I've been recently looking into deformations techniques, and came to understand that proportional editing and lattice, which are the go-to techniques, are in fact lacking, because they require the user to manually edit the deformation, basically vertex by vertex, without the ability to use sclupting methods. This approach of yours instead allow the user to also sculpt, which saves a lot of time and leads to better starting results. Thanks a lot for the video.
I guess your mesh is too heavy that your computer can't handle the process you can try and lower the density of your mesh or maybe try another version of blender that somehow fixes some issues usually
If the mesh is too dense and you computer cant handle it, it will cause it to crash apparently. You can try using a different version of blender it might be a bit robust for this kind of situation
you can hover the mouse over the value of the shape key and press"i" on the keyboard when you set the desired value, then move in the timeline to the desired frame and change the value of the shape key to whatever you desire and hover over the value box and hit "i" again to set another keyframe, Or you can enable record keyframe in the timeline and then you wont have to add keyframes manually they will be added automatically whenever there is a change to a value

For some reason it says target contains concave polygons when im trying to use Surfice Deform
Why does that happen?
try to triangulate your mesh to get rid of the concave polygons
