For frying them and other things? I used to use either extra virgin olive oil or coconut oil for frying most things. Lately, I've been using tallow a lot as I made quite a bit of it. Ghee is also good for frying, so, yes, butter, after you've clarified it works well for frying. Butter itself still has some moisture and milk solids that can burn if you use it for frying without clarifying. I have never had luck with making these after using numerous recipes. The rolls never seem to cook through whether boiled or steamed for up to an hour. Any suggestions?
I'd say, make sure not to try to make rolls that are very fat. They won't be as large as the commercially sold prawn crackers, but should work much more easily. I steamed mine for quite a while too and then left them in there after the steaming was done. (I refilled the water several times throughout the process.)

I don't think it would work. Tapioca starch has a very distinctive texture when cooked. You'd likely be able to make some sort of cracker with rice flour, but I'd think the texture and process would be different.

I also can find it at health stores (as it's used a lot in gluten-free cooking and baking) and sometimes also buy online. It can also be called yuca flour or mandioca. Until they are completely dry and hard (not flexible). The actual amount of time depends on the thickness, the dehydrator used, etc.

Potato flour, you may know Tapioca flour as Arrowroot flour as its often sold as the same thing.

Some people have suggested freezing for a short time before slicing to get a thinner slice. (Otherwise, yes, it can be rubbery and difficult to cut.)
