How to Make a Gumpaste Sunflower: NO CUTTERS, NO VEINERS, NO MOLDS - Standing Sugar Flowers Tutorial

  • Thank you for watching The Confectionery Gallery's 'How to Make a Gumpaste Sunflower...' tutorial in which you will need No Cutters, No Veiners, and No Molds to make this sugar flower creation.
    NOTES: Use either aluminum foil tape, press and seal, or another similarly food safe material to insert your standing sunflowers into your cakes.
    You will learn how to make THREE different STANDING and YELLOW SUNFLOWER with a light center, a RING OF FIRE SUNFLOWER with a dark center, and a RED SUNFLOWER with a black center. You will be able to use the techniques in this tutorial to make many other variations of colorful sunflowers.
    The first part of this gumpaste sunflower tutorial begins with making the sugar sunflower supports.
    Once you make the supports, you will then shape and texture your sunflower centers. You will follow the same steps for most of this tutorial for all of your sugar sunflowers, minus minor differences as indicated.
    Once your sunflower centers are sufficiently dry, you will add color with various petal dusts. The gumpaste sunflower center dusting is where your sunflowers really begin to come to life which also adds elements of realism.
    One your sugar paste centers are done, you will create your petals without the use of cutters and you will add detail without the use of any flower petal veiners.
    The Confectionery Gallery's 'How to Make a Gumpaste Sunflower...' tutorial provides three different ways of using mainly everyday materials to shape each one of your sugar sunflowers uniquely. You will create a very flat sunflower with very little to no petal movement, a slightly cupped sunflower with some petal movement, and a somewhat closed sunflower with a lot of petal movement.
    You will use a similar method of creating your gumpaste sunflower petals without the use of cutters to create your calyces.
    Once your fully formed gumpaste sunflowers are sufficiently dry, you will begin to add your petal dusts to your petals and calyces.
    The last steps in this tutorial of enhancing the color in your sugar sunflowers really gives you a very colorful sugar flower creations that 'pop' if you will.
    In the 'Finishing Touches' segment, you will learn how to thicken your sunflowers that adds a touch of realism and which also strengthens your sugar paste sunflower tutorial creations.

    I have found that putting the hot glue on the wires first it does not melt the foam as much. 1. Push the wire bunch into the foam and pull it out to make the hole. 2. Put the glue on the bunch of wires and lightly blow on it. 3. Count to 3 and put the glue end of wires into the hole you made in step 1. You will find this lowers the temperature of the glue just enough that it will not melt the styrofoam as bad.

    How to find these flexible blades to cut fondant

      I obtained the flexible blades from my local craft store. It is part of the Sculpey brand “Polyform Sculpey Super Slicer” set, which one can also buy on Amazon.com . Hope this helps.
