I did the trout derby once with challenge bait, a cork bobber, and a barbed hook. Rainbow Trout are easy enough that I could cast, hook, then get a hands-off golden tag.
Fishing is one of my favorite skills in the game! The new derbies are so much fun. I like to bring a bait maker and fish smoker with me. Smoke some fish, turn some into bait, churn out tags and I'm RICH and having a blast fishing! Plus going through the cycling prizes for as many quality sprinklers as you can get is crazy good year 1!
I haven't gone to the Trout Derby since getting Mastery but I was a bit unimpressed year one. Though I did get a lovely Mounted Trout that is still hanging in my house. The whole golden tag thing makes it less fun for me than the Squid Derby where it's just about catching the targeted fish. I might try again with challenge bait since I didn't get a bucket hat, yet.
With the sonar bobber, a little picture of the fish on the line should show up at the top right of the fishing bar. If it's not the one you want, you should be able to cancel fishing by opening your menu. On PC, this is 'Esc' by default. I assume it works the same for other platforms. Hopefully that helps
