    Considered the national dish of Jordan, and a dish that nearly every Jordanian loves, you are bound to taste Jordan with every bite of mansaf you taste. This was my first time to ever try mansaf, and I was so happy and excited, it was incredible.
    What is mansaf (منسف‎)?
    Mansaf (منسف‎) is a Jordanian food that consists of three main things: rice, lamb, and jameed. The rice is often cooked with turmeric to give it a yellow color, and the lamb is cooked in jameed, and then more jameed is served on the side as a sauce for the rice and lamb. Finally, the lamb and rice is topped with a handful of fried nuts, either pine nuts or sliced almonds, and the full meal is then served with a variety of fresh vegetables like onions and arugula.
    What is jameed (جميد)?
    Jameed is a type of goat yoghurt that is dried and fermented and made into a hard ball shape. It’s traditionally prepared by Bedouins in the desert who preserve the goat milk by making it into jameed so that it lasts for a long time and can be used slowly. If you visit a Bedouin tent or village, you’ll often see balls of jameed resting on the roof of the tent, drying in the hot sun. For mansaf, the jameed is re-hydrated and made into a sauce, and it gives the unique signature taste and richness of the dish. I had my first taste of jameed, and it was amazing. You can really taste the goat and taste the pastures and grass and shrubs that the goats have eaten in every bite. It definitely has a bit of a meaty taste to eat.
    Along with mansaf being an incredibly delicious food, one of the great things about it are all the traditions and customs that come along with eating it. It’s a typical food to eat at Jordanian festivals and celebrations. The mansaf is served on a big tray, and everyone stands around the tray, taking bites with their right hand. You pick up some rice with lamb, and douse it in jameed, then roll it into a ball shape in your palm, making sure there’s some lamb in the middle of the rice and that the entire mansaf ball is held together with jameed. One you have a ball ready, you drop it into your mouth, making sure you don’t touch your lips so that you don’t contaminate your fingers - then you repeat again. Once you are finished eating, you can then lick your fingers clean, and it’s acceptable, that’s pretty cool!
    Tawaheen Al Tawa Restaurant - To eat mansaf in Amman, Jordan, we went to one of the most famous restaurants in the city, Tawaheen Al Tawa, a huge restaurant institution in Jordan. The restaurant serves all sorts of delicious Jordanian and Arabic foods, and they especially specialize in mansaf and bbq meats - we had the mansaf. Our tray came out, a pile of rice topped with a heap of lamb, and side bowls of jameed. The combination of the dish, and the method of eating it, made it one of the most memorable meals I ate when I was in Jordan. Price - About 10 - 15 JD ($14.06 - $21.09) per person

      Lamb is the most delicious meat on the planet in my opinion and that dish looks heavenly , I need to go to Jordan food looks so fresh and delicious .

    To all looking for a great vacation spot, go to Jordan. Beautiful country with the most hospitable people. Beautiful scenery and plenty to see. Very tourist freindly and well priced. Safe and clean is very important for me, so Jordan is perfect. Food is amazing. Everyone speaks English also.

    and for people who were asking about eating mansaf by their hands, I'd like to say that it is only traditional habit, so it is not must to eat it by the hands, and actually only some of men and elderly people like to eat it in their hands and the ladies prefer to eat it by spoon :D
    btw eating by hands has health benefits

    people are fighting over whether to use their hands or cutlery yet they dont write about how good the food looks and what this wonderful people invested in preparing it, i have gone to many good restaurants but the attention to detail in this restaurant is first class, i wish the restaurant staff and wien all the best.

    Wow! You're whole Jordanian series has been very interesting and really enjoyable. I do have to atop watching your vids late in the evening though as i always end up going to bed very hungry!     Satiety (feeling full and satisfied), does not only depend on amount of food that passes your throat..
    But also on the satisfaction from good taste working on mouth and tongue receptors, and the skin receptors in the hand, from food touching..
    This is why eating with hands is more satisfying.
    This is scientific physiological fact.

    I would go to Jordan just to see that tour guide, he was gorgeous. I would love to visit Jordan, looks like an amazing place, I would love to go to most places I watch Mark visit. I love watching them get so involved in other people's culture and the way they live. I think that is what is special about these uploads, it's not just showing you food and different parts of the world it is showing you culture and more often food and culture are interwoven.

    I visited Jordan in 2005 and had a wonderful time. Can't say I like mansaf that much, but I was very grateful to be invited to our friends' home and try this famous dish! Fortunately as a woman I was not expected to attempt the barehanded eating--I think that would have been a disaster! Love this video series--I want to go back!

    im from jordan ,some people ball the rice up , but my family use spoon , much better , balling up rice is traditional , however i prefer spoon

    Certainly one of the most interesting travelogue I've seen in a while. Would have never thought Jordan to be so beautiful, and the food looks absolutely amazing. I doubt very seriously if I could find Jordanian food here in San Francisco to match the level of preparation you're having.

    I would like to shed some light on some of the info said in this video about Mansaf. Most Jordanian nowadays cook Mansaf at home once a week particularly on Friday. They usually cook it using cow yogurt , and occasionally using lamb yogurt, and rarely goat yogurt. This is due to availability and price. Many Jordanians nowadays mix yogurt with a small portion of liquid Jameed manufactured by many companies and can be found in almost all grocery stores. One popular manufacturer for liquid Jameed is Al-Kaseeh. At home, most Jordanian eat Mansaf by a spoon. Only in big occasions, like weddings, Mansaf is eaten by hands which must be washed thoroughly before eating.

    Your Jordanian trip has been an excellent introduction to me of the regional foods of the area.     I love eating with my bare hands, especially my Indian food. This is how I would eat my biryani with raita and raw onions!!! Yum 👅

    I was born in Amman Jordan in 1941 and my ancestors are all Jordanians, born and raised east of the river in the city of Salt. They eat mansaf by hand as described. That was because of necessity because people of the desert don’t carry spoons or they did not have enough for every one. They then followed the Bedouin habits and started calling it a tradition. I personally never ate my favorite dish with my hand but almost every one around me did. To every one his or her choice. I don’t consider eating with one’s hand is essential to enjoy that beautiful dish.

      It’s not hard to make it’s one of those meals you can cook from home just go to your local Arabic store and get Jameed and all you need is rice and lamb or chicken

    Just shows how do much alike cultures are in their differences! So many cultures have the hand eating/sharing communal style. Those that scorn forget that these people tend to be a whole lot healthier than most in the world.

    The jameed thing is called quroot in afghanistan we have a variety of those here made from different kinds of yogurt and sour cream and when you turn it into liquide with some hot water and eat it with rice (mansaf, maqluba, biryani... etc) its just to die for it's so delicious

    At the risk of getting hammered for saying this. You don't need to eat Mansaf with your bare hands.
    Sorry folks, but I've always refused to get peer pressured or bullied into eating any rice dish with my bare hands.
    I am from the region, and this whole argument that Mansaf could only be enjoyed eaten this way is a sad fable.
    It's pure macho b.s. culture.
    Rest assured there is no shame in using cutlery, it does not diminish one's manliness nor does it offend your hosts.
    Don't let anyone out there tell you otherwise. Period.

      I'm willing to bet your own parents do not eat Mansaf with their hands, the reemergence of eating certain rice dishes barehanded started only a few years ago.
      Every culture in the universe has moved on from once eating with their bare hands to using cutlery or chopsticks or what have you thanks to the industrial revolution and the ability to mass produce cutlery at low cost for consumers.
      It's only in the Middle East and for the last thirty years or so under the influence of some religious nutbags bankrolled by our southern neighbors that we are moving full steam backwards, justifying the resurgence of eating rice like neanderthals with unfounded religious b.s stories.
      Even apes and chimps break branches off of treas and create tools to eat with.
      Mohammad the prophet of Islam was obsessed with hygiene and cleanliness, if the availability of cutlery was wide spread back then, he'd be the first to incorporate it into his eating habits.
      Get over yourself man, you prefer eating rice with your hands, good for you, no one is judging you, but don't expect others to buy into the fantasy that eating rice barehanded is a cultural norm, it might be for those stuck in the stone ages or too intimidated to use cutlery.

    Need someone to teach you how to properly eat Mansaf. We only eat mansaf with the fingers without messing the rest of the back of the hand and we never lick our fingers. It an art which we treasure.
