I'm confused about the Noir Clash's head size. At 2:38 the cover lists the head size as 100 sq inches but at 2:43 the head size is listed as 101 sq inches -- which is correct?

There are multiple rackets in the series noir of different head sizes. The racket specs are typically 100 but at 2:43 they show a more precise measurement as per wilson.com.

Is it me or the clash doesn't have the same mat black finish than the 3 other ones ?

It's just you ;)
The only difference between the Noir Clash and the other Noir rackets, beyond the obvious, is that the Noir Clash doesn't feature the block lettering on the outside of the throat. Instead it has the embossed Clash Logo, like the one found on the standard and other special edition cosmetics.
