Week after week, the foods that I have on hand change drastically. Yet, the improvisational techniques that I use for this stew recipe ensure consistent results every time!

🥒 Vegetables I Used:
1. Cauliflower (not used in the end)
2. Blue Kuri squash
3. Cabbage
4. Yam
5. Sweet potato
6. Green onions
7. Jalapeno pepper
8. Tomatillos
9. Potatoes
10. Carrots
11. Swiss chard
12. Onions
13. Mushrooms
14. Beets
🧄 Other Ingredients Used in Recipe:
A. Coconut Aminos
B. Ground Cumin
C. Lime
D. Quinoa
E. Nutritional Yeast
F. Olive oil
G. Soup cream
🌶 Sergei’s Russian-style Veggie Soup Instructions:
Step 1: Boil water in a large pot with a little salt and pepper.
Step 2: Cook 1 cup quinoa in 2 cups of water. Boil water and reduce heat to low. Cook grains for 15-minutes on low and turn off heat. Steam quinoa for additional 15-minutes in pot without heat.
Step 3: Chop all hard vegetables and add to boiling water, reduce heat to medium/simmer. Cook for about 20-25 minutes.
Step 4: Chop all soft vegetables and add to the soup. Cook for additional 10 minutes.
Step 5: Balance five basic flavors in pot (bitter, sweet, sour, salty and spicy). I used ground cumin for bitter. Ripe vegetables/coco aminos for sweet. Lime/tomatillos for sour. Salt, beets and chard greens for salty. Onions, garlic, pepper and jalapeno for spicy.
Step 6: Add fully cooked quinoa to soup and stir thoroughly.
Step 7: Pour soup in favorite bowl and top with olive oil, nutritional yeast and sour cream.
Step 8: Garnish with green onions and jalapeno peppers.
Don’t forget to improvise!

Would definitely like to see more soups whether you have me in them or not. I am 67 and you are much more creative with your vegetables in soups then I am. Somewhere I saw written borscht vegetable in Russian culture doesn't just take the beets or is it more specific than that. Just wondering
This looks just plain good and usually we have quite a few vegetables around always enjoy different recipes whether they are actually recipes or not. Neither of my grandmother's ever cooked with recipes and that's pretty much how I learned you use what you have. Thank you for the many quinoa cooking class that is something I've never used either and have looked at many times

I love soup season! We had some random cooler july days here in WA this summer and I definitely took the chance to sneak in some soups. I’ve got a chili cooking in the crockpot right now 😍 Soups are the ultimate budget meals. Also I love the idea of adding quinoa. I’m not a big quinoa eater but I made way too much for my meal and it’s just been sitting in my freezer making me feel guilty.

What kinds of meat would you like to see?
Thanks for your honesty about the vegs & meat. I need that as input as the videos I'm seeing are pulling me between vegan and more carnivore diets so I'm processing all info. So far I'm thinking lots vegs and small amounts of fish, meats and dairy, & tempe. After I get my weight fully down I would like to fold in a little resistant starches and legumes but my diabetes prone system may or may not permit. We will see.
You're welcome. Food is something we all must figure out for ourselves. I think I found my happy medium with lots of fresh whole produce and some meat, eggs and dairy And... Heaps of vigorous exercise, sleep, sauna, and laughter. Sounds like you're doing some great investigative work too. Keep up the good work!

Hi Sergei, if possible could you please explain in a video what reasons you have decided to eat meat and dairy once again. From my understanding animal products cause inflammation in the body, I am interested in relation to our health. I was raised vegetarian & over the years often do vegan. Learned to cook with meat but think it's more fun to provide a totally balanced both visually & nutritionally, meal with just plants.
BTW, my husband thot I was a great cook.& I cooked without tasting his food.
You mentioned at beginning about how many of us like & use recipes. A lot of 'my recipes' started off as someone's written recipe. After months or years of playing with it, there is a lot of improvisation along the way. Sort of like taking a trip, want to see mountains & desert? one needs to head west. Want to see seasonal tree colors? we need to wait til later in calendar year & head to the NE.
Yeap, recipes are kinda like a road map or assembly directions. Put it together like this, this is what you'll get to or have at the end.

I find it almost impossible to follow a recipe to the letter! I know what my family does and doesn't care for so I'm constantly changing up the recipe! When they point to a recipe card and ask to have that meal again, I have to tell them I'm sorry, but I don't how to replicate it!

Yes! Add some meat! And, yes! Make more soups!
You can make your liquid stock with the peels from onion, garlic, shallots, etc plus add carrot ends celery leaves , veggie scraps make your broth. Simmer for hours to taste. Strain and store your broth for recipies.
Or just throw it all in the Vitamix and it's that much better and tastier. Freeze it for later or use it now.
We do that as well as cook whole onions, garlic, carrots, celery with tops , chicken until it drops off bones and simmer a very long time then when we cook the soup itself in that broth strained add all fresh veggies and the strained broth ( no bones from chicken ) and season as we go. We call it Jewish penicillin and it really works well when you’re sick.

Not just the Russian cooks. My Italian great grandmom was remembered for making great food out of what she had on hand. Her grandson once quipped, "She could take an onion and a couple stalks of celery and make a feast."
