what a neat wonderful video. The fact that the two of you do all this together is what makes this so special for me. Gina is not afraid to build a building with Al. and Al is not afraid to get into the kitchen or garden. The transformation you two have had on both the farm as you bring it back to life and the memories you are giving Olivia is what makes Lumnah acres what it is in real life and here for all of us on the video. When you pull your tomato plants, save any desent sized green tomatoes by clipping part of the stem with them then put them stem and all into a brown paper bag to ripen. I do that when the growing season is over and they taste great. Just check the bag every few days to pull out and use the ones that ripen before the others. One year when I lived in CT I had fresh tomatoes from my garden for Thanksgiving.
Another way to get the air out of the bag is submerge the bag in water but leave the zipper above the water. The water will push out the air and you can seal the bag while it is submerged. I like using a sous vide machine, so this technique is key!

Yes the greenhouse was a super improvement to the homestead. Giving the pigs full time feeders will greatly increase the bacon. Have you ever considered an underground water line to the greenhouse or quick connect hose ends on the hose pipes. Next year consider the melons 🍉 in one of the covered raised beds, they are to heavy to hang. Stay safe
Plants in the hoop houses need very little water during the winter months. They are surviving and little growth is taking place. The plants should be mature by the time the day length is 10 hours a day or less. Ground moisture and condensation provides most of the water requirements. Infrequent supplemental watering can be provided if necessary with watering cans,. Dragging a hose out for a few minutes on a sunny day perhaps once a month overwinter is possible but usually not required.

Hi Al, Gina and Olivia. When you make your mixture for pork belly, just weigh it all up and make one mixture. Just spread handfuls of mix on each belly and rub it in. Use a tub to store them in. At the end of the day, you can either place them all in one bag(preferred) or separate them like you did. 8-10 days after the bellies have cured then applewood smoke them. I make bacon every month plus other charcuterie items. I see the chickens were generous today. Take care and God Bless.
Mmmmmm Bacon! It must be awesome eating your own homemade bacon! We have been processing hot peppers for the last few weeks. Just put 7 pounds of them in the dehydrator last night. We have fermented pepper mash, vinegar pepper mash and salted pepper mash. We must have gotten 50+ pounds of them this year. Now to prune them down and bring them in for the winter. Blessings to all.
Hey Al Just saw your bees related video where you put tht wood plank as an separation between the top and the bee hives if you leave the plan the bees will start building the hive on the plank.. Instead of the wood plank try putting a metal mesh thingie i have seen many bee keepers use tht... ♥️
A wooden inner cover is one of the components of Langstroth hives uses by most beekeepers in the US. If there is 3/8" between the top of the frames and the board, bees will not be inclined to build comb. If it's touching the frames the bees will glue the frames to it with propolis. 3/8" is commonly known as "bee space" nowadays and modern hives are built to provide this space throughout the hive. Langstroth wrote about the need to provide this space in the mid 1800s.

Back in the late 1980's, early 1990's we used to show our pigs, at one show I found a great kitchen knife. My late Mother immediately grabbed it to use for cutting up something for our lunch (we had a caravan to stay in), and promptly cut herself. I still have that knife, and it always makes me smile when I use it, because Mother was so amused by the whole incident. When we did our bacon, we had a large plastic bin and did a wet brine solution. Off the top of my head, to the water we added treacle, salt, cloves, salt, pepper, and a couple of other spices that escape me. 🤔 I'll have to hunt out the recipe book we used.

Morning Al and Gina, When I raised pigs , it's called finishing the Pigs. The last month you want to give them something (we chose Milk replacer) to bulk and sweeten the meat. I wonder if you have thought of using quick connects on your hoses, we have used them for years and loved how quick it makes the work go and no wrenches needed after initial install. Buy the best you can get and check the washers every couple years or if you get a leak. Gina, those are beautiful veggies, a hint, when you are using carrots fresh out of the soil they really don't have a skin that needs peeling, just a good wash. Please try it once, you may never go back. A recipe for salad: shredded raw carrots, crushed pineapple, and a bit of mayo or other creamy dressing. Yummy, unless you don't like raw carrots or pineapple.
I love all of this so much. I love the wood smoker you built. I've been trying to figure out what to do with an old woodstove I'm not using. Hey, seems like it would have saved you a ton of time if you made one big batch of brine then split it out to each bag by weight. You can total the weight of the bellies, then divide by the total to get the part of the whole, then multiply the total brine by each bag's percentage. But, then again, I love math!

If you use the same percentages of seasoning in the bacon every year, you could easily build a little spreadsheet that will calculate the amounts for you when you input the weight of pork.

Sandra Westley, we have what’s called back bacon, it’s got a medallion and a small streaky end, I don’t know which bit of the pig makes this but it is much more popular in the UK than streaky, but you end up with more bacon.
Have you tried chocolate dipped bacon? Cooked to a nice crispness, cooled, then dipped in chocolate ( I like dark). Cool on waxed paper. Barn building snacking good!
I do think your melons and perhaps squash and potatoes might do better outside the green house in mounds or hills.. that would also give you more room in the green house for more crops.. actually I prefer tomato’s sun ripened better then green house too.
probably we just let them sprawl out didnt hang them either. agree sun ripened seem more tasty also but found quite a few that were attacked by hornworms also
If you have a spot near male goats where you had the sweetcorn, that would be perfect just till in some compost and fertilizer this fall to get it ready for spring for next year.
You should try honey carrots. Add a tblspn of honey and a bit of butter to the water and cook your carrots as normal. I usually julienne the carrots when I cook them this way. More of the sweetness penetrates.

Been watching your channel and a few others about pigs as we are doing our one pig next year. I've learned a few things which is not to control how much the pig eats-free for all! Commercial hog or Commercial with some heritage. We are only allowed one pig so gonna make the best of it with a pig that is loooonnngggg and fattens quick. We have a great butcher's shop that processes for our area. Can't wait for our own bacon!!
I like bacon as much as anyone, but i like a lot of parts of a pig. They are delicious in many ways. Ribs, roasts and sausage. Just a beginning. But i do understand the reason for your love of bacon. Gotta love the disposal aspects of what they can add to a farm.
Also for cooking turkey one of the best turkeys I have ever made is in a sous vide and follow ChefSteps Sous Vide turkey recipe, I highly recommend it!
when roasting your chicken, instead of useing salt and oil, try light soy sauce. Rub it all over the skin and it will come out all brown and crispy. you can also use the soy sauce on your roasted vegies, no need for salt an pepper.

Have you tried chocolate dipped bacon? Cooked to a nice crispness, cooled, then dipped in chocolate ( I like dark). Cool on waxed paper. Barn building snacking good!
I remember when pork was considered a lesser quality meat. It was labeled unhealthy. Public relations and advertising turned that around.

Learned the trick watching you process chickens, I stick straw in bag and put bag in pan of water, all air gone.
I do think your melons and perhaps squash and potatoes might do better outside the green house in mounds or hills.. that would also give you more room in the green house for more crops.. actually I prefer tomato’s sun ripened better then green house too.

If you have a spot near male goats where you had the sweetcorn, that would be perfect just till in some compost and fertilizer this fall to get it ready for spring for next year.
Melons and potatoes kinda like a sandy type soil as my dad did melons and cantaloupe and he had them coming out of his ears.
You should try honey carrots. Add a tblspn of honey and a bit of butter to the water and cook your carrots as normal. I usually julienne the carrots when I cook them this way. More of the sweetness penetrates.

the brine is mainly salt with brown sugar. one cup salt to a gallon or a little more water for brine.

Been watching your channel and a few others about pigs as we are doing our one pig next year. I've learned a few things which is not to control how much the pig eats-free for all! Commercial hog or Commercial with some heritage. We are only allowed one pig so gonna make the best of it with a pig that is loooonnngggg and fattens quick. We have a great butcher's shop that processes for our area. Can't wait for our own bacon!!
Choose a breed known for bacon and not a lard breed, some heritage breeds come down heavily in one of those two camps.
I like bacon as much as anyone, but i like a lot of parts of a pig. They are delicious in many ways. Ribs, roasts and sausage. Just a beginning. But i do understand the reason for your love of bacon. Gotta love the disposal aspects of what they can add to a farm.

After soaking in brine for 5 days. just before smoken bacon soak the slab in clean water for a hour then smoke it. I worked in locker many years
when roasting your chicken, instead of useing salt and oil, try light soy sauce. Rub it all over the skin and it will come out all brown and crispy. you can also use the soy sauce on your roasted vegies, no need for salt an pepper.
