How to cook Tahdig the Persian rice crust at home

- This is how I cook Tahdig at my home!
Tips:
The pot is very important. Since the rice stays long hours on the stove, it should have a thick bottom, to avoid burning the rice and to spread the heat evenly.
I never rinse the rice, because it'll remove the salt (and the taste of rice)
While cooking, use different diameter of burner of the stove, so all the surface get the heat. (center and edges)
Traditionally it's made of long grain rice like Basmati, but if you don't have, also the Thai rice or Jasmine could be ok.

Is the rice completely cooked when you’re done boiling it? Or is it just cooked for several minutes?
Yes it's pretty cooked while boiling in salty water but not overcooked or mushy.

How much salt do u add?
When you are cooking rice (in the boiling water before draining) the water should be fairly salty. For 1L of water, at least, 10g of salt is recommended.

How do you do the on and off
Just turn off the stove, wait 3 mins, turn it on again (always on low heat).
The number of times you do this depends on the duration of cooking. 2-3 times for shorter times and 5-6 times for longer
