    Great video, thanks! It's odd how some viewers are so squeamish about shrimp parts. Anybody who has every eaten a shrimp cracker should realize that those highly processed treats include not only shrimp meat, but also heads, eyes, brains, shells, legs, tails, and antennae. The food industry wastes nothing.

      You might not consider those viewers are white people? Shrimp crackers are Asian thing and we don't really care if those parts are included (we have things much worse), only white people are picky about what to include etc.

    Nice recipe. Here are some of the measurements in cups as I don't use metrics in the kitchen:
    1 cup (200g) small prawn
    ½ cup (100g) water
    1½ cup (300g) tapioca starch

      could also be done in a very low temp oven. I think mine would get eaten by birds very quickly if I put them outside :D Its also winter and raining a lot here in Australia atm.

      You need to use very low temperature, 60-80°C, using high temperature to dry/cook the chip and it will not expand. Dehydrator will work well.

      It won't taste spicy. It is for the red color mostly.

    Are you able to dry the slices in an oven? I don't get nearly enough sun to sun dry where I live 😭

      Dry it at 60°C-80°C, the oven is too hot and it will not puff up, use a food dehydrator.

      Tapioca flour is often sold as Arrowroot flour, otherwise potato flour or corn flour would be best. I think sago flour is likely to be far more difficult to find. In Australia we can buy tapioca flour, arrowroot flour here in the general shopping centres but it tends to be sold in fairly small quantities but we can always get it from Asian/Indian grocers in much larger quantities.

      The texture is very chewy, and quite difficult to slice. But it should not stick to the knife.

    Fish also more or less the same as prawn u need to add white pepper powder but steam a bit longer around 1 -1.5 hours

    Hi, I just want to let you know that I just tried making this prawn cracker.
    But I was confused why I can't get exact textures as yours after mixing the tapioca starch with the blended prawn.. my paste becomes hard 😩😩😩

      This recipe uses Tapioca (Cassava starch). You can replace it with sago flour, some flour/starch might not work or the cracker not expanding well.

      I use smaller shrimp and blend all heads and shells, you can remove that if you don't feel comfortable eating them.

    I don't mind the prawns whole but doing so has one significant downside and thats not shelling them means you aren't removing the poo tract from the prawn before blending them 🙄
