I never waste the fond. Oftentimes I cook off the excess liquid for a concentrate to use as a sauce or use in making gravy, no matter what type of meat or poultry it is.

Just find some balance, because heart attacks do not come to ones who live their life in moderation (Apart from genetic factor that could fuck up anyone, but especially the ones not taking care of themselves).
It's nothing without a hefty spoon of lingon berry jam....not cranberries...but lingon berry. Plus the mashed potatoes and Swedish gravy is an absolute must as well.

I made these for lunch, they were ba-ba-banging Thinking about trying extra gravy over pasta, like a faux Swedish spaghetti and meatballs. Great stuff, keep 'em coming!
Here in Texas we fry the the meatballs and then make the gravy in the same skillet utilizing the fond and bits stuck to the skillet; the results are amazing. The IKEA meatballs look good, it just seems like they could easily increase the flavor by 50% or more utilizing the fond.

I have one that looks like Sams and I've had it for 20 years. It's the Zyliss Susi garlic press and comes with a little studded plastic pusher to dislodge the garlic skin that sticks to the bottom. It's made of aluminum so don't put it in the dishwasher or it will turn gray. Mine is considered vintage now and the new design has changed, but they make a quality product. No need to peel the garlic first.

As a Swede and big fan of your work...I must say that Ikea yanked your chain ⛓️ my friend. True Swedish meatballs have a small amount of nutmeg and allspice in them. Bout half and a quarter teaspoon respectively. My grandmother also never used bread crumbs...she hand ground oatmeal. It was arduous before food processor's. Oatmeal makes for a far more tender meatball. Put them in a bit of beef stock and a lot of heavy cream. No roux...covered the pot and into a 325° oven for about an hour then uncovered for another hour. Served with mashed potatoes and lingonberry jam.. some of my best memories. 👌 Oh, she also used beef, pork and veal. Twice ground by the butcher. She has long since passed but I still think of her when I make them for my family...have also taught each of them how to make "Grandma's Swedish meatballs" . Your own Swedish chef. 👩🏼🍳❤❤👍

I too make certain I don't have to subject myself to the hell on earth that is IKEA. This recipe is simple, and looks like it'd be a good meal or late night snack. IKEA gives me nightmares, especially being taken there on some hohum Saturday afternoon where everyone and their grandma is out looking for "Assembly Required" furniture that falls apart in a matter of weeks off purchase.

I have. They're good that way-- if the crowd doesn't inhale them. I do cheat. I bake mine on a covered cookie sheet in the oven and turn them a couple times until they're done. Delicious. Oh yeah. Make 2-4 times the recipe. A group of 20 we had here one year inhaled them in 35 minutes. Seriously.
Yes you can double or triple. Yes, brown them then throw in the crockpot. You can make the gravy ahead but will need to thin it a bit when you reheat it.

Finnish is pretty similar to estonian language so its branch of finno ugric language closely related to estonian livonian votic and karelian with many words borrowed from indo european languages particularly from baltic languages german and russian.

Every swedish family has their own family recipe for meatballs. Ikea’s are probably the worst 😉 In my family we fry the onion, don’t use egg or bread crumbs but lots of cream and sweet mustard. They are a bit more delicate to fry but oh soooo much tastier 😋
My mom doesn't use garlic in her meatballs. She is not using mustard either. But darn, they are good. But my grandma's meatballs are a bit better tho. As you said, all recipes in a swedish home for meatballs are different.
A long time ago, when you were doing the morning news you had a recipe for peach cobler (using box cake) and for a Mexican lasagne (a culinery wonder). They were awesome and I made them for my family. Thanks for remaining authentic throughout the years. I really enjoy the show!
pro-tip: Before you roll the balls, grab a little pinch of meat and make that into a patty and cook it. It gives you a good "finished product" taste before you go and roll/cook all the other ones. Say, you forgot salt or garlic etc... you eat the little patty and you'll know how things will be. It's a good "sneak peek".
If you have "leftovers", that means you already made balls. I got two problems with that tip. 1) The exact grams of minced meat provided and other ingredients like breadcrumbs are for exact amount of balls. There shouldnt be any leftovers. 2) If you use leftovers to test if it's seasoned enough, your balls that you made need to be destroyed, seasoned and then again made into balls. Cumbersome. Instead I would say "sacrifice" one meatball, but flatten it so it cooks much faster, and then taste if it is seasoned, before proceeding to shape the meat into balls. You could also divide that sacrificed meatball and give it to relatives/friends whom you cook with and have them tell you if it's nice or if something is missing - or atleast everyone got a little appetizer knowing what deliciousness awaits them.

My Grandmother made Swedish meatballs out on her farm. She used a pound of ground beef and a pound of ground pork sausage. Her sauce was pretty much the same except for her secret ingredient...a half cup of grape jelly. Served over buttered klusky noodles.
Great recipe Sam. Additional mods. 1. Add sliced mushrooms. 2. Just make double batch of the sauce. A can of broth is two cups. 3. Use one full pint whipping cream .

Fry the meatballs, deglaze the pan with cream, then in with soy sauce etc. at least that's how my mormor makes them
I cooked the meatballs in the oven.. then made gravy separate and mashed potatoes.. then combined.. next time, I'm frying them.
You forgot the most important part of IKEA's swedish meatballs, the Lingonberry Jam. Everything else was spot on.
And at the risk of angering all of Scandinavia, cranberries make a serviceable substitute!

My great grandma would be triggered by so many things here. The greatest sin though is the lack of caramelizing the onions.

I have. They're good that way-- if the crowd doesn't inhale them. I do cheat. I bake mine on a covered cookie sheet in the oven and turn them a couple times until they're done. Delicious. Oh yeah. Make 2-4 times the recipe. A group of 20 we had here one year inhaled them in 35 minutes. Seriously.
Yes you can double or triple. Yes, brown them then throw in the crockpot. You can make the gravy ahead but will need to thin it a bit when you reheat it.
I made this recipe and it was delicious, I’m in Melbourne Australia and have never eaten at IKEA and probably never will 😂. I will be making a huge batch of this and pressure canning into jars, my whole family loved it. Thank you for taking the time to post this.

Finnish is pretty similar to estonian language so its branch of finno ugric language closely related to estonian livonian votic and karelian with many words borrowed from indo european languages particularly from baltic languages german and russian.

Cranberries (or actualy lingonberries) really compliments this dish.
And the balls should simmer in the sauce, that's what makes them good.

Every swedish family has their own family recipe for meatballs. Ikea’s are probably the worst 😉 In my family we fry the onion, don’t use egg or bread crumbs but lots of cream and sweet mustard. They are a bit more delicate to fry but oh soooo much tastier 😋
Yeah my grandma for example uses a lil bit of oats to make the meatballs stick together perfectly. Love any variation tho

My mom doesn't use garlic in her meatballs. She is not using mustard either. But darn, they are good. But my grandma's meatballs are a bit better tho. As you said, all recipes in a swedish home for meatballs are different.
A long time ago, when you were doing the morning news you had a recipe for peach cobler (using box cake) and for a Mexican lasagne (a culinery wonder). They were awesome and I made them for my family. Thanks for remaining authentic throughout the years. I really enjoy the show!
pro-tip:
Before you roll the balls, grab a little pinch of meat and make that into a patty and cook it. It gives you a good "finished product" taste before you go and roll/cook all the other ones.
Say, you forgot salt or garlic etc... you eat the little patty and you'll know how things will be. It's a good "sneak peek".
If you have "leftovers", that means you already made balls.
I got two problems with that tip.
1) The exact grams of minced meat provided and other ingredients like breadcrumbs are for exact amount of balls. There shouldnt be any leftovers.
2) If you use leftovers to test if it's seasoned enough, your balls that you made need to be destroyed, seasoned and then again made into balls. Cumbersome.
Instead I would say "sacrifice" one meatball, but flatten it so it cooks much faster, and then taste if it is seasoned, before proceeding to shape the meat into balls. You could also divide that sacrificed meatball and give it to relatives/friends whom you cook with and have them tell you if it's nice or if something is missing - or atleast everyone got a little appetizer knowing what deliciousness awaits them.

My Grandmother made Swedish meatballs out on her farm. She used a pound of ground beef and a pound of ground pork sausage. Her sauce was pretty much the same except for her secret ingredient...a half cup of grape jelly. Served over buttered klusky noodles.

Definitely missing some freshly ground nutmeg, one of the key ingredients in Swedish meatballs IMO, still looked great
And a bit more gooey texture since Swedish meatballs are more patė consistent then Italian meatballs ^^
We don't use nutmeg in our swedish meatballs. Might be some but have never meat anyone yet who does.
Great recipe Sam. Additional mods.
1. Add sliced mushrooms.
2. Just make double batch of the sauce. A can of broth is two cups.
3. Use one full pint whipping cream .
