I spent 2 wonderful years in Baton Rouge teaching at Redemptorist HS where some of my students spoke Cajun. Wonderful people. I came to love the dialect as well as the people. Always loved Justin Wilson, & this brings back so many memories!
I was hoping that he would say: I'm glad for you to see me, I guarantee! How you all are? Acadians (cajuns) were deported from Nova Scotia and they were spread out along the eastern shore of the USA. How they got to Louisiana is when Louisiana belonged to the Spanish, Spanish farmers asked the Acadians for help in raising cattle and this is how they moved to Louisiana.
My Grandmother and I always watched his show from the time that it was shown on Public Broadcasting System (PBS) until it stopped showing and then I was able to watch it on RUclips.
My mother’s family was from Louisiana, immigrated from Italy. Did you ever hear Louisiana backwoods over a Italian accent? When some of them would come up to visit I couldn’t believe we were related.
Long before his cooking show, Justin was a stand-up comic, one of a number of successful Southern comedians such a Jerry Clower, Lewis Grizzard and Dave Gardner (Long before Jeff Foxworthy or Larry the Cable Guy (who wasn't really Southern)). My dad was one of Justin's greatest fans, had all his albums and went to his shows. I garowntee!!
Hate to break it to you, but Larry the Cable Guy isn't even a comedian... that is, if a comedian is supposed to be funny. Not sure why he's included on that list.
Two great guys I miss a lot. Eating’ crawfish, pinchin’ tails and suckin’ heads. Justin used to tell a great story about getting alligator shoes for his girlfriend. Classic dad humor.😆
I'm from Charleston SC. We used to have a local guy--I think he was a professional spokesperson for local businesses. He called himself Justin Thyme. and he'd do an impression of Mr. Wilson. Whichever business he was hawking he'd say: "I guarantee."

There's a restaurant/hotel in Bangkok called, 'Bourbon Street', that has great crawfish, blackened redfish, and lots more so Cajun food has traveled around the world. My dad got a Justin Wilson album every Christmas.
Dwayne Florence Howard Stern is horrible. filthy. always wanting too talk about what's between women's legs and nothing else. if you think that makes a good interviewer than I feel sorry for the really good ones. can't stand him.

If you ate crawfish like this around my brothers and I, you would starve. There is no reason to take any shell segments off. The 4 of us can make 30lbs disappear in no time. They are my favorite food.

All I remember about crawfish is that we had some live ones in our classroom when I was in primary school, and they really stunk up the place. Never had a thought of trying to eat one.
i love justin but there is such a thing as crayfish. i would pull them out of our ditches and play with them when i was a kid. they didn't have pinchers that were big enough to harm you and you couldn't eat them. down in the swamps they would come up from underneath the ground and build a nest...kind of like a dirt dobber but much bigger. i'm from the bayou but i will take shrimps anytime instead of crawfish! ooooowwweee!
