香港好吃的漢堡包林林總總,除了在餐廳、扒房和快餐店能找到它們,一些高質素的漢堡包其實隱藏在酒吧之中。這集邀請了調酒師Paul和我們一起到兩間酒吧試吃,討論酒吧食物和酒的配搭。
談到酒吧美食,Paul觀察到在近五、六年,香港越來越多酒吧開始供應美食,也有不少餐酒館開業。餐酒館著重調酒師和廚師之間的溝通,菜式和雞尾酒的創作上比一般餐廳有更多配搭。同時亦因疫情的緣故,新開張的酒吧大多會取得餐廳牌照。除了單調的炸物、小吃,酒吧開始提供用料上乘、精緻的美食,吸引不喝酒的顧客也可以入內用餐。酒吧的食物質素漸漸提高,也許以後能成為大家覓食的好去處。

Wagyu beef for burger? If not mixed with other cut of beef, it would be like drinking oil. Only fat, zero beef flavor. Juicy beef patty is easy to make. Add water and egg white to the beef mix. This burger is overrated for sure.

你一吃,就去bar,下一步就冇'啦,好多,过夜酒店都執左啦
好耐以前就喺嗰度嘅酒吧. 可能係因為之前有來自美方的交易. 因此,呢啲托運人同商船可能會喺香港降落。 然後繼續前進。 但即使喺1997年之前... 有...開 英國酒吧。 其中都有啲。 酒吧更像是一個 “紳士俱樂部”...... 用于情感支持等. 1 )唔係拾取接頭。 2 )即使喺英國,女性都並不總是被允許進入酒吧? 3 )它從來都唔係徜徉文化桎梏。 人們只是在 “減壓”... 喺佢哋自己嘅小洞度. If you are an actual "maid".. then why are you charing there for ? Get the hell away !!! This sector is dead, cos the HK SAR government does NOTHING about this kind of sh!ts. That is for one. Second... it also creates and allow a certain situation to occur as well. (這樣他們就可以履行工作的職責... 同行為準則. )
因此,即使您對此類機構進行現代化改造。 係.. 它可以現代化. 但要遵循一些基本嘅禮儀。 不能嗎? 讓它周一至周五... 對當地人同社區都好友好同開放。 在某個時間... 有一個“酒吧餐牌”話下晝6-8点嘅時間. 然後將其作為完全適合家庭嘅周六/周日餐牌打開. 遵守典型嘅基督教周或其他乜嘢嘅禮儀.
Every bar and pub in the UK is regulated. By regulated. We mean.. their own staff act as a "security guard as well". The bartender has the duty to refuse to serve you if you are too drunk, and the bouncer can kick your ass out of the establishment. The same should also be for women as well. If women are found to be harassing local financial services employees... Then the manager, should have a word... and get those ladies kicked out. WHY is the current "inclusive laws" do NOT comply to SUCH simple things? The UK do not have such a big issue.. at all.... !!! If they were a smart manager... those teams should even invite a HR personnel to dine with them on lunch times. To both deter harassers... and as well as to see how they are feeling in their jobs etc. This is normally, what SMART people DO.... And by right.. if you are a restaurant's manager... You SHOULD take notice of such corporate clients' needs as well. Can have side function rooms.. or to even have like... bigger tables.. Or to serve away etc etc.
過去,好多人連廣東話都聽唔明,學得唔好。 所以它沒有任何意義,對他們的所作所為一無所知? 但由于香港嘅人群受過更多教育。 而且互聯網而家都咁大。 呢啲基本規則都應該堅持落去. 倫敦可以做到。 它都一直這樣做。 越敏感嘅人... 通常去某些場所。 但有些人確實都可以去正常嘅地方。 那做乜嘢唔呢? 點解香港會達到這種地步,並帶來了如此多的即興演奏??? 香港媒體都無濟於事。
Because bars also normally have licensing laws.. and maybe if those individual products have sales taxes or overseas' sales taxes, then maybe they assume that by splitting the establishments, then they could indeed do the accounting better. Maybe this could be why. Cos I bet that local candidates cannot deal with and do the accountings or something. LOL... Cos drinks also have import/export taxes as well etc.... Maybe this is why... these individual establishments, does not know.. exactly how things are done in Europe and why.. or how it was and needs to be done moving forward etc. Before.. maybe it is "buy one get one free"... could also be because it was indeed a tax-free ports. So anything entering.. is taxation exempted. This is why it was so cheap. But ever since other countries.. rolled up.. like EU have rolled up as well... Their taxation is already computerised.. so you see cheaper prices still.... and maybe in HK. They never built these kind of computer systems to deal with the taxes and still rely on individual importers etc. This is why people just left... or something. Something along those lines. Maybe this is why now, you will find more restaurants inside the buildings of banks... to stop this kind of annoyances etc. They deal with their own taxes and outsource it to companies etc to run. Well..... it is what it is.... There is no "culture" or "not culture". There is the "rule of law" and follow taxation laws etc. If HK has not followed through.. either they are in a blind leading the blind situation.. OR.... They do not have the right people in the right places.. LOL.... This is why the USA always love you guys.. cos it is a lawless place... Whereas Europe hates.. HK.. with their non-understanding.

No wonder most people left. Lol. Nobody does it like this style. Even if I walked past it. I will walk away... This is so typical American style. I don't like it. European wine bars and British style still follows some dining etiquettes. And they will also offer children's menu as well.... And price points are great. None of this... "It must be for the financiers" kind of dining places. And that brioche has too much yeast. The holes are too big. Use less yeast. And they are wrong to offer those kind of drinks as well for that area cos...if I was a banking manager and you coerced my employees to drink above daily limit level and be toxicated before they come back to work. I will sack them. So this basic point about light aperitifs... They don't even get. And why are they making it like a typical grubby hole ?... Turn it into a lighter interiors with less of those dark lightings. Open it back up a lot more. Make it multiple client friendly... And friendly for so many ages.... even including those tourists ones too.. no wonder so many people left HK.. It must have become a bit of a ghetto and territorial ?.... When the joint declaration happened... What the hell happened ??.... You don't find this unlimited bs in the UK.... Chi sin. Get that American to follow UK pub licensing conditions and know full silver services as well. Wear a goddamn health and safety kit or uniform at the very least !..Each time I see a European on a video..all of them wear a white chef's kit. But yet these Americans never do. Why ?....
Those drinking etiquettes are followed through from royal families and etiquette... So he should know what is the legal limits for drinking etc and as a bar tender.. it is his job to monitor and not serve customers if they feel that they are drinking beyond their remits etc... And the serving temperatures is supposed to be around less than five degree cos the white grapes get sour if it becomes too warm. It will taste like vinegar then. In hot HK... This is a number one focused. And they need to calibrate their fridges to continually counteract the weather and elements... I would also work on a non-filming and no disrupting each others' dining experiences as well as a number one thing. The establishment needs to respect and always monitor privacies. Lots of waiting staff often do small chit chats etc. No personal attacks or business talk etc.

I would plonk myself in a team meal every single goddamn day. This is why. Smart guys go as a team and check mate their colleagues. In Europe.. I find the guys are a whole lot smarter than the US pratt's that came after. Wtf indeed.
