depends on the restaurant, we had a place that served their platters with raw beef skewers that had to be cooked on the grill. i've also seen raw shrimp on platters too.
I haven't seen a pu-pu platter for DECADES! I didn't know they still had them! I used to order them before the main meal .... oh, 30 or more years ago! I guess they went the way of lacquered chopsticks (since the platter is made of wood).
I'm surprised no one from Hawaii commented that Pupu is a Hawaiian word meaning snack or small bites. We normally think of it as something to go with alcohol.
