@@marieline23 like John said chilaquiles vary greatly mainly because of the sauce. Red, green, black, etc etc etc but I can assure you this recipe is right on point. Looks really good! (Im mexican btw)
@@marieline23 is not But here in mexico chilaquiles most all the time are green(green tomate whit serrano chilli or red tomate whit serrano) know we have a lot of variety of sauces with different chili peppers and this recipe could be an option for a sauce here know they sell tortilla chips for chilaquiles here in mexico chips for chilaquiles are important too like him we eat whit egg o meat or cesina to bee honest it is not usual to put avocado a lot of fresh cream,chease (queso fresco) and onion

It's not one of John's recipes of course, but one of The Moosewood cookbooks has a delicious green chilaquiles recipe in it. You might be able to find it online. (I lost most of my cookbooks in one of my many moves, or I would give you the recipe myself.) It's very good with your favorite salsa! P.s. it's a casserole, unlike the one John made.

Not uber traditional, but I love a good carne asada on top of Chilaquiles.

Hii, I’m mexican and if you want to give it a twist to the salsa you can add some peanuts and it gives a really creamy and tasty flavor. It’s a classic the chile de árbol y cacahuate (peanut) salsa

Oh boy I love chilaquiles! When the kids were young, pre-divorce, we often went on vacation in Mexico and my favorite was always chilaquiles for breakfast❤
This is by far the most beautiful and festive way to prepare and present chilaquiles, a dish that brings back fond memories of my parents’ kid version: 1/2-inch cut squares, cut from strips of corn tortillas, tossed in a scrambled egg, chihuahua cheese and tomatillo-chile verde sauce. 1:19 Ancho Chiles are spicy . Guajillos are best. You don’t have to chop the onion it will be blended you can cut it into quarter size pieces.
3:49 don’t add salt instead add chicken bouillon for more flavor
8:44 Crema oaxaqueña is THE best with chilaquiles but if you can’t find it just use daisy but whip it with some salt to thin it out
John did an amazing job I just thought I would share some of the tips that I tell all my non Hispanic friends when they ask me how to make them.
I think the chiles are based on region because my friends from Central Mexico always use ancho chiles. They also never add chicken bouillon but that might just be because we don’t eat meat
My family mixes both guajillo and ancho. They each have a different flavor so the mix tastes amazeballs.
I’d say ancho is more smoky than it is spicy 🤔🤔🤔 but also I’m crazy and it takes a lot of heat to make me think something is actually spicy 🤭
I use a mix of new Mexico, japones, arbol, and piquin...... also never used chicken bullion in the sauce either. Make extra to later use in a guisado or salsa for tacos. Yumm
Agree. Also don't have to boil them just fry them for a couple of seconds and then soak them in hot water to hydrate after blending everything you can fry the sauce again.
I have to say thank you for not messing up one of the top Mexican recipes. That was authentic and right on point. I won’t mention any names but someone that’s famous and has talk show and cooks in her show and also makes dog food (Rachel Ray) claim to do the best “pozole” recipe. Yeaaah… noooo that look like chili or some nacho topping with Fritos on top. Lord have mercy on her for ruining and making people believe that was real Pozole. Anyways, thank you for keeping it real. 😂❤

The extra guajillo cooking liquid that didn't make it into the sauce is still probably really flavorful. I bet if you tossed it into the next pot of rice you made it would add a nice background smoky, spicy flavor.

I had never heard of this dish before. Since we love Mexican food I gave it a try. OMG so simple but so different and tasty! I topped ours with black beans cooked in cumin and smoked paprika, queso fresco, super thin red onion slices, and crema (sour cream with zest and juice of one lime and one garlic clove.)
Definitely adding this in as a regular meal!! Thank you for sharing your childhood memories and your mom's method.

I love this recipe! I normally make a hack version of this dish that may not be authentic, but I find to be really tasty. I buy Mexican corn tortillas from Food 4 Less that have a similar texture to home fried ones and I buy some Mexican chorizo that I cook down with scrambled eggs, shredded Mexican cheese and tossed together with the tortilla chips.
I’m not saying your recipe is not authentic but maybe it’s called something else? Adding scrambled eggs and chorizo would make it a very hearty breakfast. I’ve had burritos with scrambled eggs, chorizo, potatoes, refried beans… add some sliced avocado and some fresh salsa…. Delicious!

That’s a sunny side up egg over easy means it’s been flipped. I prefer sunny side up or poached lots of runny yolk is a must. I enjoy Preppy’s videos they’re authentic and accessible.
I love chilaquiles! Every region has their own version. John, this is how chilaquiles are made in Guanajuato y Michoacán! All versions are delicious! We always just used canned enchilada sauce lol. But in our house we used salsa verde for enchiladas, chilaquiles, everything.

Oh yeah, cumin and Mexican oregano would amp that flavor profile up. My Tia use to put cumin in her Mexican rice and Chicken Mole. It was chef kiss delicious. Wish I knew just how much she used but at least I have the memories 😋...

I love chilaquiles as well! I always do them the lazy way with pre-made tortilla chips and either Pato sauce or leftover little cups of salsa from getting Mexican takeout. However, this looks so danged delicious, I may need to go out and get some guajillos and do it from scratch.

I used el Pato sauce for chilaquiles too, is good but homemade sauce is always better 😊
