- Last week, Reina Scully ate her way through three of Japan's most recognizable ramen styles. But today, she's on a mission to see where ramen is going next. Her first stop is Niche, where chefs Frank Pinello, Mark Iacono, Carlo Carciotto, and Anthony Vitolo are ready to try mazemen, a saucy, brothless style of ramen. Chef Shigetoshi "Jack" Nakamura calls this dish "Japanese pasta"-but will his cheese and bacon-topped noodles satisfy some of NYC's most beloved Italian-American chefs? And later, Reina heads back to Ramen Shack to eat Keizo Shimamoto's infamous ramen burger one last time. From a discussion of ramen-stuffed pizzas and burritos, to an interview with 16-year-old ramen prodigy Josh Reisner, Reina is seeing how ramen is taking new shape in NYC heading into 2020.

Reina has been a host on the internet for a very long time sinve sourcefed i think. Aside from her experience though she really has just a great personality with a balance between professionalism and comedy

That ramen burger got me thinking about a ramen pulled pork sandwich. Don't think that exists yet, but in my head, it sounds amazing.

With a Japanese style sauce like the shoyu our something else rather than the bbq! Or to combine the sweet smokeyness of bbq sauce with the umami of Japanese condiments

I love the contrast in the conversation between the previous episodes and now (and I mean in a positive way). Just from what we've seen, I love how Japanese social interactions over food seem to be very subtle and direct, but once you bring these Italian fellas together things get loud and boisterous and it's beautiful to see the difference.

@@recoil53 idk, i was that much into model kits and action figures so i got into art to do something in that field. so if food/ramen is that for him, he's gonna be just fine. i enjoyed tinkering with tiny parts, kit bashing, scratch building, sketching, etc. as a kid. i'm 25 and i still love it.

I love all cultures, and learning about their ways... especially the art of food... Italian, Japanese, Mexican, Spanish, French, American, Indian, Chinese, etc... I'd love to visit as many countries I can in my life time with my wife... and learn about as many cultures as we can... I'm Irish American lived in NY my entire life, have only been to mexico, caribbean, south america... haven't traveled to europe ever... Can't wait to.. so many places I wish to go...

FINALLY! There has never been insight on the fusion side of Japanese food around and even the Italians approve...
im lucky enough to be the child of parents who love food and travelling. i have been gifted the lucky privilege of travelling the world and experiencing the local cuisine from a young age. the most amazing desert i've ever had was from a Japanese chef who went to France to learn the trade from a michelin star chef. it was a blood orange and black sesame tart. ill never forget it even though i don't have the biggest sweet tooth. the people of japan are awesome cooks and have amazing ways of blending foreign flavours with their own.
An interesting fusion, both food cultures are mainly about the best ingredients done very simply, Sushi is often just the freshest top quality fish, some rice and either some sushi wrap or a dipping sauce or wasabi, a lot of street food is just marinaded or glazed meat on a stick. A lot of pasta dishes are just a couple of ingredients, take some buff moz, slice of tomato, a basil leaf and a little olive oil and you've got a side dish or starter or salad or snack, Pasta Limone is an absolute classic and one of the most basic pasta dishes.
This series!! All about the host and the guests, but tbh you need a good host to get any show moving and we've got one here. Looking forward to season 2!

If there's a season 2 and it can be hosted in another city, I hope it'll be Reina in LA. Little Tokyo has such a rich history and Reina spent many years in LA before moving back to Japan, so she's familiar with the area.

That double smoked bacon with cheese is a no brainer awesome tasty combination! With that salmon "Oyako" ramen is amazing and will be my favorite hands down.
Ramen burger is a challenge imo since the ramen can turn out to be quite soaky after a while, but in this case, it seems to be not the case, I wonder why if it has anything to do with the portion mixture of ramen?
About ramen becoming as an usual food, it will take some time since in American culture, ramen is not the common food (yet), but given it enough time, it will have its place inside of American culture. Fusing both food culture is the best way to bring out the best from both side, I am looking forward for ramen to grow in everywhere around the world. By the end of it, I am a huge fan of noodle~
Now i want to see "ramen" made by Italian chefs. 😀
