Hi chileBeast. Most soft shell crabs in Asian supermarkets are frozen and come pre-prepared. However, if you're lucky enough to find fresh soft shell crabs then lift the shell on each side and remove the gills by snipping then out with a pair of scissors. Hope this help!

In the video Rich used rice flour and plain flour, but if you can't get hold of rice flour you can use cornstarch flour no problem. We're huge fans of soft shell crabs too. Let us know how you get on making up the dish. It's so tasty!

The English word "ketchup" actually comes from the Malay/Indonesia word "kecap" "(c" pronounced "ch"). "Kecap" usually refers to soy sauce, "manis" means "sweet" and "asin" means "salty". Thus "kecap asin"= soy sauce and "kecap manis" = sweetened soy sauce.
I order my soft shell crab from a site called King crab. The company is premier sea foods I think? But if you search king crab, their web site comes up, hope this helps.

The crabs are harvested when their shells have fallen off making them entirely edible! Give them a go-they're incredibly tasty deep fried!
