    I worked as a caregiver some years ago. One of my most memerable client was a Filipino lady who introduced me to this dish. She gave me her recipe. I shared that chicken with an old Pennsylvania Dutch client who said, ‘it is the Best chicken I’ve ever had!’ He was 103 years old. I had to agree with him.

      Theres so many ways and version of adobo. Theres even one call White Adobo, minus the Soy Sauce, since it wasn't available till later. All are good however it's prepared. Good job.

      Not simple. The simplest is to dump everything inside make it cook and come back to eat it. No marinating no complicated steps.

    Filipina here based in San Diego, CA. Thank you for featuring our native dish . Looks yummy and you show how simple it is to cook chicken adobo. My Nanay ( Filipino for Mum) , cooks her adobo the same way, minus onions, just pleanty of garlic and whole black pepper, and it’s soooo delicious ! I will try putting onions next time I make adobo to taste the difference 🥰.

      As a Southern American, this is the top 3 in comfort food for me (outside of American cuisine). Another dish I was surprised by was Indian, Moringa Drumstick with tomatoes was way better than our native Southern Okra and tomatoes.

    Yes lots of garlic I'm a Filipino too and garnishing with green onions makes it complete, sometimes we cut some tomatoes and or cucumbers and place it on the side of the place.God bless you chef

    Chicken Adobo is a Comfort Food... you can just cook it and put it the refrigerator then reheat when your gonna eat again... you can make it slightly sour or sweet -or spicy or salty or even garlicky and Kudos for Chef Darren ...

    Very well done! As a Filipino, this is legit and has my seal of approval 👌 The marination, plenty of garlic, vinegar and added sugar (to balance out the saltiness from the soy sauce), well executed! An inexpensive and easy to cook dish. Definitely much more flavoursome than just grilled chicken.

    I once tried chicken Adobo in a meal kit and found it too sweet for my liking. Hearing all the influences and the history of this dish I came going to try this. I suspect your recipe will be much more tasty. Thank you.

      It shouldn't be sweet. If sugar is used, it's only because the cook added too much vinegar and needed a bit to rebalance the flavor.

      There are at least a hundred ways in making adobo, and you can adjust it accordingly. If you don’t like sweet, you can remove the sugar, the honey, or the pineapple juice or sprite (yes, they make use of these in several versions). If you don’t want it too salty, remove the soy sauce (then it turns into adobong puti).
      Some may add coconut milk (adobo sa gata). You can ise whatever meat you have. Chicken, pork, beef, lamb, goat, horse, squid, alligator (yes, I’ve tried some!), kangaroo, camel… any meats or even just veggies only! But one thing will never be gone that is the most important ingredient: vinegar. Doesn’t matter which kind of vinegar, (but they would taste slightly different, depends on the variation).

    Type of soy sauce and vinegar will make a big difference in taste. We use cane vinegar, not the chemical white vinegar, and locally made soy sauce, not "kikoman"😊

      Yes. Use Siver Swan or Marca Piña brands...

      The type of soy sauce of vinegar doesn't matter. You can use any. Actually the oldest recioe use vinegar and salt, no soy sauce. There is so many variation of adobo and the dish is really up to your preference.

      the normal datu puti, silver swan, and marca piña are all chemical white vinegars too.

    the good thing about this dish is that there is so much variants that you cant really claim if it's authentic or not. Also you can mix and swap ingredients and you'd probably hit a regional or even family variant easily

    Hi Darren! Your adobo is authentic though we Filipinos have different versions. My Aussie partner actually loves Lamb adobo, you should try it. So delicious!

    I have made this many times. Its fantastic and very easy.
    One of my favourite Chicken dishes from the Philippines is Chicken Rellenong which is a stuffed chicken dish. So good!

    Hello Darren! My adobo is just putting all ingredients in a pot (whole chicken, 1-2 cups olive oil, lots of garlic, lots of rosemary, kosher salt around 1-2 spoon full) cooked low and slow for 2 hours, then before serving i put a cup of vinegar put on high heat for 5 to 15 mins to cook the vinegar, hope you can try my lazy adobo! (I call it adobo but others say its not even if they like it a lot haha, it is still filipino adobo because it evolved and adapted - i didnt have bay leaves and soy sauce when i craved for adobo and wanted it to be healthier😂 and now more than ever rosemary and olive oil are so common and so available in the Philippines) cheers!

    For sure its good Chef! ❤ My adobo version is I mix chicken with pork and chicken liver the marinating ingredients are perfect! ❤️ Another version is I call it Dried chicken and pork adobo I only use vinegar, bay leaf, garlic, ground pepper, salt minus the soy sauce😊 simple as that too😊...

      Same! Livers make it good. Gizzards and potatoes too. I actually add mushrooms too for extra volume… and hard boiled egg for extra protein

    I got my adobo recipe from my Filipino mother. I don't put onion or brown sugar in it, but I add peppercorns. I also don't marinade it and just mix it all in the pot after browning the chicken and let it all cook together in the pot. There are so many variants of adobo. I tried a southern Philippines version with coconut milk, and it was good as well.
