I only use aunt Bessie now they are super clean . But what I learned to get rid of smell and all that fat is after you clean them boil them for about 15 minutes, empty off that water, wash chitterlings again and add some fresh water before seasoning. I got to buy my aunt Bessie in September or October for the holidays because they sale out fast here in Georgia

For “muting” the smell while I do the prep cutting, I have a small pot on the side with seasoning like cinnamon, bay leaves nutmeg, very aromatic seasonings when boiling. I leave this mix boiling all though cooking the chitlins. I has someone who know what they smell like come in while they were boiling they said they can smell it a little mostly the aromatic seasonings on the side. You just have to replace the water every so often. Try that

To cut down on cleaning there is a brand of chitlins called aunt Betty’s they’re only 5 pounds a bag but there’s little to no cleaning I’ll repeat that little to no cleaning but they are a little expensive it’s about $13 and change for a 5 pound bag. I live in Texas and there’s a Walmart that sells them not all Walmarts carry them

When I lived in Alabama, a black man and his sister had a little restaurant and all they served was Chitterlings . They served them in 3 different sizes 16 Oz cup, 20 Oz cup and 32 Oz cup. I always got bbq coleslaw and bread 🍞 as my sides. Sadly 😥 the brother passed away and it was too much for her to do by herself so she closed the restaurant. The brother would clean them and she cooked them. R.I.P. brother.

I enjoy eating chitterlings. I've tried many times to clean and cook them, they've never come out right. Ended up in the garage. I've purchased them for many years from a place called Annie's in Lexington market downtown Baltimore. I can't find their recipe anywhere. And yes they're exceptionally clean. Years ago an older gentleman worked in the back clearing and used his family receipe. Yes Annie's has that receipe now.
