Individual Cheese Pies with Kourou Dough/Tiropitakia Kouro

    Makes 16 cheese pies:
    For the dough:
    4 cups all purpose flour
    1 cup olive oil
    ​1 cup Greek Yogurt (strained yogurt)
    1 egg
    1 tablespoon freshly squeezed lemon juice
    1/2 teaspoon sugar
    1/2 teaspoon salt
    For the filling:
    2 cups crumbled feta cheese
    1 cup grated mozzarella cheese
    freshly ground pepper to taste
    ​about 1/4 cup finely chopped mint
    1 teaspoon dried oregano
    1 egg, slightly beaten
    ​1/4 cup yogurt
    For the egg wash: 1 egg yolk and 2 tablespoons water
    sesame seeds for garnish
    ​Preheat the oven to 350 degrees Fahrenheit, 160 degrees Celsius.
    ​To make the dough combine the flour, salt, and sugar in a large bowl and whisk well to combine.
    ​In another large mixing bowl, combine the olive oil, lemon juice, yogurt, and egg. Whisk well to incorporate all the ingredients.
    ​Slowly add the flour mixture and keep whisking until the mixture thickens.
    ​Mix the rest of the flour in using your hands, Do not over mix or the dough will become tough.
    ​Set aside to rest 5-10 minutes covered with a clean kitchen towel.
    ​To make the filling, combine the feta cheese, mozzarella, yogurt, and the beaten egg. Mix well and add ground pepper. Mix in the fresh mint and dried oregano to combine.
    ​Line 2 baking sheets with parchment paper and prepare the egg wash by whisking together the egg yolk with the water until smooth.
    ​Cut the dough into two equal portions. Cut each portion into 8 pieces.
    Roll each portion out into a ball.
    ​Gently roll out each ball into a 5 inch round circle. You can do this using your fingertips to press the dough gently out into a circle. Use a rolling pin if you prefer doing it that way but do not add any flour to the dough otherwise it will become dry and tough.
    ​Place a spoonful of the cheese mixture onto the rolled out circles and fold over.
    ​Gently press the edges together to seal.
    ​Place the pies onto a baking sheet. 8 on each tray.
    Use a fork to press down the edges to create a decorative design.
    ​Brush the tops of the pies with the egg was and spring some sesame seeds on top.
    ​Bake for 20-25 minutes or until golden.
    Halfway through baking, rotate the trays. Place the bottom tray on the top rack and the top tray on the bottom for even baking.
    ​Serve warm.
    ​Enjoy!

    This looks absolutely mouthwatering! THANK YOU for sharing! I want to make it asap. I just have a quick question: can I proceed and make the 16 mini pies, but freeze half of them and bake them later? Or will the texture of the cheese change ? Have you ever frozen any before baking?

      I never froze these pies, but I have a pretty good feeling that they will be just fine. I always keep my phyllo tiropitas and spanakopitas in the freezer and they turn out just fine. Let me know how they turn out :)

      thank you for the prompt reply! I will try it something next week and will let you know how it turns out. My other option is to freeze half the dough already shaped but not filled with the cheese, let it thaw overnight, then fill it with fresh mixture and bake it. If I bake them all at once, I know I will end up eating half of them lol Have no self control when it comes to cheese stuffed dough. Btw, I also recently tried your spanakopitas and it was a success! so glad to have stumbled on your youtube channel :) Keep up the awesome recipes!

      Just to write a short feedback: I made it last week and it was super delicious :) and I ended up freezing half the batch (shaped and filled). It only took a few more minutes to bake those last night, but it turned out as delicious and the texture was just like the freshly made ones. The frozen ones actually came out in an even better shape because there was less "spillage" of the filling during baking. Thanks Dimitra for sharing your recipes. I have a long list of "to do" recipes of yours that I can't wait to go through :)

      Thank you!! My favorite feta is definitely Dodonis brand. Terra Kreta makes excellent olive oil. Any olive oil that you plan on using in salad, for dipping bread, or in any other uncooked recipe, just make sure that it is extra virgin, colds pressed, and from Greece. Labeling is very tricky nowadays.

    hi. dimitra, this looks so yummy, as usual dear. can i use this dough for a sweet recipe, like maybe fill it with some berries and chocolate or a cinnamon sugar mixture? will it work?

    Can u make a video on how to make saganaki from scratch. ..i use to work at a greek restaurant when i was very young and that smell was so addicting..lol.

    Dimitra, can you sub dill for the mint? I’m trying to envision mint in it. I’m not a huge fan of it in savory foods.
