    I started to mill my own flour when my husband was diagnosed with diabetes. It was a game changer. Once you get the hang of it you won’t look back. The main thing I have learned is to cover and let your dough mixture rest for 15-30 minutes before you go into your kneading phase. Once I started to rest my dough, it changed everything.

      Good for you!! As I’ve been studying nutrition, I’ve learned that fiber is a key to reversing diabetes and it can be reversed! Adding fiber and fat to slow the glycemic index is revolutionary! Such as adding butter to bread. Adding coconut oil to a smoothie or ground flax. Carbs are like the fast burning sticks in a fire. Fat is the logs. Protein like smaller logs. 😊 So then it’s healthiest to not eat kindling type foods alone on their own like higher carb fast burning things to regulate sugar. :) we also love smart leaf stevia. ❤

      That’s such a great tip! Letting the dough rest before kneading really makes a difference, especially when using freshly milled flour. It gives the flour time to fully absorb the liquid, which helps with the texture and rise.

      If you try millets like barnyard millets ...rye and rolled oats ( not instant oats without fibre) then you will be surprised that diabetes goes away in no time...wheat is the worst grain one can eat ...
      Switch to millets and see diabetes cured in three months...if you stop using refined oil and use coconut oil ...

      I’m diabetic and just learning about the benefit of fresh milled! I’d love to hear more bc this could be life changing! I haven’t been able to do bread or pasta for years. Is there anything special he has to do in addition? It just seems too good to be true, so I’m prepping myself for disappointment or something being wrong that it won’t work for me. Ha. And I’m really excited to hear someone with personal experience say this! It gives me hope. Ha!

    Fabulous video. I always enjoy watching ..Here in Australia its a hot summer now....I am cooking grilled lamb chops with Rosemary on the BBQ .Baked potatoes in their jackets served with sour cream & cheese and a big green salad .Pudding is a fresh fruit platter....Its to hot for anything else at 32 celsius ... Your bread looks delicious..We only eat sourdough multigrain...Would never ever go back to store bought.There really is no comparison for taste or healthwise....(I can't believe your baby is 10 and a half months old..Where did the time go..) happy New Year to you all and God Bless......Jane from Australia. xoxoxo

    HIGHLY suggest Sue Beckers podcast, the most informative podcast about freshly milled flour. She goes into such detail and there are hundreds of testimonies about how peoples lives have changed just by milling their own grain!!! I would suggest starting with her “Bread of Life” episode which is about 2+ hours long, but the information is GOLD.

    I am soo excited to see all the upcoming recipes, that you are going to create with whole grain.
    I use mostly whole grain in my kitchen. I Wolf recommend for the start to substitute 50% for whole grain because you get nearly the same results as with all purpose flour and then, when you are comfortable with that to take more percent in whole grain. After some time you also will figure out what flour works for which receipt. Personally I like the 50/50 rule in my Artisan Loafs still, behause there are still super fluffy but for homemade waffles I love whole grain.
    Have some fun and I encourage you a lot to experiment a lot with your doughs.

    A few sourdough sandwhich loaves for the week. My mom made a stew and our bread paired perfectly! Then i made chicken spaghetti and made some of the bread into garlic toast. Trying to slowly add more fresh bread into my families meals. And today a lemon bundt cake for my sisters birthday!

    We did freshly milled einkorn sourdough waffles and they were so good! I've been using freshly milled flour for the better part of a year but just got my own mill in October. I have a KoMo and love it! We often do dutch babys or cream of wheat with einkorn fresh from the mill for breakfast and I'm loving bread recipes from Lovely Bell Bakes here on RUclips. My goal is to completely move away from store bought all purpose this year and since I have a sifter attachment for my mill I'll have that as an option too.

    My husband surprised me and got me the grain nill attachment for my kitchenaid. Its not going to be praise worthy im sure as compared to the nutrimill, but we dont eat alot of breads so it wont be used much.     I do mostly soups, stews and chillis. Try to make sure my toddlers get filled up enough so I stick to bowl and spoon meals while they are learning to eat.

      @@NancyMestas-gj9cm I’m so sorry to hear about your loss. The same thing happened to me many years ago. Now a lot of times when I cook I share with somebody else. Maybe take some to my daughters house for her family are take to someone in need at our church. Sometimes when I get ground beef I divide it up before I freeze it or make it into hamburger patties and freeze them separately. You’ll learn what to do. I will be praying for you.     Hi! I have a question regarding sourdough with fresh milled flour! I've been doing fresh milled for about a yr now and have been playing with the idea of switching to sourdough as well, but I wasn't sure if by having it ferment for so long will have the nutrients oxidize away??? Maybe I'm not understanding oxidation or the fermentation but maybe someone would have some insight for me!?! ☺️

      They talk about it in the podcast I linked, but I understood that as soon as you add the sourdough starter it puts the oxidation on hold so you still get all the nutrients plus the benefits of fermentation.

    I made a huge batch of "clean out the fridge" soup! We get soup bones with our quarter cow - and then i toss in celery, carrots, radishes, carrot greens, etc and after simmering all morning, I remove the bone, blend all the veggies, pull off the meat from the bone & put back in the soup - paired with some sourdough bread & compound bone marrow butter!

    I make my chicken salad the same with apples, pecans and some grapes. Also made a pot of chili.
