It's amazing how much work goes into making noodles that people can just gobble down within minutes but takes hours to prepare. No wonder people in the old days could keep fit so easily and we didn't have so many obese people around. You eat in 200 calories but you exert like 1,000 calories to make your food.
This is an incredibly cool process to see. THank you for posting this. I can't imagine there are too many people who do this anymore (at least not by hand). It's truly humbling to watch.

I really, really enjoyed your video! Thank you for posting it. Very informative, elegantly edited, and entertaining. I heard or read somewhere that often the noodles are left to finish outdoors to absorb some of the fragrance of the ambient air. For instance, if one were to finish the noodles near the sea, imagine the saltiness and the smells of the sea.. I suppose one would need to be very "selective" about his choice of the place, so as to avoid any unpleasant aspects. Cheers!

is there any difference with wheat flour or all purpose flour?
All purpose has a medium amount of gluten. Bread flour is higher gluten. Pastry flour is low gluten. The flour they are using may have more gluten than bread flour. All purpose will probably not work like this.

Seems like a lot of production with this method. It's no spaghetti but it's still very productive and low tech. I like these people. Do all Chinese noodles get stretched? Western gets drawn thorough a hole, Chinese gets stretched, and Japanese gets cut. Amazing.
