Anise seed is the flavour of Ouzo, which is a Greek alcoholic drink and probably why it was added to the spice mix by Steve’s family. A traditional taste of the old country.
Licorice is from a root. You were showing a picture of star anise which is not the same as anise seeds. They both have the licorice flavor, but there are differences. Star anise is used a lot in Asian cooking.
I finally got to try some of your hard candies, a while back I considered a purchase but 18$ shipping felt excessive, this time I said what the heck because I was so curious. I LOVE the flavor of your hard candies they are great and long lasting. You guys show so much care in how you package the candy and the packaging materials are high quality which definitely justifies the cost the old saying "you get what you pay for" is definitely apropos and I will definitely be ordering again, love the candy!! Should've purchased it the first time I checked out your store😍
Maybe to put into perspective the flavorings that were available to "early" candy makers... were the spices... the other fruity flavors came along a long time after. Early candy makers were just so ecstatic to have sugar at their disposal... they didn't really consider all the other options they had to flavor the candy. To me... this is why original "ribbon candy" at the holiday season (when I was a kid about 100 years ago) was always spiced flavors. It looked so pretty, but as kids, it was really kind of yucky.
Green should be an acceptable color for anise as star anise is an evergreen tree in Vietnam and China. Love your videos. You ate all so much fun to watch. Thanks for sharing your candy life!
I have always wondered if you made sugar free candy. I was recently diagnosed with diabetes and as you can guess sugar is not my friend. If you don't maybe you could have Witch Helga do a little majic and remove the sugar. Regardless of the diabetes I really love watching your videos, you all seem to have a good time and it seems to be a great place to work. Thanks for making these videos and keep up the good work.
I am Type 2 diabetic too. My doctor said all things within reason. Candy, while not exactly good was hard to avoid at all costs so she just recommended that i limit myself.
I hate anise, but love clove. Mom used to make what we called 'crystal candy' when I was a kid and would get the oils from the pharmacy. Also, 'Very Interesting' is from Rowan & Martin's Laugh-In. Arte Johnson used to play an inept German soldier and say that. Loved Hogan's Heroes though!
There are so many different licorice tastes. Sadly my favorite discontinued but I still love others. It's also funny: most from North Germany like licorice South not so much
Historically black licorice is ammonium chloride and not made with anise and other similar ingredients 😊 Taste is pretty similar but real black licorice is way different especially when comparing side by side 👍
Just received my spice candy after being notified via email. I'm so glad to get this. I love clove and anise (Clove and Blackjack gums also BlackJack taffy). Fantastic.
The spice flavors are my fave. I love anise, clove, cinnamon, molasses, ginger. Wintergreen taste and smell is disgusting but love peppermint and spearmint. I would order things all year round, the candy prices are fine but the extreme shipping costs, which with some things couldn't be avoided, but makes the orders more than I can afford on a fixed income.
There are a couple of 'old fashioned' flavours in Australia, and Anise is one of them (but we call it Aniseed). Growing up, we'd have aniseed sticks (also called slate pencils - which will date them). The other one is Musk. Both are not popular in younger generations, but are for us oldies. I think cloves as a flavour goes back to 1800's? Was used as a breath freshener.
I love anise and black licorice! My siblings always gave me the black jellybeans out of their Easter Baskets. If I see anise candy in packages, I scoop it up and horde it for weeks. My maternal grandmother loved it, too, and shared her knowledge with me when I was quite young! 💕💕💕

Salmiac licorice is a northern European confection. Basically it's hard black licorice with ammonium chloride. The only reason I know about it is because it was offered to an anime character who thought it was chocolate and promptly threw up when she put a few in her mouth. Let's just say I'm kinda glad Ikea didn't bring that and lutefisk over here.
Main difference is that anise flavour comes from the seeds of Pimpinella Anisum, where liquorice comes from the roots of Glycyrrhiza Glabra. Anise is spicier in flavour and is not sweet. Liquorice root, on the other hand, is more mild and contains a natural sweetener that is 50 times sweeter than cane sugar.
The the oil extracted from anise seed consists of trans-anethole (85.69%), limonene (2.92%) (also found in orange peel!), chavicol (2.69%), and anisaldehyde (1.79%). At Princeton University (and many many other schools), the organic chemistry students do a steam distillation of the crushed seeds (from dried Star Anise flowers) to obtain the oil. Some to the components are actually foul-tasting and it might be best to use pure trans-anethole, though it's more expensive and probably seldom done.

@danielcarter305 Yeah I sometimes put a couple of Anise "Stars" in a cup pour hot water on and have "liquorice" tea. I can't get liquorice tea where I live on its own. It has so many other spices added I can't taste it.
