Yeah that’s very frequent with piano. As a general tip, you want the left hand to become entirely reliant on muscle memory, up to being able to play it asleep. This way you can focus on slowly adding the right hand. So just play the left hand over and over and over, and in a few days when you will wake up your hand will play on its own !
I am a beginner too and struggled with this one a lot as well. I was learning left and right hand separately to memorise so I can play even without looking, but then when trying to combine it was like starting all over. What helped me was (after learning left and right hand parts comfortably), I was playing left hand and "singing right hand", that way I could better see where are the most crucial moments of coordination and after singing couple times I could play the part easily. Sounds silly, but really changed the game in my case.

I made mention in the description that my version is just the bare bones version of the song; I didn't try anything tricky with the chords so I kept them vanilla. I tried playing it on the same octave but I thought it was a little too high for me
Thanks for the lesson - was great. In the chorus - with the lead, the order changes slightly right? e.g. if verse is part A x 2, then part B then part C, in chorus it goes Part A, Part B, Part A, Part C? is that right? (sorry if that doesn't make sense!)

Yann exactly, just keep practicing even if you play it slow, and one day you’ll wake up and be able to do both hands at once.

I play it on the same octave as the right hand, with the left and right hand making up the chord. If that makes sense?
Also the left hand I play a little differently, not the full chord
