He's just handling clutch levers... you can do it way better with your index and middle fingers, hence his hands are grabbing the steering on the lower side.
There's two clutch levers underneath the two shifter levers. Basically at the start you have to hold both levers and release the first one, while the second is held half, before releasing it as well, I think. That way you successfully launch off the grid.
The first lever (to be released instantly) is on the left of the steering, the second one should be released gradually, similar to a normal car, avoiding the rear wheels to slip too much.

And he was pulling that same line off this year when he got podium in the Aston Martin. Driving a line that no one else was doing and you can clearly see in this video that he has been driving that way for quite some time

Despite the sabotages, he still collected the same number of points in 2007 as Ham, even though McLaren did everything to help Ham win.

I have seen this start probably a 1000 times till now... It was brilliant. All that move was planned out corners before the final move. He left more than 50% of his KERS up the hill, even left for the final ( 7.) gear.. Magic.. Pure Genius.. Okay , the slipstream helped a bit, but with that much momentum up the hill, he would got it anyway. He did that year everything a human can do, with a terrible car. Quali was always difficult, but on Sunday you couldn't write him down. That Ferrari was probably the 3-4. fastest overall, and he still did fight for the win with strong reliability and with that plus that is the Magic Fernando Pace. :) He was the driver of the year that year, for a good reason, because if other people didn't run into him, he would be now 3 time World Champ. That is a fact.

He started without hands on steering
his right hand was on the clutch, you can barely see the red glove in the bottom right corner of the steering wheel
