I worked as a caregiver some years ago. One of my most memerable client was a Filipino lady who introduced me to this dish. She gave me her recipe. I shared that chicken with an old Pennsylvania Dutch client who said, ‘it is the Best chicken I’ve ever had!’ He was 103 years old. I had to agree with him.
I was so relieved when you said, “Some more garlic…” Can’t have enough garlic in adobo. And you didn’t forget to serve it with steamed rice either. Well done!
Theres so many ways and version of adobo. Theres even one call White Adobo, minus the Soy Sauce, since it wasn't available till later. All are good however it's prepared. Good job.
I applaud you for doing a nearly authentic version of chicken adobo. Thanks for sharing a dish from my heritage! I also appreciate that you made a distinction between Filipino adobo and Mexican adobo. Cheers!
Filipina here based in San Diego, CA. Thank you for featuring our native dish . Looks yummy and you show how simple it is to cook chicken adobo. My Nanay ( Filipino for Mum) , cooks her adobo the same way, minus onions, just pleanty of garlic and whole black pepper, and it’s soooo delicious ! I will try putting onions next time I make adobo to taste the difference 🥰. Happy New year.
Another delicious recipe Darren ! Such a pleasure to know that you cooked for my favourite Royal the Queen RIP. Happy Christmas from Trentham Victoria Australia !
As a Southern American, this is the top 3 in comfort food for me (outside of American cuisine). Another dish I was surprised by was Indian, Moringa Drumstick with tomatoes was way better than our native Southern Okra and tomatoes.
Yes lots of garlic I'm a Filipino too and garnishing with green onions makes it complete, sometimes we cut some tomatoes and or cucumbers and place it on the side of the place.God bless you chef
You're a man after my own Filipino heart, Chef Darren. That is how I cook it also minus the onions. The onion part is an Indian influence on the adobo. That looks delish!❤😊
Chicken Adobo is a Comfort Food... you can just cook it and put it the refrigerator then reheat when your gonna eat again... you can make it slightly sour or sweet -or spicy or salty or even garlicky and Kudos for Chef Darren ...
Very well done! As a Filipino, this is legit and has my seal of approval 👌 The marination, plenty of garlic, vinegar and added sugar (to balance out the saltiness from the soy sauce), well executed! An inexpensive and easy to cook dish. Definitely much more flavoursome than just grilled chicken.
I am a Filipino , this is also one of my favorite Filipino food, im so glad for featuring our very own unique recipe of chicken adobo, thank you so much
Only video of foreigner chef making adobo that got me impressed. His method and recipe was all on point! Thank you chef for making the adobo simple and delicious ❤
Looks awesome thanks! Gonna make it this weekend for my 3 year old, it's cheap and looks delicious and I've always wanted to try it so here goes! Thank you
Your channel has quickly become one of my favorite RUclips channels, Darren. In fact, I made banana cheesecake yesterday, bananas from my farm, and I used apricot jelly to brush the layered sliced bananas on top. It's beautiful. Tonight It's dessert at my company Christmas party. Merry Christmas from St John Bananas, US Virgin Islands.
I once tried chicken Adobo in a meal kit and found it too sweet for my liking. Hearing all the influences and the history of this dish I came going to try this. I suspect your recipe will be much more tasty. Thank you.
There are at least a hundred ways in making adobo, and you can adjust it accordingly. If you don’t like sweet, you can remove the sugar, the honey, or the pineapple juice or sprite (yes, they make use of these in several versions). If you don’t want it too salty, remove the soy sauce (then it turns into adobong puti). Some may add coconut milk (adobo sa gata). You can ise whatever meat you have. Chicken, pork, beef, lamb, goat, horse, squid, alligator (yes, I’ve tried some!), kangaroo, camel… any meats or even just veggies only! But one thing will never be gone that is the most important ingredient: vinegar. Doesn’t matter which kind of vinegar, (but they would taste slightly different, depends on the variation).
@@lestatlouis47yui Good to know - thanks. Although I prefer savoury I feel like sweet is one component in this dish. I guess I can always try to find a balance for my liking.
Thank you for featuring this dish. Also you exactly know the history of adobo it's very simple not too expensive but delicious compare to other chicken dishes.
Type of soy sauce and vinegar will make a big difference in taste. We use cane vinegar, not the chemical white vinegar, and locally made soy sauce, not "kikoman"😊
The type of soy sauce of vinegar doesn't matter. You can use any. Actually the oldest recioe use vinegar and salt, no soy sauce. There is so many variation of adobo and the dish is really up to your preference.
the good thing about this dish is that there is so much variants that you cant really claim if it's authentic or not. Also you can mix and swap ingredients and you'd probably hit a regional or even family variant easily
Hi Darren! Your adobo is authentic though we Filipinos have different versions. My Aussie partner actually loves Lamb adobo, you should try it. So delicious!
Darren we ordered the Christmas dinner and picked it up in Dallas. It was delicious. The turkey, ham, gravy, and the pineapple relish were fantastic. I will be ordering again and let my friends know. Thank you!!!
I have made this many times. Its fantastic and very easy. One of my favourite Chicken dishes from the Philippines is Chicken Rellenong which is a stuffed chicken dish. So good!
Hello Darren! My adobo is just putting all ingredients in a pot (whole chicken, 1-2 cups olive oil, lots of garlic, lots of rosemary, kosher salt around 1-2 spoon full) cooked low and slow for 2 hours, then before serving i put a cup of vinegar put on high heat for 5 to 15 mins to cook the vinegar, hope you can try my lazy adobo! (I call it adobo but others say its not even if they like it a lot haha, it is still filipino adobo because it evolved and adapted - i didnt have bay leaves and soy sauce when i craved for adobo and wanted it to be healthier😂 and now more than ever rosemary and olive oil are so common and so available in the Philippines) cheers!
For sure its good Chef! ❤ My adobo version is I mix chicken with pork and chicken liver the marinating ingredients are perfect! ❤️ Another version is I call it Dried chicken and pork adobo I only use vinegar, bay leaf, garlic, ground pepper, salt minus the soy sauce😊 simple as that too😊...
Hello proud that you cook our favorite viand. I am from the Philippines. For now we cook for.extenders, we put potatoes and boiled eggs. Let's enjoy cooking
You nailed it my friend. As a Filipino I was so proud you respected our beloved recipe (meaning no BS). But let me suggest, try it without sugar.(it's actually optipnal)... (try it without soy sauce too.. it's heavenly)
I got my adobo recipe from my Filipino mother. I don't put onion or brown sugar in it, but I add peppercorns. I also don't marinade it and just mix it all in the pot after browning the chicken and let it all cook together in the pot. There are so many variants of adobo. I tried a southern Philippines version with coconut milk, and it was good as well.
Great !!! do you want to share your version ?
Can you give us the recipe
So happy that he got to eat our Pinoy adobo in his late years❤
I was so relieved when you said, “Some more garlic…” Can’t have enough garlic in adobo. And you didn’t forget to serve it with steamed rice either. Well done!
This is the most legit version of filipino adobo cooked by a foreigner. And it looks really delicious too.
Matty Matheson is the most spot on
Matty Matheson's and Andy Cooks make the most faithful. This is not offensive but not quite there.
Most CHEF do the dish with respect atleast for first time they cook d dish
Nice,, a legit Filipino adobo version by a foreigner... The recipe was correct and no extra fancy herbs were added.... Great video
Theres so many ways and version of adobo. Theres even one call White Adobo, minus the Soy Sauce, since it wasn't available till later. All are good however it's prepared. Good job.
there is no "authentic" adobo recipe, PH is so diverse that each household and region got their own version...
Hi, Darren. I am also a Filipino and thank you so much for featuring this dish and for honoring our heritage. It means a lot to us Filipinos❤
It really looks delicious!
I love Filipinos! Hi from San Francisco!!
@donlitos hii there
Agree! Salamat po!
Thanks Darren! I am Filipino ..we cooked adobo exactly as you did.🥰
This has got to be the most simple and clearly explained recipe for chicken adobo.
Not simple. The simplest is to dump everything inside make it cook and come back to eat it. No marinating no complicated steps.
this adobo is exactly how Filipinos cook it. Well done chef for keeping it authentic!
Adobo has no real recipe, there are so many variants.
Nope..
Mali ka dyan. Hindi naman nilalagyan ng green onions ang adobo.
not with the onions it's not
far from
This is the 1,200th way to cook Filipino adobo!! Thank you for featuring this, Chef Darren! ❤
Truly!! So many ways to cook, all super yummy!!!
I applaud you for doing a nearly authentic version of chicken adobo. Thanks for sharing a dish from my heritage! I also appreciate that you made a distinction between Filipino adobo and Mexican adobo. Cheers!
I love this dish. I'm married to a Filipino. And while pregnant, this was the dish I carved. Still my favorite today even.
Chicken and Pork Adobo with white rice always takes me back home no matter where i am in the world ❤❤❤
Filipina here based in San Diego, CA. Thank you for featuring our native dish . Looks yummy and you show how simple it is to cook chicken adobo. I’m a Filipino so happy to se my favorite food
As a Southern American, this is the top 3 in comfort food for me (outside of American cuisine). Another dish I was surprised by was Indian, Moringa Drumstick with tomatoes was way better than our native Southern Okra and tomatoes.
I am definitely making this.
That looks delish!❤😊
only a few foreign chefs really tap into filipino food, so recognizing our cuisine and cooking a filipino dish is such a beautiful crossover
Chicken Adobo is a Comfort Food... you can just cook it and put it the refrigerator then reheat when your gonna eat again... you can make it slightly sour or sweet -or spicy or salty or even garlicky and Kudos for Chef Darren ...
I'm so glad to see that you are making more shows 🙌!

Ohhhhh this looks so yummy!! Thank you so much for sharing. Merry Christmas to you and yours. xo
I LOVE adobo chicken! Thank younfir making it authentic as my Filipino friends taught me❤🇨🇦
Nice recipe, Darren! (You had me at "more garlic")
I once tried chicken Adobo in a meal kit and found it too sweet for my liking. Hearing all the influences and the history of this dish I came going to try this. I suspect your recipe will be much more tasty. Thank you.
It shouldn't be sweet. If sugar is used, it's only because the cook added too much vinegar and needed a bit to rebalance the flavor.
There are at least a hundred ways in making adobo, and you can adjust it accordingly. If you don’t like sweet, you can remove the sugar, the honey, or the pineapple juice or sprite (yes, they make use of these in several versions). Another great recipe, Darren. Looks delicious. Looks easy to make.. Will give it a go after Christmas.
My favorite is the Filipino version too. I have a friend from Manila who often makes this for me, so good.
My favorite dish too. Yours looks so invitingly delicious and perfect with steamed rice or better garlic rice. Thanks.
I know not to watch your videos when I'm hungry! I will be trying this!❤
Darren you are just the best! Can’t wait to try this! 😊
Type of soy sauce and vinegar will make a big difference in taste. We use cane vinegar, not the chemical white vinegar, and locally made soy sauce, not "kikoman"😊
Thank you! This was my question!
Yes. Use Siver Swan or Marca Piña brands...
The type of soy sauce of vinegar doesn't matter. You can use any. Actually the oldest recioe use vinegar and salt, no soy sauce. There is so many variation of adobo and the dish is really up to your preference.
@911reymond wrong...
the normal datu puti, silver swan, and marca piña are all chemical white vinegars too.
the good thing about this dish is that there is so much variants that you cant really claim if it's authentic or not. Also you can mix and swap ingredients and you'd probably hit a regional or even family variant easily
So good to see you again Darren! Thank you sir.
Hi Darren, you got it right👍♥️, and it's even tastier the day after you cooked it😋

For now we cook for.extenders, we put potatoes and boiled eggs. Let's enjoy cooking
Looks so yummy! Perfectly executed. 👏👏👏
Way to go! I put chicken livers on mine and throw in some potatoes ! Very delicious indeed.
Same! Livers make it good. Gizzards and potatoes too. I actually add mushrooms too for extra volume… and hard boiled egg for extra protein
That looks very yummy - you should post more often. What’s not to like in this dish??
the whole ass pepper corn. So glad chef didn't add it.
You nailed it my friend. As a Filipino I was so proud you respected our beloved recipe (meaning no BS). But let me suggest, try it without sugar.(it's actually optipnal)... (try it without soy sauce too.. it's heavenly)
