I would say this Carrot Cake, is more of a Crispy omelette with a few carrot cake. And they really take their time to slowly cook it.

They used to make their own carrot cake. Not sure whether they still do now. Don't rush the stall owners, they will tell u you have to wait very long. Not so friendly at times but the queue is really long. It is quite good but it tastes more like omelette than your usual carrot cake. Worth waiting. In.Singapore, our carrot cakes are more like rice cake, not much carrot inside.

Usually chilli sauce is mixed fried with the carrot cake, this stall simply daps it on top, quite unusual.

The grated carrot Gregory, is to aid in sweetness of the entire mouthfeel. Carrots when caramelized or undergone maillard reaction produces more touches of sweetness. It’s subtle, but greatness is often with a touch of subtlety and that sets greatness apart from ordinary.

For white carrot cake, I still prefer He Zhong's at bukit timah hawker! Very substantial radish cake and the contrasting textures of the crispness of the egg and the soft radish cake is amazing.

Doesn't need to have black carrot cake when the queue is already one hour long. When you're this good, you don't need variety. I recalled I was first on a Saturday morning at 6.30am, and was told to wait 30min. Like whut?!
