    Your red beans look incredible! You were very educational imparting your knowledge of how to use the instant pot and how to thicken the juice for the beans. I’ve scoured the Internet for the understanding of how to use this I.P.. My daughter bought this I.P. a few months ago and when she came to visit she questioned, Ma, you’ve not used this thing yet? I assured her I would in due time. Now, I’m going to make this wonderful dish using your recipe. Thank you!

    I have stopped using my "classic" red beans and rice recipe which takes all day and switched to your recipe . It is much quicker and the taste is excellent!

    Great recipe! Thank you. I made this and it's at least 7 servings. I had to make more rice eventually. It's an affordable dish too. I used the quick soak method for the beans you mentioned, I felt the beans were a bit over cooked in the end especially after being cooked with the vegetables and smoked ham hoc but it didn't matter much because I smashed some beans for the recipe. I think I will just soak the beans regularly.

    I love my Duo Nova pots. I own the 6,8 and 10 qt pots.
    Your red bean and rice recipe looks so yummy. We do not have andouille sausage here in Hawaii, but going to use smoked pork, Hawaiian Style.

    I use camelia red beans i want them semi firm so over time i eat a bowl at a time and 4 bowls later the beans are not mush.

    I just got my pot and have not used it yet. But I want to make this. It looks so yummy and I live the way you take time and slowly to tell us how to do it. I do not understand what natural release means though. But I will check out again how to use my pot. Maybe it will explain the natural release. I have watched that vedio on how to use your pot but I will be watching it a few times anyway. Again you do a super job. Bonnie H in Michigan

    On another note, I think when i follow recipes using my 8 qt pot stuff tends to get overcooked?

      That's interesting, I've usually heard the opposite. I would reduce the cook time by a couple of minutes if you're experiencing this.

      Thank you Camella. I think oxtail and short ribs cook for a similar amount of time and I cook short ribs for about 40 minutes on high pressure. Hope it works for you.

    Hey Nina, i need a tip. i purchased a "skirt steak". This cut of meat becomes very tender and delicious w/cooked in liquid (Italian red sauce) however, i followed frying instructions. i have eaten better leather. do ya think i can salvage the uncooked portion by cooking in the instant pot, with beef broth? 1/2 cup? rsvp. thanx.

      Hi Peggy, yes you could pressure cook with seasonings and broth. I would add a bit more than 1/2 cup so you have no trouble with it coming to pressure. Also, cook time will depend on the size of the meat. If cut into strips, about 10 minutes and if it's a large chunk you'll need to cook it for 30 to 45 minutes depending on size.

    Very nice video and recipe. You probably know more about Louisiana red beans than a lot of natives. About the Andouille sausage. most people in New Orleans or any other place in Louisiana don't use Andouille sausage in their red beans. Real Andouille is expensive and red beans is a cheap meal. We use plain smoked pork sausage and or "pickle meat". I won't lie, only the hard core New Orleans natives and a lot of small diners still use "pickle meat". Ham hocks are a favorite too. one more thing about Andouille sausage. Andouille is made with large chunks of pork and pork fat with lots of garlic and stuffed in larger casings, around 2" in diameter. It's smoked with pecan wood or sugar cane. I've never seen a name brand Andouille sausage that is anything close to the real thing. The sausage in your video is fine ground so not real Andouille.
    I'm not trying to be critical, just informing you since you seem to really get your facts straight. You should try the real thing. Look up Wayne Jacob’s in Laplace , LA. :)

      Hi Clay, I do appreciate the feedback and all the info. I have had red beans and rice, many years ago in New Orleans, but I didn't know anything about cooking back then, so wouldn't have noticed the sausage, lol. Thanks for taking the time to write!

      I prefer to soak and discard the water, but you don't have to soak - just add more pressure cooking time.
