This is an interesting recipe, I would experiment to make a vegan version, even if it doesn't taste like shrimp I'm sure there are spices and veggies that can make this snack just as tasty. I had tried these a long time ago but it was a store bought version, my grandmother used to fry them. I never knew how they were really made though, pretty interesting!
Indonesian called this prawn cracker as kerupuk udang There's so many type of cracker from Indonesia as it's origin For vegan I recommend rempeyek Rempeyek, coated by crispy rice flour, has three varieties; ebi, dried anchovies, or peanuts I personally favor the common peanuts rempeyek

can we use corn starch if we don't have tapioca starch?
It won't turns out the same coz tapioca has stickiness that corn starch doesn't have.
