  • Rachel's Rhubarb Cake Recipe:
    Topping
    - 1 Cup Sugar
    - 1/4 Cup Flour
    -1/2 tsp Cinnamon
    -1/4 Cup Margarine
    Batter
    - 2 Eggs, beaten
    - 1 Cup Sugar
    - 3/4 Cups Sour Cream
    - 1/4 Cup Milk
    - 1 tsp Vanilla
    - 2 Cups Flour
    - 1 tsp Baking Soda
    - 1/2 tsp Salt
    - 2 1/2 Cups Rhubarb, Chopped
    Bake: 350°F
    - 40 Minutes

      Made your cake, so good!! But I didn't have a 9x13 pan. I made it in 2 10" pans so they were only about an inch thick each. I decided to make a layer cake out of them and spread my homemade strawberry jam in the middle. Dusted it with icing sugar, put a dollop of whipped cream on the side and voila!! Masterpiece!! Thankyou for your recipe, I will make this again and again! I have to get a proper pan though!

    Can't wait to make this! Looked everywhere for a rhubarb cake recipe, so many cinnamon coffee cakes with a couple pieces of rhubarb chucked on top

      I've already made 2! The first one my husband took 1/2 to work for sharing it was a hit and I took a second to a dear friend and her family gobbled it up. What a great recipe. I'll be making this one often as my rhubarb goes nuts.

    Very well received and demanded a repeat. THANK YOU...made a slight healthy version...subbed in Gluten Free Flour (1:1). Used butter instead of Marg in the crumble. 0% fat Plain Greek Yogurt instead of Sour Cream. I also put it under the broiler for a minute just to caramelize the crumble a bit. SO GOOD!!!

    Be sure to tell all the friends that the leaves are deadly poisoned so it's really best to cut off both ends when you pick it and throw them in the garbage right away. Can't wait to try your recipe.

      There is an error in the video for the recipe...1/2 cup cinnamon in the crumble....I think it should be 1/2 Tbsp.

      Yaaaaa...I followed the recipe at the end and put in 1/2 cup of cinnamon. 😮 I'm not a baker at all, so I didn't think twice. It's in the oven now, but I'll let you know how it turns out. 😊 5:32

    Hi Rachel, your cake is delicious. I'm freezing sliced rhubarb for the winter. Can I use frozen rhubarb in this cake.

      Hey Naomi! Yes you can use the frozen rhubarb. It may be a little more runny with frozen, so we recommend partly thawing the rhubarb to help with that. Hope that helps!

    I also do not like music in the back ground it’s annoying, when I’m trying to listen to people talk! The same with people that put their animals, kids and life stories in! I want a recipe plain and simple, my time is precious!
