*Ingredients* For the cake: 125g plain flour 200g caster sugar 65g cocoa powder ¾tsp baking powder ½tsp bicarbonate of soda ½tsp salt 1 large egg, room temperature 60ml vegetable oil 125ml milk, room temperature 1tsp vanilla 125ml warm water For the topping: 150g unsalted butter, softened 200g icing sugar 1-2tbsp milk 12 Oreos 1) Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan). 2) Line an 8x8" baking tin with baking paper. 3) In a large bowl whisk together the plain flour, caster sugar, cocoa powder, baking powder, bicarbonate of soda and salt until combined. 4) Add the egg, vegetable oil, milk and vanilla and whisk until smooth. 5) Gently whisk the warm water into the mix until smooth. 6) Pour the mix into your baking tin. 7) Bake for 30-35 minutes (until a toothpick comes out clean) then let it cool fully. 8) For the topping, whisk the butter in a large bowl until creamy. 9) Gradually whisk the icing sugar in with the butter. 10) Add the milk and whisk until smooth. 11) Add 3 Oreos to a bag and crush them with a rolling pin. 12) Add the crushed Oreos to the mix and fold them in. 13) Scoop the icing onto the cake and smooth it out to the edges. 14) Place 9 Oreos on top in 3 by 3 rows. 15) Enjoy!
