Your a genius for getting that book and doing the recipes on RUclips! If you were around when I would try to play N64 revenge at my grandmas house, I think this would of helped her be ok with my cousin and I building a ring on the side yard.

A good way to spice up this dish:
Drain the juice of the tomato and reserve it. Just mix tomatoes with the Cilantro, but also add the sliced olives as well. Continue the recipe as suggested, but double the recommended amount of cheese. Cook as ordered. Meanwhile, take the tomato juice and add it to a pan with a bit more cilantro, add some red/white/yellow/fuckingpickyourfavoriteonion, some garlic, Mexican Oregano, Salt, Pepper and a Dash (or ten, or twenty or the whole bottle if you're feeling REALLY courageous) and bring to a boil. Then, reduce to simmer. Let it simmer while the Casserole cooks. Just as the Casserole is about to be done (last two or so minutes), add the recommended sour cream to the sauce/liquid in your pan, mix vigorously and ensure it heats through. Once the casserole is done, pour the reduced sauce onto it then finish with a pinch or two of salt.
Serve and enjoy.

After mixing the tomatoes and cilantro in the food processor, I would cook it with some minced meat and maybe add a bit of pepper (not the dog!) or some other spices before making the casserole!
since it's a Latin dish, you should have added some adobo to it, that adds a great amount of flavor to the dish. but this dish has great potential and if you tweak it a tiny bit, it can be great just like the man who has his name on it. and yes, I took a cooking class in high school and one of my favorite television shows is Good Eats.

Of course it's plain. I'm from El Paso and nobody here would use stewed tomatoes in enchiladas. We would use red or green chili sauce. They're much better that way.

I bought the cookbook
Too much to say for just chilaquiles rojos, which is salsa with fried sliced tortillas with sour cream, pretty much any cheese that can be added on and maybe beef or chicken. They are called either rojos (red) or verdes (green) depending on the tomato used for the salsa.
Not to talk down Eddie, but the canned tomatoes with chiles like Rotella sells would be much better. maybe a little hot pepper sauce in the mix for zing, and a layer of cilantro (under the cheese) in each Tortilla. Zane-Dog had it right with the meat though. A little sauteed chorizo would make this better (and Mexican as Eff). That's how'd i'd make it

+PS3TNA157 They made a book on BBQ grilling recipes from JR shortly after this book came out, but I'm not sure if Kayfabe Kitchen will branch out to that one. There are a LOT of recipes in this first book so it might be a while before we ever reach that point though!

I just made this I used Jalapeno cheese. Almost the entire bag and still not a whole lot of kick to it sadly. I also used chicken as well. If anyone wants to make this maybe use less layers and more cheese and maybe add some spices or peppers to give it a kick that you want.

It looks fairly tasty, but there are a ton of really plain recipes in there. Kurt Angle apple pie uses a storebought crust, I needed a recipe for that?
Taco meat with hotter salsa and more cheese would probably make it better.
there's also the recipe for cookies which is just buy store bought cookie dough and follow the instructions on the pack! haha
