Everyone should have that type of attitude.
Low moisture mozzarella is more New York style whereas fresh mozzarella is more an Italian thing. Low moisture helps keep the crust crispy. Also, if the pie is too paper thin, it may not be sturdy enough to hold the sauce and cheese together without flopping. That’s what happened here, because clearly the crust was black on the bottom yet still flopped.

That Portnoy pizza looked like a classic quattro formaggi to me.
After watching Dave Portnoy’s review we decided to give it a try. Being a Queens/NYC native, I have yet to find a place I like on Long Island. We ordered a Portnoy pie and a regular. The pizza did not disappoint and was awesome. This is the only Nassau County/Long Island pizza I could recommend. It is not too doughy or spongy and you can tell they use high quality cheese and the sauce was awesome. Great job Pizzeria G. We will be back!
I'd try Leo's Tavern just because the owner is so honest.

I had two slices here a few days ago. One square with burrata, and one regular square. The pizza was very good, and the owner is very friendly. I definitely recommend it.

If I was a pizza shop owner, you know a regular cheese thin pie well-done would be called the Portnoy. No frilly gimmicks, no weird cheese sauce or addings just straight up real-deal pizza cheese cooked thin and well-done just the way Dave likes it. It's fine though I'm not a Pizzeria owner and never will be.

Dave, glad to see you back in action lad. My lady and I went here for a slice about 3 weeks ago. The owner made a pass at my wife and said he had "award winning alfredo," and invited her to try it. Much to my chagrin, he brought her to his office and gave her more than a mouthful. In fairness, I was given a complimentary large Pepsi for my time spent waiting. I appreciate the service. Can you review Raimo’s Pizzeria in Plainview, NY? I’ve tried many grandma pies all over Long Island. Theirs are by far the best. Every time I get a Grandma pie it’s always cooked so perfectly. The crust is golden brown and crispy but not burnt - both on the outside and underneath. The tomato sauce is so fresh and delicious and the cheese is the unbelievable. The amount of sauce and cheese on each slice is perfectly balanced. And they top it with a basil leaf on every slice. Must try this pizza.
Good spot. I know this applies to many spots, but their Sicilian and other pies are better. He should have told you he worked since he was a kid in Bayside at VIPizza and he been in the business since. His other spot in Floral Park burned to the ground. But Pizza G is a good spot. Dave rules.

Garden City, NY has some of the absolute best restaurants. Very nice city. I can imagine this pizza is amazing. Waterzooi though, not a pizza place, is absolutely AMAZING. 5 stars. I’d give it 6 stars.

Net time on LI, Try Molto Pizza in Babylon. Coal-fired, nice and crispy, charred crust. The Margherita is their standard pie, but also try the Burrata pizza (Burrata cheese is like a creamy mozzarella) , and try the Roma pizza, made with pancetta. It's a top-notch pizzeria
with a name as simple as "Pizzeria G", you'd think Dave cannot possibly butcher it, but Dave still manages to get it wrong (Pizza G) LOL
The Portnoy is based on burnt toast, tomato 🍅 paste and cheese.
Delayed bubble trouble. Ate a huge bubble on first slice, but didn't hit him until the second pie.

I tried it, it was good but not a 7.9. The cheese was really good, but they didn't crisp the bottom enough so in reality it's more like a 7.1. Still a good pizza definitely worth trying
