
      We were all clearly disillusioned into thinking we could eat a sugary food now and then on the condition that the remainder of our diets are well rounded and nutritious.

    Don't show us exactly what's going on on the inside, show us how you took that tart out of that pie dish without breaking it (a false bottom pan might have been easier).
