    Sticking the now steamed prawn sausage in the freezer for about 15 minutes to firm up but NOT freeze, could really help in slicing thinly, potentially working in the mandolin or food processor.

    These look absolutely yummy. Am pleased that you peeled the prawns first; have seen recipes where the whole prawn, heads, shells go into the mixture which doesn't appeal to me personally. Hello from Australia!

      then again, it probably makes them all the healthier, and potentially taste nicer but I have not tried either way as yet so I don't know how it would effect the final result. I am also from AUS, VIC, Ive just watched the latest Masterchef episode where they are after Crunch and given Hayden has made a curry, my thought went to prawn crackers as I don't like poppadoms. I did just realise one major downside of not peeling the prawns, you would have no way to remove the poo tract, one aspect you def do want to do!!

      @@OutragedPufferfish I'm the head CEO of Prawn Crackers Inc., n basically what I say goes. I order these prawn crackers to specifically include the shells and heads because they contain important nutrients such as vitamin D, B2 and hydroglucose.

    What oil do you use for the prawn crackers? Can you use butter? If so, would butter still be good?

      For frying them and other things?
      I used to use either extra virgin olive oil or coconut oil for frying most things. Lately, I've been using tallow a lot as I made quite a bit of it. Ghee is also good for frying, so, yes, butter, after you've clarified it works well for frying. Butter itself still has some moisture and milk solids that can burn if you use it for frying without clarifying.       Yes, of course! (Or a dehydrator) When using the oven, use your lowest heat setting and add the fan if you have that option!

    I have never had luck with making these after using numerous recipes. The rolls never seem to cook through whether boiled or steamed for up to an hour. Any suggestions?

      I'd say, make sure not to try to make rolls that are very fat. They won't be as large as the commercially sold prawn crackers, but should work much more easily. I steamed mine for quite a while too and then left them in there after the steaming was done. (I refilled the water several times throughout the process.)

      Until they are completely dry and hard (not flexible). The actual amount of time depends on the thickness, the dehydrator used, etc.

    If you constantly wet your knife like they do when cutting sushi rolls, it should be easier for you to slice.

    i tried in my home but its very sticky to cut
    i am using 1: 2 ratio prawn and sago flour
    how to make it as solid for cutting plz help me

      Try freezing it for just long enough to make it easier to cut- but not so long that it's frozen so solid that it's too hard to cut. 😏
      I haven't tried it myself yet, but I got that suggestion from a reader who said it worked for them!

      I don't think so. It would end up being totally different. It might be good too, but I have no idea if it would turn out well or not.
      Tapioca starch has a pretty characteristic texture when steamed, different from other starches.

    Can we use rice flour instead of tapioca?

      I don't think it would work. Tapioca starch has a very distinctive texture when cooked. You'd likely be able to make some sort of cracker with rice flour, but I'd think the texture and process would be different.

      @@gaanberong7137 Here, I can usually find it at Asian supermarkets and Latin American food stores (or in the international section of the local supermarket). I also can find it at health stores (as it's used a lot in gluten-free cooking and baking) and sometimes also buy online. It can also be called yuca flour or mandioca. I'm not sure if that helps, but just in case. 😏

      I'm not sure. I'd have to play with it to know for sure. You may be able to add some water to get a proper mixture without using as many prawns (and using more tapioca starch).

    I want to rate this video 4 stars out of 5, the demonstration and listing of ingredients is great but you offer no quantities nor cooking times which makes it rather difficult, yes the recipe might be in the description and I will look in a moment but it would be much better if they were included in the video itself. WOW, ok I have just looked at the recipe, you would have no idea from this video that the prawn sausage required steaming for 1 hour! Popular in Asian restaurants in Europe.....they are very popular in Australia too.

      Potato flour, you may know Tapioca flour as Arrowroot flour as its often sold as the same thing.

      Some people have suggested freezing for a short time before slicing to get a thinner slice. (Otherwise, yes, it can be rubbery and difficult to cut.)
