    Today is December 3rd 2022 & this video popped up on my feed and I'm so glad it did. Like many have said here, I also don't eat Chitterlings but soon as I saw her sweet face and she started talking I stayed for the entire length of the video🖤 I'm so sad to see she has passed on🕊️ she had the sweetest spirit. I hope she'd be delighted to know how many ppl she's helping and that this video alone has over 1.2 million views! & She recorded this video & cooked by herself.       Latricia Ballard my granny taught me how to clean them, but we live in two different states now. I didn’t trust making them all by myself or her walking me step by step over the phone. Thanks to this I feel comfortable enough to go for it.

    Oh, my goodness, this brings back some nice memories. I grew up in Poland, where chitterlings are called “flaki” and are considered a great and rare delicacy. The last time I ate them was in 1989, when I visited my family. There was a very expensive hotel in Warsaw and I had a lunch there, flaki in rich broth. It was the most luxurious food. I never made flaki myself, because my American husband and friends would not eat them. The ham hocks are called “golonka” and the Poles love it too. I believe that all the food you cooked is actually very healthy and I do not understand why some people get fussy about simple home foods like that. Thank you, Elaine, for your wonderful lesson. You know how to teach!

      @@beverlytunstallart298 Yes and no. Our Ancestors when living in West Africa. May have eaten intestines of wild game ?? During chattal slavery..made a meal out of anything that was digestive in that period. Many of the slave owners had the pleasure of dining on Venison,Beef,Pork, Turkey and Birds. We must never forget our Ancestors and learn from the horrible past. So we can continue to push forward and live as they would have wanted us... ✨✨💝Free ✨✨

    I can't lie. I teared up thinking about my granny over this video. We had chitlins, collards, black eyed peas with corn, cornbread, and whatever main meat of choice we had on hand. THIS, THIS, THIS...is how I learned to make chitlins. Awesome video. I heard she passed and all I have to say is... you will ate lovingly missed, and also; job well done.

    Aunt Bessie's in 2023 have gone up to over $25 for 5 LB. I used to cook 150 Lb for Christmas. I no longer buy them. They have gone up to much. Aunt Bessie's are the best. You are one of the few people who really know how to clean them. Most people take the second skin off

      Perfect description! I've never liked chitterlings (tried it though) , but I would definitely try hers after seeing her thoroughness & knowledge from beginning to end. I beet hers didn't smell at all.

    Respect for the deceased. If you don't like them don't eat them. As a matter of fact don't watch. This woman said her mother has passed on and to please be respectful in all reality she shouldn't have to even my 8 year knows if you don't like a video just don't watch. Rest in peace....Great Job my grandmother used to cook them on holidays for my family but she passed in 07 we haven't had them since. They look good 🙂

      I have had them both ways and they both are good! The only con is that there is more smell during the cooking with lining on but the taste is better. My mom took hers off.
      All y'all saying you would t eat at her house..... I hope you only eat at your house cause you don't know WHAT you are eating anywhere..... including restaurants.

    Our elders taught us patience and delighting in the simple things. They take so much joy and love into their cooking and reflects throughout the dish. Watching this was so calming and wisdom- filled. What a jewel she was. I pray to be graceful and patient when I get older. May God rest her beautiful soul. 🙏😘

      Just saw your grandma's video I thoroughly enjoyed it my grandma passed at age 96 I'm a young 76 yr great grandma . I was just thinking about chitterlings and how I haven't cooked any in at least 20 yrs I'm gonna Google Aunt Betsy's brand and see where I can buy. My condolences to your family.🙏🌻

      Chitlins is an acquired taste but once you acquire it you never go back to not eating them. I was raised on chitterlings maybe once or twice a year and every black person know when we cook them. Someone once told me that slaves are given the throwaways of the pig and chitterlings are one of the throwaways. Now they charge send the $15 a bucket go figure.

      If you eat any kind of meat you are eating poop. Look up the percentage of feces the FDA allows in meat sold in grocery stores. Ground Meats included.

      Growing up I never had anyone show me the ins and outs of the kitchen and tips and tricks. Never had anyone teach me recipes that had been passed down.. wish I had found her channel sooner. How amazing is it though that she is still helping to teach and pass along her wisdom. ❤️🙏

    My grandmother always use to serve her Chitterlings with collard greens and ham howks, rice, homemade southern style corn bread, Macaroni and cheese, and potato salad. ☺️

    So many Pessimist people who are highly non-culturally aware. Ok, so many do not like Chitterlings, well then stop watching the videos , then giving very bias and prejudice judgments of ignorance. It's that simple. You don't like something, don watch, and don't cook it. I do not eat Chitterlings either, but enjoy watching people cook many things from many cultures. That is the beauty in diversity. Besides, African American/ Blacks are not the only culture of people who eat pig parts. Many European people eat pig intestines, bull testicles, cow stomachs (tripe), Snails, Octopus arms, and a whole host of things that seem disgusting, but look, that is culture, so you either enjoy it or you don't, but to constantly comment every evil opportunity you have is truly immature, ignorant, and just plain foolishness.
    Go find your own happiness, and leave those who have their happiness in tact alone. And if you can not say something constructive or positive in support, then keep it pushing past the things you do not like or take part in.

      Very well said, there wasn’t nothing wasted on the hog. The fat which we call lard was used for frying. Back in those days the hog or pig was a main meat for a lot of people. The best part about it you didn’t get as sick from eating it as you do now days. The meat was homegrown and pure no persevatives , nor other bad stuff they inject and feed these animals with these .

    This is the first time I’ve seen this video and a friend of mine sent it to me. First of all I’d like to give her family my sincere condolences! May she rest in peace.
    I smiled when I saw those chitterlings because I’ve been cooking them for over 20 yrs now. It used to be a once a year thing because I could only find them at one store. They were not made in the USA until recently. They came from Demark. When I first started buying them they were sold only in one store during Christmas time. You they were 11$ for 5lbs. I would tell anyone that would listen about them. As time went on they started showing up in many different stores and the price went down and then back up. When they went up to 15$ for 5lbs. I couldn’t find them so I called the people in Denmark and asked what happened and they said the stores wouldn’t carry them because of the price, but I guess people complained and did care because they came back!! When I asked why they weren’t made in the USA I was told because they would have to live up to their expectations and at that point no one had. I was told that their place was so clean you could eat off the floor. Their words. 🤷🏽‍♀️ They now have one in the USA and they now run around 20 something dollars a bag at most places and they still sell out. I was so surprised to see this video and now I’m going to share it with my friends and say see I told you so!😂😂❤❤❤

    thank you , darling , for this very informative tutorial . I don't cook " chits "...........but have loved them ! ! ! they had a humble start , as (offal ) slave food , but now , I consider them to be every bit of a delicacy , as well as ham hocks , hog mauls , pig feet , pig ears etcetera..........and when prepared correctly , as you are doing , you can't beat 'em .       Our folks (as slaves) were only given the scraps to eat; other than rising chicken. But look how they seasoned their food and now more people are buying and eating greens and beans, realizing the health benefits. Our folks are saviors. 💖WV

    I love this video. May your moms soul rest. She is 1 of the most patient & informative people I know. I don’t even eat chitterlings & I sat here & watched this whole video. I do want 2 try them again but I don’t want 2 be the 1 to clean & cook them😂😂😂. She definitely reminds me of my mommy. She used 2 have all of us in the kitchen while she cooked & explain evythgz.     Oh no. So sad to learn that your mom, Elaine, has passed. I just discovered her looking through some recipes. Her presentation was so warm, welcoming and giving. I will definitely cook both meals she presented in this video. I feel like I know her. I know it has been a while, but sorry for your loss. She was beautiful and stylish.     I'm in Northern California and I am going to look for this brand. I get the pre cleaned uncle lous and it takes me 2 hours per bag to clean the so called pre cleaned chitlins. I make them once a year on new years day with hog maws. I'm going to do the salt bath. I usually let them soak while they are dirty in vinegar and a few potatoes. Thank you for posting this video😍

    Just came across this video and she did an amazing job with information on Aunt Bessie's Chitlins and I really love the black eye peas and ham hocks in the rice. Something new and appetizing.     This is my first time watching, it is THANKSGIVING EVE, 2022. My “BELOVED” Mother/Matriarch ❤, transitioned in 2012. I would usually spend my “Thanksgiving Eve”, on the telephone with her , utilizing and cherishing, her instructions. Thank you, I learned how to make “Chitlins”. It funny I came across u I just cooked some Aunt Bestie's chitterlings on Christmas day in my pressure cooker they turned out great but I got a new spend I can put on them. You are so right u have to do very little cleaning to this brand. You have such a beautiful spirit i felt a kindred spirit as u talked.       I still hear about this I watched comedian micheal Allen said same thing, that aunt Bessie was the cleanest chitterlings he ever bought...people who eat them are going to look for the cleanest. We have come a long way from that red plastic bucket.. I fix mines like my mama did. She did add onions, peppers. Used the apple cider vinegar. Recipies are a guide. U might not like a certain ingredient. She took time to show you how she did it. If u look at the year it days 2013. Have some respect. If u grew up in the south you ate these plus somebody in the family raised hogs. Peas and rice what they called hopping john.. Rip ms Elaine. It videos are still being shown u still teaching from heaven. Bless you daughter. People should always be respectful of others cooking videos. Whether u agree or not. Have some respect.     This was such a joy to watch. I'm isolating from the coronavirus and scrolling through videos to watch and came across this. God rest her soul. I remember the actress Annie Potts once said that she threw a couple of pecans in her chitterlings while cooking and it kept the smell at Bay. I haven't cooked them in a long while. Praying that everyone stays safe and healthy.

    This was a fun video. You definitely made me miss my mothers cooking back home. I live about 900 miles away from my parents now so sometimes I get home sick for a home cooked meal from my mom. Anyway, I don't believe I've ever had black eyed peas the way you cooked them. I typically don't like those but with it being in the rice and cooked with ham hocks...I'd love it!

    The membrane is not removed, I am seventy years and I grew up on a farm. My Dad butchered hogs every single year and we children cleaned the 'chitterlings' we NEVER removed the membrane. We simply picked and cleaned the whole thing. If you remove too much from the chitterling there is no taste to speak of. We were never sickened. I clean them the same way today and have never 'gotten sick'. Happy cleaning!!

      Sorry to tell you, but you're eating shiitlins. The membrane should be removed because everything that the pig eat goes through that membrane. Cleaning chitlins is not for everyone, it takes time.

      Whydoesyoutubeletyouhavelongnames I agree totally! I was raised on a farm. Didn’t eat them as a child but my people ALWAYS removed the membrane and I still do! I wash them in baking soda, then rinse them in water w/ a cap of bleach. But to each his own. R.I. P MsElaine🙏🏽
