  • Sheftalia Cypriot BBQ Recipe is one of the finest BBQ dishes
    combination of lamb and pork alone with fresh parsley onion salt and pepper warped in Caul fat and places on BBQ.
    Ingredients:
    1 kilo of pork mince
    1kilo of lamb mince
    1 and half red onion
    1 cup of chopped parsley
    1 tablespoon of salt
    half a tablespoon of black pepper

      This is a Turkish Cypriot dish invented by Chef Ali in Nicosia. He named it Chef Ali kebab when his customers loved it and ask him what it was called. Over the years people started to called this Şeftali kebab as it kind of sounded like Chef Ali. Şeftali means Peach 🍑 in Turkish. So this name stuck with this dish ever since. I cannot believe someone’s trying to come up with a alternative story. This is obviously made up for political reasons as always

    Finally, i am ready to prepare this amazing dish here in the US for my family. I fondly remember my days living in Nicosia while posted at the American Embassy and it was always a pleasure making a late-night run for seftalia or souflaki kebabs. and, of course, who could forget the halloumi sandwiches

    Nice video but originally we dont use mince lamb meat. Only pork. Probably it gives it a twist

    Nice work. We never use lamb mince meat but i guess it gives a different character. Does the spice mix change to account for this variation?

      Just had the Sheftalia kebabs for tea. Made 50/50 with/without chilli. Unable to get hold of caul fat (tried in the past many times without success), so stuffed them in sausage skins. Verdict - Oh yes they are very good. Next time I will soften the onions first. Thank you for posting.

    The word Seftali means Peach in turkish, therefore Seftali Kebap is the Peach of BBQs - they are so delicious

    Your neighbors must come running whenever you grill! I'll have to poke around the halal markets for caul fat, as it would probably be illegal to sell in the supermarkets here in the U.S.

    Help! i phoned all around Austin, Tx today to local meat markets and i have been unable to find Caul. Any suggestions or substitutes for Caul?

      Unfortunately there isn't one, the caul fat must be pork, lamp's caul fat has a "unique" smell. Maybe try to ask for frozen caul fat. Always rinse caul fat until you cannot see any blood and pour a mix of a little white vinegar and water to it afterwords. Also add some cinnamon (less than pepper) to the minced meat mix and a couple of tablespoons of water. Good luck.

      I saw now the info box of the video. The end by Stoneocean has the same melody, but it doesn't have the beat I heard in this video and it doesn't have the "ee-ee" sound. There is some way to have the same music you used in the video?

      International Cuisines thanks, but as much as I know there are two sizes 8 or 5 mm, probably you mean 8 mm? Am not sure but size of skewer might make a difference in grilling? Thanks again

    This was one of the recipes that Alexander the Great's people learned from the Armenians and took back into the Greek world, Anatolia was once a Beautiful Place.

      What? Alexander? What has this got to do with Alexander? It's a Cyprus dish mate. Cypriot Armenians don't make claim to this so what's that comment about? Cyprus comprises of Greek Cypriots, Turkish Cypriots, Armenian Cypriots, Lebanese Cypriots and Latin Cypriots....no one makes a claim to this dish. It's just Cypriot...Alexander and Armenians...if you really want to get technical the word sheftalia is actually Persian. One thing for sure it is from Cyprus along with halloumi cheese.

      All dishes originate from somewhere I as a Armenian make claim to this dish being from Armenia, as for you saying "no one makes a claim to this dish " what you have personally meet and spoken to every person on earth?? get real mate.
      Alexander began conquering the Persian empire in 334BC the Persian empire at that time ruled numerous peoples including Armenians, whom have been cooking ground meat with caul fat and adding in sheftalia long before he ( Alexander ) Come through those lands. and when his army with thousands of Chefs and slaves returned into the Mediterranean what you think they didn't bring new spices and recipes ?
      as you pointed out numerous cultures and nationality's influence Cypriot cooking so how can you say " Its just Cypriot " you are contradicting yourself!! you think every Cypriot dish ever made is 100% of Cypriot origin.
      Its a Persian word correct 1 we were ruled by Persians it makes sense to adopt there language and 2 so what its a ingredient Im not claiming all pomegranate comes from Armenia im saying the above dish originates from my ancestral homeland sure you can argue with me just like im sure someone will argue your point on Halloumi Chesse :D
      Next time you reply to a comment try actually not being condescending and arrogant you clearly have not studied history and you clearly dont have a open mind

    I wanna cry, reminds me of my life in Cyprus in the 80's ... I am willing to die 20 years earlier if I can get the chance to live those days for just 10 years. I will be eating Sheftaliaa for the entire time.

      It is also turkish cypriot dish. We use lamb and beef mince. Cyprus is 2 nationality greek and turkish cypriots. This food is belongs to cyprus.

      Turkish cypriots also eat pork as part of their regular diet. I knew a lot of TC's who only ate pork and no lamb because lamb was meat that the Turks ate so they found it low class... pork is high class and western lamb is eastern and muslim so TC's dont eat it
