Two things. First from watching Food Network I've learned it's basically mandatory to try the food and let people know how it tastes. I also love that you are honest about it Second I've made a bean salad similar to the one Crystal made only added diced bell peppers, onions, frozen corn, and chopped kale and ate it with tortilla chips and she's right it does work great that way, I've heard it called "Texas Caviar"

I have been without frozen bananas when I was looking to make a smoothie & found a great substitute. I like to have steamed sweet potatoes I keep in the refrigerator to have ready to go. I used 1/2 one in place of the banana. It was fabulous! Very creamy, smooth & sweet. I left the peel on it blended with no problem. Steamed but very cold sweet potato, maybe give that a try at least once
Interesting you mentioned that. I was just googling whether you could put sweet potato in a smoothie the other day because someone gave me three large sweet potatoes and I was trying to figure out what I could do with them. Thanks for the validation!

I just started using the stems when I have big leafy greens -- such as kale, collards, chard, etc. -- that will be going into whatever it is I'm making at the time. If you look at those stems, they look and feel a lot like celery, perhaps a bit harder. So here's what I do: I remove the leaves and chop them to whatever preference I'm in the mood for. With the stems, I bunch them together like green onions, and then I very finely dice, or dice as small as I can get them. I then cook them like I would celery; they're great in stews and casseroles. I love that I'm not wasting any of the plant.
For the chard stems I cut them up into 2 inch pieces and add them to my veggie scraps freezer bag to make homemade veggie stock. Also tell us more about that beautiful sauerkraut you made and how to make it. Everything is so colorful and looks amazing. Love your content and I've been watching and subscribed for years. Keep showing the cats too!

You mentioned not having frozen banana. You know, I use frozen zucchini chunks and that really makes my smoothies super creamy. And, no, you don't really taste them. Oh, and also frozen avocado chunks work well, too! But it's also a great way to cut the sugar, if you're into that. And a great way to get in more veg! And, Derek, your dinner was definitely one of your better ones! (And they're all gorgeous!) But I really loved the way you just do little bits of things to add variety, texture, and flavour. Came here to say this! I keep all my veggie scraps for broth. Kale stems, herb stems, carrot peels, onion and garlic skins, celery leaves, mushroom stems that are too tough, whatever!! I reuse an old bread bag and just fill it up with these scraps in the freezer. When it's full, I make broth!

Have your health care provider test you for Ulnar Elbow Entrapment. Don't let them confuse it with carpal tunnel, and tennis elbow they are very different from UEE. You have to have a nerve conduction test to diagnose UEE correctly. Good luck my friend.

The BEST part is the tasting after the cooking....we are waiting for the reaction!! My (Ukrainian) family freezes those gorgeous beet greens (just wash whole and put in an air tight storage container) if there are too many to eat when fresh. Then we stuff them with rice, sautéed onion and seasonings - salt, pepper, dill. Top with a bit of oil, vegan butter, or cream replacement (oat milk) and bake until the greens are soft and rice is heated through...delicious!!
For the beet stems: you can pickle them, add to soups, or sauté them with the greens. Great video, I enjoyed your positive energy & how you incorporate getting into nature.

Man, you topped off that killer day with the ultimate flex -- no beet-slicing spray-back 🙌🏼💪🏼 I often make a similar thing to Crystal's bean salad, but I just do a can/two of beans, a jar of drained salsa (liquid reserved), and some tvp (that I rehydrate using the salsa liquid + more liquid/seasoning as needed); I usually top it with furikake & nutritional yeast. I appreciate your immediate food commentary! I always use my beet stems & greens. For the stems, I either chop them or cut them into matchsticks. From there, I can freeze them, sauté them (usually with fresh ginger and juice from an orange -- I think orange juice is the best citrus pairing for beets), or I roast them with some garlic & salt. You never show it, but I really hope you and Crystal wear/reapply sunscreen! (No amount of healthy diet can fully counter the damage that UV rays do to your skin.)

I often make a similar thing to Crystal's bean salad, but I just do a can/two of beans, a jar of drained salsa (liquid reserved), and some tvp (that I rehydrate using the salsa liquid + more liquid/seasoning as needed); I usually top it with furikake & nutritional yeast.

I always use my beet stems & greens. For the stems, I either chop them or cut them into matchsticks. From there, I can freeze them, sauté them (usually with fresh ginger and juice from an orange -- I think orange juice is the best citrus pairing for beets), or I roast them with some garlic & salt.
You never show it, but I really hope you and Crystal wear/reapply sunscreen! (No amount of healthy diet can fully counter the damage that UV rays do to your skin.)

(Add ice to your smoothie bowl for more thickness and coolness when you're out of frozen bananas)- I love the sweet potato/yam idea someone commented and they come with white flesh too- Yummy colorful food. I'd love to see a lot MORE fresh summer juicy hydrating fruits though! *And eating all or higher raw might heal/recover your elbow faster. Hope it heals up completely for you!
Next time try tossing those beet stems in a smoothie. I like to use the beet greens and stems in smoothies with beets, bananas, and berries. So good!
