Well fermented kimchi has fizzy juice and sweet aftertaste without sprite.. even though with sprite it tastes way better.
Usually Koreans don't use sprites in home kimchi because it's against the tradition. Nobody in the family would want sprite in their kimchi, absolutely nobody.
Also probiotics in Kimchi uses amino acids from the fish sauce for its fermentation. Meanwhile excess fructose in sprite makes kimchi develop unwanted fungus on it so it's not suitable for long preservation. - so sprite kimchi is only for cheap restaurants that needs huge amount of kimchi, but less time for the fermenting process.

I worked in a Korean owned restaurant for some time and I can actually confirm that Sprite may be used in Kimchi. It was the weirdest thing finding out, but I imagine it's just a super convenient substitute

@@Dowlphin You know, once you get into the cooking business, you're starting doing strange things such as frying mayo, adding honey to olive oil bread, pulling out pickles and sauerkraut exclusively with chopsticks, adding thai fish sauce to spaghetti a'la puttanesca and garnishing sushi with fried _snack przysmak świętokrzyski do smażenia_ and it *works.*
@@Tycini1 Yeah, I was always saddened by people with overly conventional culinary habits. I remember that in my youth time during a class retreat kind of thing I poured beer in a bowl and dipped bread into it and everybody acted like I was weird, when it's the most obvious thing to do. 😁
Food experimentation can have amazing results. Even 'life hacks'. For example I clean out those oily mayonnaise bottles by pouring a bit of milk into them, shaking and then drinking mayo milk. Super-delicious and the bottle is quite clean after that.
Although these days I follow a lowcarb plan and mostly just love to add yummy herbs and spices to almost anything.
From the experimentation phase I also made a recipe for a delicious calorie bomb:
*Dowlphin's Mascarphoney*
- mascarpone
- enough cream to make it pulpy (can use milk if no cream available)
- some good honey (Canola honey is great. Not much needed if that one used.)
- good vanilla aroma (Although my uses of it are not yielding distinct results.)
- just a few bits of mayonnaise

Just to let you brothers know (I'm American), I took Korean Language, at the Defense Language Institute/Foreign Language Center, in Monterey, CA. When we went through the 8 hour a day, 5 day a week course for 1 year and then 4 months in Texas for military language training and intercept training school (Goodfellow AFB - I was Army). We had to learn to read and write up to 500 Chinese characters and recognize (read only) about 1,000 of them. In order to read a Korean newspaper, one must be able to read Chinese characters (Chinese writing called Sino-Korean). So, we had to learn the Chinese number system and the Pure Korean number system. 1,2,3,4 (English), is "hana, Twol, Set, Net (north Korean is Soy, Noy for 3, 4) and Sino-Korean is il, e, sam, sa. Now, a pair of shoes is Han Kudu, but if you say il Kudu (using Sino-Korean with shoes instead of pure Korean) the Koreans kind of laugh at you in a smug way. After 3 tours on the Korean DMZ, I gave up the Army after 10 years, in 1983. Keep up the good work brothers. I still eat Kimchi today (probiotic strong!).... And I have been riding motorcycles since 1973 (after high school), that is why I started watching you guys (motorcycles in China - must be a rush in that traffic!). Kam sa ham ni da!
David, I also went through "Electronic Warfare Signal Intercept Analyst" class in Fort Deven, Mass in 1974/75 for 18 weeks. I ended up working in area B21, at Fort Meade, Maryland, The NSA for 2 years. Interesting work and yes, I even copied domestic "traffic" like people in Dayton, Ohio while at Camp Humphreys, Korea! Yep, an Analysis and Voice Intercept operator for North Korean and State Side America from off shore, thus NO Warrant necessary (Law Loophole).... Peace Brother. Yes, L.A.P.D. was one of my "targets" also. Above the door going into NSA it says, "In God We Trust, All others We Monitor."
DLI 1980-1981 Basic Chinese-Mandarin, 1984 to 1985 Intermediate Chinese-Mandarin. Four tours in Korea. These guys remind me of me and my USAF brothers that used to take trips to Taiwan to use the Mandarin we had worked so hard to learn. Mainland China was...off limits....and not nearly so modern as it appears to be now. I enjoy watching these young guys in China too. Reminds me of my days in Korea, Taiwan and Japan. Times were sweet, even during the Cold War days.

1-Terrible romanization of Korean.
2- Not true, you don't need to learn Chinese characters to read a newspaper.(Maybe in the 80's or early 90's) It might help to distinguish homophones.
3- Chinese characters are not called "Sino Korean" they are called Hanja (한자)
Sino Korean just means words or actually more like suffixes such as 인 , 어 , ect that came from Chinese characters.
4. Of course they will laugh at you if you use Sino Korean numbers for shoes. Also what do you mean Han Kudu? Is that just bad romanization? A pair would be 켤레 or 쌍 Am I missing something? Is Kudu a word I don't know? Romanization would be Kyeolle or somehting.

Totally agree with C-Milk about not being able to pinpoint the ingredients. I think that's the magic of a lot of East Asian cuisine, they create wonderful flavors and you just can't tell what's in it. I've dabbled a bit in Asian cooking (Indonesian) and it really is like magic. You combine a bunch of ingredients, most of which are actually familiar to a modern westerner, and at the end, something comes out that is wonderful and unexpected.
Soo Zee and Leigh did a video about Korean cooking not too long ago, and Soo Zee mentioned that kimchi is a pain in the ass to make. I understand now what she meant. It's worth it though, if you ask me. 😊
Been wanting to start eating kimchi for a couple of years - difficult to obtain in the UK (I think) - but now I'm inspired to try making my own. Thanks for the motivation!

Really enjoyed this video and the kimchi production. I was introduced to kimchi while supporting Tiger Division of ROK Army in Vietnam and continue to enjoy occasionally as it is in most grocery stores in the U.S. Kimchi was in a tin in their military rations. Also enjoyed the video comparing MRE's to Chinese rations. I consumed C-rations and LERP rations.

Awesome man, I’ve always wanted to meet a Korean Chinese, I like the fact that everything is written in Korean and Chinese, it seems like a clean city with a nice weather
actually there are a lot of korean chinese in the korean restaurant in north america,cause their ability to spoke both languages
They seem to speak Chinese with a Korean twang.
Go to New York a lot of Koreans working in ny’s ktown and queens restaurants are Chinese Koreans. They speak Korean with a particular accent and Chinese with a particular accent but can understand and speak both.
Great and informative video!!! I ate Kimchi the first time at a Korean restaurant just north of Atlanta. It was DAMNED HOT! I was not used to eating spicy food, but I hunkered down and finished the Kimchi plus the spicy main course. My whole mouth was on fire when I left the restaurant.

Great video, I wanted to go to YanJi when I was in DanDong, but decided to do something else at the last minute. In fact, to return to JiangSu, I ended up taking a train to Shenyang and sleeping on a chair in the airport overnight to catch a morning flight.
From watching you video, YanJi seems to have an even bigger Korean influence than DanDong. I bet its was not easy finding a hotel there. In DanDong, most hotels didn't want to rent to foreigners.
Oh I bought Conquering NC, this is like a bonus scene nice! I was hoping even longer but at 45 min per episode very nice. I hope you guys will continue to conquer more China heh heh!

The "Sprite" is usually Korean "seoīdeo" (cider) which is like half way between a Sprite, a ginger ale, and a Pocari Sweat™. As for every family making their own kimchi, it's true that each kimchi-making family makes it a bit different, but unfortunately a growing amount of people these days grow up having no idea how to make kimchi because their family started just buying it at the store.

I dig your style, ADVChina. This is a cool Channel that does stuff no one else does. You guys bring a different perspective on day-to-day matters in China which is of great entertainment and educational value to both the Chinese and outsiders. I hope your channel takes off.
The only thing that's a little bit annoying is that sometimes you make all-too-definite comments or claims on things you have little idea about. I think a more prudent way to handle things is to either avoid making judgement calls on unfamiliar objects or to simply do better research before making the videos. I respect you guys having an opinion, which is pretty much the soul of this operation and the reason I watch your videos, but I do hope to see your future videos to be slightly more careful.

I actually prefer the fresh kimchi. My ex-wife is Korean and she says I'm not a real kimchi eater because I don't like the long fermented or "sour" kimchi. Great show guys.
I prefer it also for the crunchy texture the salt gives the cabbage. Though in the video they said it's South Korean style, but however I know in South Korea they put fish sauce in it.
@@GeekBoy03 Yes even within South Korea there are regional variations. The most common type is made with fermented shrimp sauce called saeujeot.

I wonder if you'd be able to find some of the growing counter culture that's growing in China and do a video on it. For example, I know of a growing Gothic community that is growing in Shanghai. There are supposedly a few dance clubs that are now starting to cater to this group of people. I'd love to see also how much of an influence South Korea has on the Chinese Culture. I know that my Shanghai girlfriend really likes Kpop and I was curious if this is a growing trend in China?
