    Hi Khoan,
I wish i lived near your place as i would be living off your food. You make it look effortless and that shows your skill.

I live in Japan and the Chinese food here is just as "Japanised" as is it "Westernised" in England. I really miss chow mein dishes and you've helped me to be able to recreate them (in a somewhat lesser capacity) at home. Thanks. I like gravy with my chow mein dishes, with this would I just add a bit of water with a potato-starch slurry to make a gravy? Thank you for sharing your recipes and thanks for your time.

Yes. In UK some takeaway cook wet version of chow mien, like you said they add water and thicken it with potato starch.

Looks very nice. What is the wine you use? With it being clear is it rice wine vinegar?

I am currently using rice wine for cooking.

Amazon do large and half size boxes. Not as cheap as my Asian supermarket, but by the time I add my travel expenses they're not too badly priced

You're not as skilled as other Chinese wok chefs i have seen on RUclips. Looks very tasty though

As I tell folks that cook on a wok. The customer doesn't see you cook the dish. So your wok "skill" is a bit irrelevant. It's all about the end result
