Probably because they are trying to be the character, while a writer is trying to think like multiple characters. Subtleties fall by the wayside if you need to keep multiple characters in your head, one would imagine.
Dustin Hoffman ad-libbed the line "I'm walking here!” in Midnight Cowboy (1969) when a taxi unexpectedly drove into the scene as Hoffman crossed the street.
We can be grateful to those actors who invested themselves in their character 100%, thinking like they would (and came up with the legit line their character would say) AND to those directors who saw greatness and chose to keep it in their movie.
@@sureshmukhi2316 From what I heard, the voice actor for Timon came up with that line on the spot despite it not being in the script, and the directors liked it so much that not only did they allow it in, but no one could keep a straight face while recording it, so it took them multiple attempts to successfully record it without someone slipping a laugh.
Sorry, but the number one quote that an actor came up with for himself was Rutger Hauer's speech in "Blade Runner," the one about, "All these moments will be lost, like tears in the rain." Damn. The other lines are nice but Hauer's speech was brilliant.

My favorite movie quote is very obscure. New York Stories is an anthology of three short films. In the one called Oedipus Wrecks, directed by and starring Woody Allen (second banana is Julie Kavner, the voice of Marge Simpson), a seeming bimbo with a push-up bra says, "Maybe it...has got to do with...molecules." The delivery is very nervous and halting, when she says "molecules" she make a vibrating motion with her fingers, and in the science that I do, pretty much everything in some way has to do with molecules.

This isn't just about most famous movie lines, but most famous adlibbed lines and I don't know about the first two you cited, but as iconic as it is, "Nobody puts Baby in a corner" was definitely NOT an adlib. Patrick Swayze openly said that he didn't like that line. ;)

Interesting that De Niro’s most famous improvised line was spoken when he was playing a psycho. After his long series of public rants in the last few years, we now know that he wasn’t just playing that character.
