It's a popular story, but it's fiction more than anything else. I'd suggest checking the Serious Eats article written by Robert Moss where he delves into the fiction behind the myths. The history behind the treat is older, and the term "hush puppy" can be traced to at least some time in the 1700's in England in dealing with smuggling. "As far back as the 18th century, the phrase was used as a term for silencing someone or covering something up. An 1738 account describes crooked British officials who, when ordered to board and search a vessel suspected of smuggling, "played the Game of Hush-Puppy," delaying several hours to listen to music in the captain's cabin before conducting their search, by which point the crew had hidden the contraband beneath the ship's ballast." The term was even applied to different types of foods (gravy or pot liquor) before it was connected to fried corn balls. And the fried corn balls had other names. Red horse bread, wampus, red devils and three finger bread. Given the history of how well the food was regarded for human consumption, it's unlikely it was ever fed to dogs in the first place, and it certainly isn't the origin of the name. Unfortunately, the problem with so many urban myths is that they get repeated as fact and tend to stick, no matter how incorrect.

@@Rmasyal You can't distract a dog with food like that. It'll take a dog all of one or two seconds to eat something small and soft like a hush puppy and then they will be back to what they were doing. I think that's probably a legend, not reality.

I like this new editing style much more then previously, this feels like a call back to his OG videos, laid back, a mix of funny moments but not forced, it feels more soothing like meeting him in person, way to go Josh for bringing the old style back, just needed that cabinet shot and the B-roll and as his chef self making delicious food, he whips up great videos too
Prep time/cook time is never the issue! As someone cooks nearly everyday, cooking is easy. It's cleaning that will consume most of your time. Not to mention all the extra gadgets you need for certain foods: grill, deep fryer, immersion blender, etc. No one eats fast food purely for the taste, you eat it because it's convenient.
Well not really, clean as you go and it’s pretty easy at the end. Prep usually is always the longest. But getting timing down to cook and clean at the same time is hard.
Its not that difficult in places outside the US, speaking from my own experience as someone who never got to try it, but I imagine that as an american it'd be incredibly difficult to find someone like that in there
I think the big secret for KFC is chicken flavored bouillon. We know they add msg in addition to whatever the original recipe to, but chicken bouillon has msg as one of the ingredients. If you want a secret ingredient, something that makes chicken taste more like chicken would be harder to detect than most other ingredients. Very few people will be curious as to why the chicken tastes so much like chicken.
Lots of "secrets" to recipes are chicken concentrate, as I call it. It just combines really well with all other types of meat. I buy the jars of the paste and keep it in the freezer. When I make chili, I'll add 2 tbsp or so.
What brands of bouillon have msg in them? All the ones I buy don't have it in them so I just make my own broth and add MSG after straining while it simmers.

My nephews don't like onions but I made a loaf of onion soup bread (think white bread embedded with cheese and reconstituted freeze-dried onions) and they loved it. Once they had finished their slices I told them "there are onions in there" and their faces were priceless
When I was 8 I got taken to a upscale restaurant and my parents gave me “mozzarella sticks” after I had eaten a dozen or so they told me it was kalamari 😅

The "faster" series is seriously silly. I can cook faster just about anything he'd pick up at a restaurant. Every fast food place is about 90 minutes away from here, round trip. Just, NOPE.

i think the biggest problem people will be facing with the biscuits is the mess that it creates. you need to clean: the mixer, the entire work sourface the rolling pin, the grater (for the cheese) and that per se probably also takes 30 minutes again... and we all know that working with flour can get out of hand very easily, so probably you also need to clean yourself and the rest of the kitchen 😆
Nahh you can freeze the butter grate both butter and cheese...mix on the table by making a well. The mess, scrape everything in the bin afterwards done
@@peasndough good idea actually. 🤔 but somehow it still ends up messy, because the flour flies in every crevice of my kitchen or because the dough is so flaky stuff drops on the ground and then i need to clean the ground... those are usually problems whenever i use any kind of batter, even when deep frying, i'm already re-using the same surface for flour and panko (for katsu-style). but yet it always gets out of hand... 😆 i'm still doing it though.... and then i'm too tired from cooking so i wait until 3-4-5-6-7 days until i can't stand it anymore
@@boreddingercityCleaning is not always intuitive for people. This isn't a bash like "common sense isn't common" but what I've found is that cleaning is not properly taught like some other skills.

I actually made the Mac and cheese and fried chicken yesterday for my husbands birthday. Both were absolutely BOMB! The Mac was so creamy and cheesy, and the chicken was insanely flavorful. The only problem I had was the coating fell off the chicken as soon as I took a bite. But these recipes are my new go-to!

I think the Mac and Cheese scores perfectly exemplifies why it's so difficult to make "the best mac and cheese" - people's preferences differ so much with regards to it. Some people prefer roux based sauces which, imo, leads to it being a little too thick and grainy from the flour, whereas others prefer a thinner cheese sauce.

Yeah, as a southerner, I'm a bit different than most. I'd rather not have a flour rue. Seems to be the common denominator in most southern recipes. I'd rather just use a mix of cheeses and milk.

Grilled corn on the cob is delightful, but you should try deep-fried corn on the cob sometime. Just pop the bare ear of corn in the fryer (mind the popping!) until it gets brown splotches.
I don't know if its just because I live in a small town, but the time it takes to get the KFC bucket could literally be the same time as it takes to cook it. Our KFC almost never has something ready to go, unless you are first in line during the lunch rush. If you go in the middle of the day its easily a 15 to 20 minute wait for them to get the food ready so when you factor in the drive there and back as well as the wait time you're shaving off about 15ish minutes.
I really liked this video, one of your greatest strengths is showing people how possible it is to duplicate the things they pay (way too much) for by cooking themselves. This was a perfect example, and it made me want to suggest something. Josh, have you ever considered doing a series where the idea is to cook in a badly equipped kitchen, show people how to cook good food in their first apartment with the lousy hood fan that barely works, and the hand me down kitchen gear? Your recent three ingredient video was really interesting, precisely because it shows how minimal ingredients can be made into magic, and I think another one on how minimal equipment can produce great results would be fascinating. You could take specific dishes, and show how pared down the equipment list can get, what you absolutely need, what you cannot do it without, and even what fancier gear might be worth it, and what is just a luxury. Inexpensive equipment like Mortar and Pestle, Whisks, plastic wrap, piping bags, basic charcoal grills, pressure cookers. How to properly maximize your freezer space. Preserving. Homebrewing (your one home-brew video I've seen was superb, btw). All stuff that would allow people to economize without too much compromise, because it doesn't seem like life is getting any easier these days.
Would you ever do a channel? That’s like a Vlog kind of channel but you do different different restaurants where you like learn different stuff and travel and go to different restaurant and things like that with your wife.
To add to why the mac and cheese lost, olive garden actually makes the pasta mushy on purpose because American palates don't like al dente pasta texture for some reason.
I don’t know anyone who doesn’t like Al dente… that’s probably just Olive Garden’s excuse for having shitty food. I’d rather eat a peanut butter and jelly sandwich for dinner than go to Olive Garden.
If somebody is nervous about making brown butter, use a thermometer. 148°C is the best flavour (note that the temp keeps going up after you take it off the heat, like with a lot of things)
Ok, it is very possible that Leila's father was a Boy Scout in his youth. The story about frying up balls of cornmeal to throw to the dogs to get them to "hush" is actually written in the Boy Scout Fieldbook (not the Handbook) -- I'm looking at my 1976 copy; the story is recounted in the section on how to do a Fish Fry.
The Hush Puppy story is accurate. It was used by confederates during the civil war to stop dogs from barking, and slaves who were on the run used it to stop dogs from barking or chasing them.

Wildcard for mashed potatoes (with either Roast Beef or Lamb)... Wholegrain mustard instead of garlic. It just hits different. Has that texture pop too.
2:32 You should twist once you cut all the way through, to pinch the bottom edge, and then flip them so the top lays on the cookie sheet. This will help them rise straighter and have a smoother top. It's also better with no space left between them, so edges are touching and even up against the rim of the baking sheet. It all helps them spread outwatrd less.
I have become an expert at making Mac and Cheese cause it's my fav, so what I've learned is before adding the cheese you got to season with garlic, onion ,paprika and salt and pepper makes it so so good!
For those who are curious about KFC original chicken; it is pre packaged seasoning, and flour and dry powder milk. No marinade. No pressing flour. Is breaded using water only to stick. It is however, cooking in a pressure cooker at (i think) 375 for 24 minutes. I used to be a manager there for a while, but that was a while ago, and i still remember the process...somewhat.

Also he used a whole bag of charcoal to cook the corn and that takes a lot of time to get that ready to cook on, not to mention the cost of it.

I actually made the Mac and cheese and fried chicken yesterday for my husbands birthday. Both were absolutely BOMB! The Mac was so creamy and cheesy, and the chicken was insanely flavorful. The only problem I had was the coating fell off the chicken as soon as I took a bite. But these recipes are my new go-to!

I never liked the overwhelming amount of effects. I liked this video better
I think the Mac and Cheese scores perfectly exemplifies why it's so difficult to make "the best mac and cheese" - people's preferences differ so much with regards to it. Some people prefer roux based sauces which, imo, leads to it being a little too thick and grainy from the flour, whereas others prefer a thinner cheese sauce.
And some of us prefer a skillet Mac and cheese, perhaps with broccoli and mushrooms in it.
Best yet... Combine in 2 or 3 cheeses, and avoid both roux and thin gooey cheese sauce... Aim for at least a little cheese pull.
@@tanikokishimoto1604 After looking at many recipes, I like the ones where you just use a can of evaporated milk to cook the pasta in + butter + a little corn starch + whatever 2-3 cheeses you like, and salt to taste
Yeah, as a southerner, I'm a bit different than most. I'd rather not have a flour rue. Seems to be the common denominator in most southern recipes. I'd rather just use a mix of cheeses and milk.

Grilled corn on the cob is delightful, but you should try deep-fried corn on the cob sometime. Just pop the bare ear of corn in the fryer (mind the popping!) until it gets brown splotches.

I was starting to feel somewhat indifferent about Josh's videos lately, but this was amazing. Love everything about this.
I don't know if its just because I live in a small town, but the time it takes to get the KFC bucket could literally be the same time as it takes to cook it. Our KFC almost never has something ready to go, unless you are first in line during the lunch rush. If you go in the middle of the day its easily a 15 to 20 minute wait for them to get the food ready so when you factor in the drive there and back as well as the wait time you're shaving off about 15ish minutes.

I really liked this video, one of your greatest strengths is showing people how possible it is to duplicate the things they pay (way too much) for by cooking themselves. This was a perfect example, and it made me want to suggest something.
Josh, have you ever considered doing a series where the idea is to cook in a badly equipped kitchen, show people how to cook good food in their first apartment with the lousy hood fan that barely works, and the hand me down kitchen gear?
Your recent three ingredient video was really interesting, precisely because it shows how minimal ingredients can be made into magic, and I think another one on how minimal equipment can produce great results would be fascinating. You could take specific dishes, and show how pared down the equipment list can get, what you absolutely need, what you cannot do it without, and even what fancier gear might be worth it, and what is just a luxury.
Inexpensive equipment like Mortar and Pestle, Whisks, plastic wrap, piping bags, basic charcoal grills, pressure cookers. How to properly maximize your freezer space. Preserving. Homebrewing (your one home-brew video I've seen was superb, btw). All stuff that would allow people to economize without too much compromise, because it doesn't seem like life is getting any easier these days.
Would you ever do a channel? That’s like a Vlog kind of channel but you do different different restaurants where you like learn different stuff and travel and go to different restaurant and things like that with your wife.

To add to why the mac and cheese lost, olive garden actually makes the pasta mushy on purpose because American palates don't like al dente pasta texture for some reason.
I can't speak for "Americans" in general, but yeah, I like my pasta TENDER.
I don’t know anyone who doesn’t like Al dente… that’s probably just Olive Garden’s excuse for having shitty food. I’d rather eat a peanut butter and jelly sandwich for dinner than go to Olive Garden.
I don't really like it al dente but I don't like it mushy either.
If somebody is nervous about making brown butter, use a thermometer. 148°C is the best flavour (note that the temp keeps going up after you take it off the heat, like with a lot of things)

The Hush Puppy story is accurate. It was used by confederates during the civil war to stop dogs from barking, and slaves who were on the run used it to stop dogs from barking or chasing them.

Wildcard for mashed potatoes (with either Roast Beef or Lamb)... Wholegrain mustard instead of garlic. It just hits different. Has that texture pop too.
2:32 You should twist once you cut all the way through, to pinch the bottom edge, and then flip them so the top lays on the cookie sheet. This will help them rise straighter and have a smoother top. It's also better with no space left between them, so edges are touching and even up against the rim of the baking sheet. It all helps them spread outwatrd less.

I have become an expert at making Mac and Cheese cause it's my fav, so what I've learned is before adding the cheese you got to season with garlic, onion ,paprika and salt and pepper makes it so so good!
For those who are curious about KFC original chicken; it is pre packaged seasoning, and flour and dry powder milk. No marinade. No pressing flour. Is breaded using water only to stick. It is however, cooking in a pressure cooker at (i think) 375 for 24 minutes. I used to be a manager there for a while, but that was a while ago, and i still remember the process...somewhat.
I've never heard them claim it was "marinated." And, u "think" it was pressure cooked? U were a manager? 😂 I worked there too & remember more than u, lol
