  • Recipe
    Ingredients for 2 portions
    - 2 tomatoes, cut in half
    - 1 jalapeno, cut in half
    - 1 white onion, peeled and cut in half
    - 200ml of grapeseed oil
    - 12 white corn tortillas
    - 200ml chicken stock
    - Salt to taste
    - Pickled onions for garnish
    - Fried eggs for garnish
    - Coriander
    - Sour cream
    Method
    1. Start making your salsa by placing the tomatoes, jalapeno and onions onto a baking tray and drizzling with oil, season with salt and place into a 200°c oven for 15-20 minutes or until they just start to soften and have some good colour.
    2. Once the veggies come out of the oven, blend until smooth and check for seasoning.
    3. In a large, heavy-based fry pan over medium-high heat, add your grapeseed oil.
    4. Cut your white corn tortillas into quarters and carefully fry them in the hot grapeseed oil on both sides until golden brown.
    5. Remove from the oil and set over a wire rack to drain and season lightly with salt.
    6. Remove most of the oil from the frypan and add your salsa to the pan followed by the chicken stock.
    7. Cook this for 2-3 minutes until it's combined.
    8. Add the crispy corn chips to the sauce and stir well.
    9. Garnish with the fried egg, pickled red onions, coriander, and sour cream. Enjoy!

    Really nice!! You could add some leaves of “Mexican Tea” (in Mexico is called Epazote) when you are frying the sauce to got a different flavor, specially if you do Green Chilaquiles 😅

      I'm from Guadalajara, México and guajillo dried chiles is a fundamental element of a really authentic and suprime chilaquiles, although i respect Andy's recipe, i will try jalapeños on My chilaquiles next time.

    Mexican here, I'm amazed you got this done perfectly. My suggestion would be to also try a green salsa and add shredded chicken 👌
    To reach perfection eat it with a bolillo (small baguette 🥖).

      Crazy how different some upbringings are. My mom would make these all the time and still does sometimes, I haven’t seen her add anything to the top except cheese tho, very simple and slightly spicy dish that is very filling and perfect for breakfast

      ​@@fts3892 I grew up with family who used to make these for me for breakfast. But she used her left over tortillas from dinner. Plus she wouldn't have cooked them so dark but other than that yummy
      We only got an egg if we ran out and found them for her. The one hen was mean but that was worth the price lol.
      Oh she made it with salsa verde too depending on whats in the fridge and garden lol I miss my Tia

    Perfect chilaquiles! The only thing I do different is that instead of triangles I cut the tortilla into small squares, that makes them more easy to eat and fry :) btw regards from Mexico ❤️

    Great. Chilaquiles is an amazing dish and I really like the pickled onion (looks like it) you added. i could see how it would cut through and brighten up the dish. But you did a great job keeping it strait forward and uncomplicated because it is a comfort food. it doesnt need to be cluttered with extra fluff that takes away from the fact its a cheap easy meal with readily available ingredients.
    that being said, you should try chilaquiles verde. basically the same thing subbing for tomatillos and roasting a green pepper with the rest of the veggies and adding fresh lime juice/zest. Absolutely phenomenal

    Make them even better by adding some shredded chicken, also I know is hard to find red dried ancho or California peppers in Australia but red sauce will be very much original using them instead using red jalapeno peppers, you can also use one or 2 garlic in the sauce...btw love your channel...
