Amazing dish. This is truly authentic Hindu Indian dish from South India... In my opinion it is among the PERFECT DISH category in Hindu Indian cuisine NATIVE to India: Why? (1) minimally processed: all ings are used in almost natural form .The rice is soaked, hand ground & STEAMED, fresh coconut scraped by hand, oil used ONLy for tempering, spices bloomed for max.flavor. (2) Nutritionally balanced: rice soaked & ground before steaming, with fresh scraped coconut, fresh curry leaves, optimum (perfect) balance of macronutrients & in highly bioavailable form, fermenting the batter increases the probiotics, with the oil & coconut providing the satiety, lowers the glycemic index, & also closing the protein calorie deficit. (3) easily digestible for all ages & almost all ailments... with minor adjustment in seasoning (4) with a very small carbon footprint: soaking & grinding the rice & dal greatly reduces the cooking time. The fuel for the fire is only the dried leaves & twigs & wood that is picked from the ground... the dead leaves & wood, keeping the ground clean, no fossil fuels, minimal toxins released into the atmosphere... Not to mention the manual labor going into the entire preparation providing the resistance & calorie burn for keeping the muscles toned & the aerobic benefits... And the romance of alfresco eating in this case... What more do you want? The lemons were squeezed directly over the idiyappam (the noodles) releasing not only the lemon juice, but also the essential oils from the skin, & the squeezed lemons were dropped into the hot noodles for intense flavors .... I love this one...
Wow.that was quick... I appreciate your superfast response.I have been thinking of doing a blog for this topic... not my own recipes necessarily, but writing on my native recipes the are Hindu, Indian... from ALL OVER INDIA, preferably with NO FOREIGN INFLUENCE... very natural, very basic... very natural... VERY HINDU... as I said in the post you responded to. I hope you will give me your HONEST opinion on my concept,& also help me as I need it... I am clueless as to how to go about it... Also, can you please tell me if your second dish, the one with coconut & idyappam is sweet? It looked they added sugar toit. I am going to recreate these 2 dishes at home...& will keep you posted on how they were received...will doit when my grand daughters come in 6 months.
Can you please label each ingredient when it is poured in the pan/pot? It helps us viewers know what your cooking with. A one second duration label for each ingredient as its being poured into the pan/pot, would be wonderful for all of your videos.

What a beautiful video. The greatest happiness of the man among others is to eat like this of rich ... angeles to his service from Colombia. I love you so much.
Great video. Good thing you got everything done before the rain came. I hope the cooks got to eat too and that there was enough to go around. I hope the chickens got to eat the left-over coconut.
From the start to the end you can see labor they put into this food. Everything looks so well taken care of and delicious! I hope I can visit India one day
I'm russian and like cooking. On the one hand you are cooking unusual food for me, on the other hand i like this food very much. It looks tasty. Good luck!
Awesome food...This is interesting because, we have a similar fire pit in Ghana, West Africa called a 'Swish Oven'...It's made with red clay, shaped into three domes, with U shaped openings on each side to hold firewood, and another opening in front...The Ghanaian swish oven is steadier and also portable because, after molding, it's baked to set...Thanks for sharing your wonderful video. :)
MSE. Dzirasa I have always wanted to see videos of how food is prepared where you live. I've seen some food from there but not how it was cooked. If you know of links to videos, please tell me

my mom used to make fresh noodles from scratch just like this but in a different format since we are from Thailand, you wont believe the difference in taste and texture, you wont want to eat dry noodles from the store again.
I appreciate this video. I think it is fascinating watching simpler was of feeding our family. In this uncertain world and time, we never know when we will need to call upon such skills. Thank you very much for your informative video. I will subscribe and look forward to more.
We as a people are so spoiled by what we have and waste. Seeing how another people work so hard to cook a good meal from the most basic of ingredients is humbling and inspiring.
Love the video. Such simple to prepare we are so spoiled with all the instant food, just seeing the coconut milk being made from stratch. Would like the recipe. thank you
You ought to put the lemons in the noodle maker and squish them. Put a pan to catch the juice or the pan of noodles directly under the noodle maker. Lol
wow! this looks so nice..new recipe have learned today but where she mixes lemon and vegetables with the noodles using bare hand is a bit grossy though...but I enjoyed the whole cooking
I want a firepit like that in my backyard. I wanna cook like that. I suddently feel a deep disgust at the sort of food we have in grocery stores. This looks sooooooooooooo yummy? (Enthusiastic new subscriber!)
I particularly like the process of making noodles and noodle machine. All of us should use banana leaves or bamboo leaves or any other possible plant product in stead of plastic wraps and boxes. Can we have the recipes for noodle batter please?
That is an awesome process of making noodles. Again, really wish you'd list your ingredients and recipe in the videos or comments. All your cooking videos are intriguing and interesting. Makes me want to know more. LoL

After the coconut scrapping is squeezed very well of all the milk there is no taste left in the residue... its as good as saw dust so its better to discard it
In the village I grew up in, in South India, the left over coconut residue is fed to the cows. It is put in a bucket, and mixed with vegetable scrapings from the kitchen (discarded pieces of vegetables), and mixed with water used for rinsing rice and dhaal (nothing is wasted!), and the slurry fed to the cows. I have seen cows drinking or slurping the watery mixture with loud noise, salivating, and exhibiting great pleasure while consuming it. The cows probably find it very tasty! You just need natural clay...take the clay and press it in that shape..it's not a big deal
Well, in northern Quebec, that would be a big deal - finding clay, for instance. Still, I'll keep that in my book!
***** you can use earthen pitcher to cook food..that would be great and healthy if you can find one..
Actually clay or cow dung works too. In the above case its mix of clay and cow dung that dries quickly and acts as mould perhaps.
Maryse Flor
Would suggest building a little rocket stove. Should even be possible with the clay the current one is build with. But it will be much more efficient.
I particularly like the process of making noodles and noodle machine. All of us should use banana leaves or bamboo leaves or any other possible plant product in stead of plastic wraps and boxes. Can we have the recipes for noodle batter please?

Why do you discard the coconut milk solids into the dirt? That has food value. Otherwise, enjoyed your video.
After the coconut scrapping is squeezed very well of all the milk there is no taste left in the residue... its as good as saw dust so its better to discard it

wow cool invention.never thought of idli noodles look so good. 😛👍👍
Its not Idli. they only cooked the rice batter on Idli moulds. it's how rice noodles r made in South India.
+Tahira Safdar no longer problem. use bowls or steel tumblers to cook the dough. its just rice so its OK.
Tahira Safdar Not a prblm if no idli moulds u can slightly saute the ground rice flour(grind d rice with less water but batter shd b smooth u might have noticed bfr pouring hw thickness same consistentcy) very very low flame(add the batter bfr d pan gets heat) stir slightly the colr vil change from white to turbid immediately u transfer d flour from pan to another vessel
