    Ooh delicious, I love rhubarb cake and apple cake, and bake them both a lot 😊 they are also really good as a desert with whipped cream, or serve the cake warm with vanilla ice cream 😋

    Rhubarb cake recipe:
    200-250g chopped rhubarb
    1/2 table spoons of sugar
    Separately 200g of sugar
    2 large eggs
    120ml of milk
    1/2 a cup of 120ml vegetable oil
    1/2 tea spoons of vanilla extract
    Half a tea spoon of salt
    1 tea spoon of baking powder
    And last but not least 250g of flour
    Preheat oven on fan and heat: 250/ 175 degrees
    ______________
    1. Add sugar into rhubarb bowl
    Mix in together and let it sit
    2.add 1 tea spoon of baking powder into a medium sized bowl and add a half teaspoon of salt into the medium bowl with flour, and mix it all together.
    3. Add 120ml of milk and add 120ml of vegetable oil in the same measuring cup
    4. Put sugar in a medium bowl with 2 eggs and mix until light and fluffy/ creamy, and add the vanilla extract add 1/2 teaspoons of vanilla extract
    5. Start adding half of the vet ingredients and mix until we'll combined, and after mixing well add half of the dry ingredients, after mixing add the rest of the wet and the dry make sure nothing is stuck too the sides.
    6. Add the chopped rhubarb into the mixture, leave 3 table spoons of rhubarb too the side for the rhubarb cake top.
    7.mix everything together so it's even everywhere, don't forget some rhubarb juice.
    8. Add baking paper in the cake tin and rest of the rhubarb on top, if you you can add some brown sugar on top to make it crispy.
    9. Put it in the oven for 40-45 minutes
    10. When done let it cool until it's not too hot and enjoy
