What Cara Brotman Eats in a Day IV Raw Vegan Food Recipes

  • The much requested video everyone's been asking for- What Cara eats in a day as a raw food female in her 50s who works out at the gym and has a very active life.
    Natto Cara uses
    www.amazon.com...
    Peeler used to make noodles
    www.amazon.com...
    Here are the basic recipes
    "Cheese" (CREAM)
    1 1/2 cups walnuts
    1/2 cup pumpkin seeds
    1/.4 cup sunflower seeds
    1 1/4 cup water
    Place everything in blender and blend on high till smooth.
    ZUCCHINA PASTA
    Zucchini cut strips - 2 cups
    3 Tablespoons Cream
    mushroom- 1/2 cup (I like crimini but that's just my preference) cut in 4 pieces
    broccoli - 1/2 cup in quarter size pieces
    red pepper - 1/2 cup - in quarter size pieces
    onion - 1/2 cup chopped
    parsley or cilantro - 2 Tablespoons minced
    1/2 teaspoon pepper
    Pinch habanero (optional)
    nutritional yeast - 1 - 2 Tablespoons
    Toss veggies in enough olive oil to coat everything
    Dehydrate at 120 to 140 for a few hours or until soft but not wilted. If wilted they dehydrated too long.
    minced ginger- 3 Tablespoons
    1-2 Tablespoons tamari
    To large bowl add zucchini pasta and cream and mix well to coat
    Add remaining ingredients except for pepper and nutritional yeast and gently combine. Top with pepper and nutritional yeast
    SAVORY SALAD
    2 kale leaves sliced
    half a collard green sliced
    handful of other healthy green
    Cream 3 tablespoons or more depending on personal texture
    Massage cream into greens and top with...
    Quartered tomatoes
    sliced onion
    3/4th of an avocado or more
    red pepper
    Anything else you may prefer in salad
    Drizzle with olive oil, lemon juice and apple cider vinegar
    Top with salt and nutritional yeast and finely minced horseradish root, thumb of finely minced ginger, quarter teaspoon of your favorite hot pepper and a couple garlic cloves minced
    Enjoy with buckwheat crackers crinkled on top
    FRUIT SALAD
    1 large dollop of cream
    1/2 cup blueberries
    1/2 cup raspberries
    1/2 cup blackberries
    3 strawberries sliced
    1/4th of a green apple, chopped or sliced
    1/2 banana sliced
    Splash of kombucha (optional) or nut mylk
    mint
    1 teaspoon bee pollen
    1 - 2 teaspoons powdered flax seeds
    1 teaspoon hemp seeds
    mint
    To a bowl add a large dollop of cream followed by remaining fruit. Fold or stir to coat fruit with cream. Top with nut mylk or kombucha, bee pollen, flax powder and hemp seeds. Add a few leaves of torn mint and lastly cracked up pieces of buckwheat.
    BUCKWHEAT CRACKERS
    2 -3 cups peeled and chopped zucchini, apple or onion
    1 heaping teaspoon nut butter ( we use almond or cashew)
    2 1/2 cups soaked buckwheat (sprouted optional)
    Splash of olive oil
    Add all ingredients to the blender in order listed and blend on high until smooth and creamy. If too thick pop in a bit more zucchini, apple or onion. Some people like the crackers thin some like it thick. Add amount of veggies according to your preference of thick or thin crackers.
    Pour out onto a solid dehydrator sheet and spread evenly with offset spatula. This is where you create thin or thick crackers. Spread thinly for thin and thick for thicker crackers. Place in dehydrator on 120 - 140 for a few hours or until you can peel sheet off buckwheat without it sticking.
    Score into however many crackers you want. we usually do 9 or 12. Put back in dehydrator overnight or until crispy.
    You can either leave them out on a plate on counter like Iwe do, or we leave them in the dehydrator in the off position until I need them or some people prefer storing them in a plastic bag.
    GREEN JUICE
    3 handfuls of dandelion greens
    1 or 2 lemons
    1/2 red pepper
    half a bunch of asparagus
    couple chunks of red cabbage
    broccoli heads
    2 collard green leaves
    1 thumb of ginger
    And a couple of green apples to mellow out above flavors
    SMOOTHIE
    3/4 cup coconut water or homemade nut mylk
    1/2 cup fresh pineapple
    1-2 scoops Protein Powder
    1 frozen banana
    1/2 cup frozen cranberries or blueberries
    1 kale leaf
    1 Tablespoon pumpkin seeds
    1 tablespoon hemp seeds
    1 Tablespoon bee pollen
    1 teaspoon Udo's Oil with DHA
    Add all ingredients to the blender in order listed and blend on high until smooth and creamy.

      @@Tania-rg7jp No I USED to not eat much. I eat a LOT now! Sunday's date night. I ate a dinner at a restaurant, came home and finished my salad I made pre-restaurant after throwing my daily Nato on top of it. An hour later I finished my fruit salad with buckwheat crackers. I think Im finished for the night and look forward to my first meal of the day tomorrow! :))

      Indeed, the weight training is important at certain age in life when we start losing the muscles and at risk of osteoporosis. The weight bearing exercises is the only way to counteract this.

    I hope more people find you both. I have been vegan since 2017 (Im 32) and within this last year I have transitioned to 95% raw. Your recipes are so well though out, gourmet, fresh, and inspiring. It is confirming to see the use of similar products and produce I use and also see in your kitchen like sea moss, Celtic sea salt, nuts, seeds, organic fruit etc... I also find myself aligned to the same thought patterns in which you speak and teach others! i.e. minimizing plastics, the electrical properties of the food, the mental clarity from raw whole foods, etc.. You have inspired a whole new set of recipes in my kitchen! I make your buckwheat crackers, falafel, cheeses, and salads weekly!! Im practically on an entirely Markus and Cara diet!!     You need people in this world who have a passion for food, especially vegetables. Cara, you have helped me see the potential of food. I grew up with a scoop of mashed potatoes and a scoop of cooked corn for dinner as a way to get veggies in. I never was a lover of the Veg, but I am now. Your recipes take the daily recommendations to the next level and actually get one excited about eating in a way that is so good for the body. I'm hungry!

    Being Italian, garlic is a daily staple LOL pumpkin seeds replaced croutons on salads. Walnuts in smoothies 😊

      Absolutely! My father was an Italian restauranteur and he had me chopping garlic at home as a child. I loved the flavor then and I love it now. I used a lot of garlic making my sons food when he was little, and now he uses it on his meals daily as well! Teach your children well! ;))

    Honestly I’m constantly amazed by your digestion capabilities. I’ve been raw vegan consistently for most of the last 5 years, but my digestion can often not handle large amounts of nuts, seeds, sprouted grains and legumes, or raw cruciferous vegetables, without significant digestive discomfort. I am coming from a serious intestinal health issue that has been greatly remedied by a fruit and juice based diet, with tender vegetables. I consume tons of aqua kefir, kimchi, coconut yogurt, miso, plenty of natural probiotics and prebiotics for years. I believe that people can cultivate digestive tracts that can handle these types of fibers, but in my experience the digestive discomfort has never left. Freezing and thawing the veggies and sprouted beans does help, as does tenderizing them with salt, acid and oil. For me my digestion is only great if it’s based on fruit, otherwise I’m just in knots!

    I love it that you have evolved your eating plans. I remember it was just an huge salad with a long window of intermittent fasting. I love pumpkins and sunflower seeds in a banana smoothie with flax. I have not tried it as a cheese, but will. Thank you 🙏

    I'm going to do this because I know it's healthy for me and my family. It's a new whole food approach... I am a meat eater... but I'm going to incorporate many of your recipes into my diet because I know it's healthy. But, I'm not used to eating bland food so I'll find a way to spice it up. I'm definitely going to, take your advice and start incorporating some of these natural healthy foods into my daily eating plan but as side dishes. There are so many great tasting traditional and healthy recipes in my culture and heritage so your recipes will be a great compliment.

    thanks so much cara, i am in my 70's I have been trying raw food for 7 years. but I never found tha I eat enough food, it have been mosly salads, thats keeping me to back and forth. now I am going to eat like you, I like your recipes, they are healthy and rich in nutrients. I will go shopping and start to do them tomorrow , I am sure these raw food recipe will also help me beat my diabetes.
